I wanted a frosting for a coconut layer cake that stood up to a stronger flavor without overpowering it and without being too sweet. If frosting a layer cake, I recommend spreading melted apricot preserves over the center layer, along with some frosting.

1 (8 ounce) package cream cheese, softened
½ cup unsalted butter, softened
4 cups confectioners' sugar
2 tablespoons heavy cream
½ teaspoon salt
½ teaspoon coconut flavoring
1 teaspoon vanilla extract
½ cup sweetened shredded coconut
1 cup sweetened shredded coconut, toasted

Steps:

  • Beat the cream cheese and butter in a mixer bowl until light and fluffy. Gradually add the confectioners' sugar, one cup at a time, alternating with heavy cream. Beat in the salt, coconut flavoring, and vanilla extract. Continue beating until mixture is smooth and spreadable. Add additional confectioners' sugar if necessary to thicken the frosting, or more cream to thin. Stir in the coconut. If desired, spoon toasted coconut evenly over frosted cake.

We loved drinking a little coconut rum cream in our morning coffee on vacation in Jamaica, but could never find it when we returned home. After looking up several recipes I decided to make some adjustments and came up with my own version. Add a little to your coffee or serve over ice as a cocktail.

1 cup heavy whipping cream
1 (2.6 ounce) bar milk chocolate candy bar
1 (14 ounce) can sweetened condensed milk
1 cup dark rum
4 teaspoons instant coffee granules
½ teaspoon ground cinnamon
½ teaspoon vanilla extract
½ teaspoon coconut extract

Steps:

  • Heat cream and chocolate in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula until chocolate is melted; remove from heat and cool.
  • Blend cooled chocolate mixture, sweetened condensed milk, rum, coffee granules, cinnamon, vanilla extract, and coconut extract together in a blender on high speed until smooth.

Steps:

  • Beat cream cheese and butter in large bowl with electric mixer on medium speed until light and fluffy.
  • Add sugar alternately with the milk, beating until well blended after each addition. Add vanilla; mix well. Stir in coconut.

In honor of my new favorite cake, NurseDi's Mango Cake, recipe # 102221, I made a spoon-licking-good frosting that packs a great flavor but won't overpower that wonderful cake.

2 (8 ounce) cartons philadelphia brand whipped cream cheese (16 ounces total)
1 (8 1/2 ounce) can cream of coconut (Coco Lopez)
1 cup shredded sweetened coconut
1/4 teaspoon butter flavoring
1/2 teaspoon rum extract

Steps:

  • Mix all together with a spoon & spread over cooled cake.
  • Refrigerate leftovers (if you're lucky enough to have any leftovers). Just gets better as it sits.
  • Note: I used the cartons of already whipped cream cheese as that's what I had on hand. Probably, (2) 8 oz. blocks whipped would work just as well.
