SCALLOPED POTATOES WITH COCONUT MILK AND BASIL



Scalloped Potatoes with Coconut Milk and Basil image

1/2 large onion, finely chopped (1 1/4 cups)
1 13.5-oz can full-fat coconut milk, whisked until smooth
3 lb. Yukon gold potatoes, peeled and sliced into 1/8 inch-thick rounds
1/2 cup coarsely grated Gruyere or Swiss cheese
1/4 cup chopped fresh basil
3/4 cup grated Parmesan cheese

Steps:

  • 1 Set rack in bottom third of oven, and preheat oven to 400°F. Coat 13- x 9-inch baking dish with cooking spray. 2 Place onion in small bowl, and strain coconut milk over top. Let stand 10 minutes. 3 Stir together potatoes, coconut milk, Gruyère, and basil mixture in prepared baking dish, and season with salt and pepper, if desired. Evenly arrange potatoes to cover bottom of dish. (Potatoes should be covered with coconut-milk mixture.) Sprinkle Parmesan over top. Bake 35 minutes, or until top is lightly golden brown and potatoes feel tender when pierced with tip of paring knife. Cool 15 minutes before serving.

1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
1 (1 lb) package beer bratwurst (uncooked)
1 (14 ounce) can sauerkraut, drained
1/4 cup honey dijon mustard
2 cups swiss cheese, shredded

Steps:

  • Preheat oven to 350 degrees.
  • Coat 13 x 9 inch baking dish with cooking spray.
  • Cook Simply Potatoes according to package directions. Set aside.
  • Remove casing from beer bratwurst, cook in skillet, breaking up in small pieces as it cooks. Remove bratwurst from skillet onto a paper towel.
  • In a small bowl, blend honey dijon mustard into sauerkraut.
  • Evenly layer potatoes, then bratwurst, then sauerkraut in baking dish. Sprinkle cheese on top.
  • Bake for 25 to 30 minutes, until cheese is melted and browned.
  • Remove from oven and cool for 10 minutes before serving.

Official Contest Entry: Simply Potatoes 5Fix. An easy, delicious candy for any holiday. My mom started making this candy in the 1960's and so far these have been enjoyed by four generations of our family.

3/4 cup Simply Potatoes Traditional Mashed Potatoes, cold
4 cups confectioners' sugar, sifted
4 cups shredded coconut
1/2 teaspoon vanilla
4 ounces semisweet chocolate or 4 ounces bittersweet chocolate, finely chopped

Steps:

  • Combine cold mashed potatoes and confectioner's sugar in a large bowl. Thoroughly combine. Mixture will begin as a stiff dough and loosen up as the sugar mixes with the potatoes. Add the coconut and vanilla and mix thoroughly.
  • Form into triangular peaks, using about 1 rounded teaspoon of mixture for each. Put on waxed paper lined cookie sheet. Let dry for 20 minutes.
  • Melt chocolate in bowl over simmering water (or in microwave in one minute intervals until melted).
  • Dip base of each candy in chocolate. Let stand on waxed paper to set.
  • Store in covered tin in the refrigerator.

1 tablespoon olive oil
1 pound small potatoes, halved
2 red onions, chopped
5 cloves garlic, minced
1 (1 inch) piece fresh ginger root, minced
1 teaspoon ground turmeric
1 tablespoon cumin seeds
salt and pepper to taste
1 (16 ounce) can coconut milk
2 tablespoons tomato puree
1 bunch fresh parsley, chopped

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Cook the potatoes in the hot oil until browned on all sides, about 10 minutes. Remove from skillet and reserve.
  • Reduce the heat to medium, and cook the onions in the skillet until translucent, 2 to 4 minutes. Stir the garlic, ginger, turmeric, cumin seeds, and salt and pepper into the onions. Cook until fragrant, about 1 minute. Return the potatoes to the skillet and cook until almost done, about 15 minutes.
  • Pour the coconut milk over the potatoes; stir in the tomato puree and chopped parsley. Cook until potatoes are cooked through and sauce has thickened, about 5 additional minutes.

3 -4 cups sweet potatoes, mashed (canned okay)
2 eggs, beaten
1 teaspoon vanilla
1/2 cup butter
1/3 cup milk
1 cup coconut
1 cup brown sugar
1 cup chopped pecans
1/3 cup flour
1/2 cup butter

Steps:

  • Preheat oven to 350F and grease a 3 quart casserole.
  • Mix together mashed sweet potatoes, eggs, vanilla, butter, milk and coconut.
  • Pour into greased 12-inch round casserole.
  • For topping, mix together brown sugar, nuts, flour and butter.
  • Crumble over the sweet potatoes (not too thick as it's sweet).
  • Bake for 25 to 35 minutes.
