BEER-BATTERED POLLOCK BITES
What better way to prove that pollock is the new cod than by giving it the most classic British treatment? Mushy peas optional!

Steps:
- First make the sauce by mixing all the ingredients together, then set aside. In a large bowl, make the batter by tipping the flour, sugar and some salt and pepper into a bowl, then gradually whisking in the beer until smooth.
- Heat the oil in a deep fryer or heat about 5cm of oil in a wok until a drop of batter sizzles and crisps up quickly. Dredge a few chunks of fish in the batter, then deep-fry for 3-4 mins until golden. Remove, using a slotted spoon, then drain on kitchen paper. Repeat until all the fish is used. Serve the fish with the sauce for dipping and lime wedges for squeezing over.

CRISPY FISH BITES RECIPE
Crispy fish bites are delicious and easy to make. The kids will love them too. They're just live fish fingers but even crisper and healthier too.

- To make the sauce, mix the mayonnaise with the capers, parsley and the juice of half the lemon. Spoon into a bowl and chill until ready to serve.
- Cut the fish into finger-sized pieces. Place the flour on a plate and season with salt and freshly ground pepper. Beat the eggs in a shallow bowl and place the breadcrumbs on a separate plate.
- Dip the fish first into the seasoned flour, then the eggs and finally the breadcrumbs, ensuring they are well coated.
- Half fill a large, deep saucepan with the oil and heat until a crust of bread will brown in 40 seconds.
- Fry the fish in the hot oil, in batches, so that the temperature of the oil is not lowered, until golden brown, about 2-3 mins. Drain well on kitchen paper and serve with the sauce and the remaining lemon cut into wedges.

- Pat the cod dry with paper towels.
- Crack the egg into a bowl and whisk well. In a second bowl, combine the almond flour, garlic powder, onion powder, parsley, salt, and pepper.
- Dip each fish fillet into the egg, letting the excess drip off before transferring it to the seasoned flour mixture. Press the fish into the flour mixture, then flip to coat the other side. Transfer to a plate.
- Fill a skillet about a half an inch high with oil over medium-high heat. The oil needs to be hot before adding the fish or the flour may come off. To test the oil, sprinkle a few drops of water over it. If it sizzles, it's ready.
- Add the cod in a single layer and cook for 2-4 minutes or until golden brown. Flip gently with a fish spatula, if you have one.
- Cook an additional 2-4 minutes or until golden brown and cooked through. Cod is done when it's opaque, flaky and the internal temperature of the thickest portion reaches 145°F when checked with a meat thermometer.
- Transfer to a paper towel-lined plate to absorb any excess oil before serving.
- Season with additional salt and pepper, if desired. Serve with a squeeze a lemon or cocktail sauce, if you prefer.

- Preheat the broiler on the oven. Pat the cod with a paper towel, then season both sides with the salt and pepper.
- Melt the butter over medium-high heat in a cast iron or oven-proof skillet that is no bigger than 12 inches. Add the garlic and cook, stirring constantly, for 30 seconds, then stir in the lemon juice and zest.
- Place the cod fillets in the pan and cook for 1 minute, then carefully turn them over.
- Place the skillet in the oven about 4-6 inches from the broiler. Broil for 6-9 minutes, depending on the thickness of your fillets, or until the internal temperature of the cod reaches 130-140°F on a meat thermometer inserted into the center of the thickest portion of a fillet.
- Garnish with the parsley and extra lemon slices, if desired, and serve.

Steps:
- Cover fillets with water in saucepan. Bring to a boil.
- Simmer covered for 5 minutes until fish flakes when tested with a fork.
- Drain, cool and flake.
- Beat 1 egg with fork in bowl. Add next 9 ingredients. Add fish. Mix well.
- Let stand 10 minutes so crumbs absorb moisture.
- Shape mixture into 1 inch balls.
- Beat 2 large eggs and 2 tbsp water together with fork.
- Dip ball in egg mixture and coat with crumbs.
- Deep fry in hot 400F fat until browned.
- Serve with picks and seafood sauce.
- To make as patties, form into 4 patties and dip in bread crumbs.
- Brown on both sides in 2 tbsp hard margarine not butter.
