This coconut milk chia pudding is a wonderful dessert that's rich in omega-3s. This recipe is a healthy alternative to high sugar processed desserts. It uses pure maple syrup (or stevia) as a natural sweetener instead of sugar.

2 cups coconut milk (I use this brand)
6 tablespoons chia seeds
2 tablespoons sweetener of choice (use date paste if you're following Whole30)
1 teaspoon vanilla extract
topping: cinnamon, shredded coconut or fresh fruit (optional)

Steps:

  • Whisk all the ingredients together in a bowl.
  • Cover the bowl with a lid or beeswax paper and refrigerate for at least 1 hour.
  • The chia seeds will soak up the coconut milk mixture and will thicken.
  • Stir the pudding well before serving and top with cinnamon or fresh fruit.

1 cup unsweetened coconut milk (the lower-fat refrigerated kind, such as Silk - not canned)
1/4 cup chia seeds
1 tablespoon pure maple syrup
1 tablespoon sugar
1/2 teaspoon vanilla
1/4 cup blackberry jelly or preserves (preferably 100% pure fruit, such as Smucker's Simply Fruit)
1 cup fruit (blueberries, sliced strawberries and sliced bananas - see note)
1/4 cup granola (such as Cascadian Farm Oats & Honey)

Steps:

  • Mix coconut milk, chia seeds, maple syrup, sugar, and vanilla in a medium bowl with a spoon or whisk, stirring thoroughly to combine.
  • Set aside briefly and stir or whisk again after about 10-15 minutes to break up any clumps of chia seeds.
  • Cover with plastic wrap and refrigerate at least an hour or two, or overnight. At this point, you can divide it into 4 single-serve containers such as the adorable Weck jars we used in our photos, or leave your pudding in a large serving bowl to portion out later. The pudding will be soft-set after about 1 hour. But, if possible, we recommend waiting at least 2 hours before eating, until the pudding is creamier and more fully set.
  • When ready to serve the pudding, if it's not already divided into single-serve containers, portion out 4 equal servings. Top each serving with 1 tablespoon jelly, 1/4 cup fruit (or a little more, if desired) and 1 tablespoon granola. Serve immediately.

Steps:

  • To a mixing bowl add dairy free milk, chia seeds, maple syrup (to taste), and vanilla. Whisk to combine.
  • Cover and refrigerate overnight (or at least 6 hours). The chia pudding should be thick and creamy. If not, add more chia seeds, stir, and refrigerate for another hour or so.
  • Enjoy as is, or layer with compote or fresh fruit! Will keep covered in the refrigerator up to 5 days.

I like to use canned full-fat coconut milk for the best flavor and creamy texture, though you can use "light" coconut milk if that's what you can find at your store.

14.5- ounce can coconut milk ((full-fat or light))
1 cup plain whole milk Greek yogurt
1 tablespoons maple syrup or honey
1 teaspoon vanilla extract
1/2 cup chia seeds
Fresh fruit, shredded coconut, granola, sprinkles, or jam, as desired.

Steps:

  • Add all ingredients to a medium bowl except the toppers. Stir together to make a smooth mixture.
  • Add to airtight containers (I like to do small snack-size ones but you can do one larger container too) and store in the fridge for at least 2 hours and up to 3-5 days.
  • Serve cold topped with desired toppings.

½ teaspoon vanilla extract, optional
1 teaspoon honey, maple syrup or any sweetener of choice, optional
Toppings (optional): Fresh or frozen fruits, dried fruits, nuts, seeds or nut butter, dark chocolate, jam, coconut flakes, protein powder

Steps:

  • Combine all ingredients. Combine coconut milk and chia seeds in a jar and stir thoroughly. Mix in vanilla if using. Allow for 2-3 minutes for the mixture to settle before mixing thoroughly again until no clumps are visible.
  • Chill. Cover the jar and place it in the refrigerator for at least 1-2 hours or overnight to thicken.
  • Serving suggestions. Serve chilled and enjoy as is or with sweetener of your choice and your favorite toppings/flavors.

  • Place chia seeds in a bowl.
  • Whisk coconut milk, unsweetened coconut milk, agave nectar, vanilla extract, cinnamon, and salt together in a bowl; pour over chia seeds and stir well. Allow coconut milk-chia seed mixture to soak until thickened, at least 20 minutes, or cover bowl with plastic wrap and refrigerate overnight.
