1-1/4 cups all-purpose flour
1-1/4 cups cornstarch
6-1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon Cajun seasoning
1-1/2 cups cold water
1/2 teaspoon canola oil
2-1/2 cups sweetened shredded coconut
1 pound uncooked shrimp (26-30 per pound), peeled and deveined
Additional oil for deep-fat frying
1/2 cup orange marmalade
2 tablespoons honey

Steps:

  • In a large bowl, combine the first 5 ingredients. Stir in water and oil until smooth. Place coconut in another bowl. Dip shrimp into batter, then coat with coconut. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry shrimp, a few at a time, for 3 minutes or until golden brown. Drain on paper towels., In a small saucepan, heat marmalade and honey; stir until blended. Serve with shrimp.

1/2 cup orange marmalade
1/4 cup Dijon mustard
1 teaspoon hot sauce, such as Frank's
1 1/2 cups all-purpose flour
1 tablespoon paprika
2 teaspoons Cajun seasoning
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
4 large egg whites
Heaping 1/2 cup panko breadcrumbs
Heaping 1/2 cup unsweetened shredded coconut
Heaping 1/2 cup macadamia nuts, finely ground
Vegetable oil, for frying
18 jumbo shrimp, peeled and deveined, tails on

Steps:

  • For the dipping sauce: Stir the marmalade, mustard and hot sauce together. Refrigerate until ready to serve.
  • For the shrimp: Combine the flour, paprika, Cajun seasoning, 2 teaspoons salt and 1/4 teaspoon pepper in a shallow bowl. Place the egg whites in another shallow bowl and whisk until frothy. Combine the panko, coconut and ground macadamias in a third shallow bowl.
  • Fill a wide, shallow pot with about 1 inch of oil. Heat over medium-high heat until the oil registers 350 degrees F on a deep-frying thermometer. Line a plate with paper towels.
  • Meanwhile, toss the shrimp in the seasoned flour to coat. Working with a few shrimp at a time, shake off the excess flour and dip in the egg whites to coat.
  • Let the excess egg white drip off, then toss in the coconut mixture, pressing with your fingertips to get as much coating to adhere as possible.
  • Add half of the shrimp to the oil and fry until golden brown and just cooked through, about 2 minutes per side; transfer to the lined plate to drain. Return the oil to 350 degrees F and repeat with the remaining shrimp.
  • Arrange the shrimp and dipping sauce on a serving platter and serve warm.

Steps:

  • Heat oil in deep fryer or deep skillet to 325*.
  • Meanwhile, mix flour, salt, ginger, and pepper.
  • Beat egg whites, just until foamy.
  • Coat shrimp with flour; dip into egg whites.
  • Pat coconut onto shrimp.
  • Fry, turning once, for about 2-3 minutes, until golden brown.

1 large egg
1/2 cup all-purpose flour
2/3 cup beer (room temperature)
1 1/2 teaspoons baking powder
1/3 cup all-purpose flour
2 cups mound's brand sweetened coconut
25 medium uncooked fresh shrimp, with tails left on
2 1/2 cups vegetable oil (can use 3 cups)

Steps:

  • NOTE; the shrimp must be chilled for at least 5-24 hours (the longer chilling time the better it will be).
  • In a medium bowl whisk egg with 1/2 cup flour, beer and baking powder until well combined.
  • Prepare two separate bowls, place 1/3 cup flour in one bowl and the coconut in the other bowl.
  • Holding the shrimp by the tail dredge firstly in flour shaking off any excess flour, then dip in the beer batter allowing excess to drip off.
  • Roll the shrimp in coconut pressing down slightly with fingers to adhere the coconut to the shrimp.
  • Repeat with all remaining shrimp.
  • Place onto a parchment-lined baking sheet.
  • Refrigerate for a minimum of 5-24 hours.
  • Heat oil in a deep-fryer or in a large heavy pot to 350°F.
  • Fry the shrimp in batches turning once until golden brown.
  • Carefully using tongs remove to a brown paper bag or paper towels to drain.

1 pound jumbo shrimp, peeled and deveined
¼ cup coconut flour
½ teaspoon onion powder
½ teaspoon garlic powder
2 eggs, or more as needed
1 cup macadamia nuts
1 cup unsweetened shredded coconut
2 tablespoons ghee, or more to taste
1 pinch sea salt and ground black pepper to taste

Steps:

  • Line a cookie sheet with parchment paper. Line a second cookie sheet with several layers of paper towels.
  • Mix coconut flour, onion powder, and garlic powder in a small bowl. Whisk eggs thoroughly in a second bowl.
  • Grind macadamia nuts in a food processor until coarsely chopped. Avoid overmixing or mixture will start to clump. Empty ground nuts into a third bowl; mix in coconut until blended.
  • Place each shrimp in the coconut flour mixture, lightly coating on all sides. Then dip in the egg, and finally in the macadamia-coconut mixture. Place on the parchment-lined cookie sheet; repeat with remaining shrimp.
  • Heat ghee in a large skillet over medium heat until melted; add shrimp. Cook, turning often, adding more ghee as needed, until golden brown and evenly cooked, 1 1/2 to 2 minutes per side. Drain shrimp on paper towels. Season with salt and pepper and serve.

  • Preheat oven to 400 degrees. Lightly coat a baking dish with olive oil. Place flour in a small bowl. Dredge shrimp in flour, then dip into coconut milk and roll in crushed macadamia nuts. Place in baking dish and bake for 10 to 15 minutes, or until shrimp is cooked through. Serve 3 shrimp on a bed of rice topped with orange lime sauce.
