This candy tastes wonderful and takes about 15 minutes to make. My sister and I did three batches in an hour one year for Christmas. I use a cast iron skillet and some times just a few of the almonds to help gauge the readiness.

1 cup butter
1 ¼ cups white sugar
2 tablespoons water
¼ cup slivered almonds
1 cup chocolate chips

Steps:

  • Butter a 10x15 inch jellyroll pan.
  • Melt butter in a heavy skillet over medium heat. Stir in sugar and water. Bring to a boil and add almonds. Cook, stirring constantly until nuts are toasted and the sugar is golden. Pour the mixture into the prepared pan; do not spread.
  • Immediately sprinkle the chocolate chips on top. Let stand for a minute, then spread the chocolate over the top. Let cool completely, then break into pieces.

Chewy and chocolatey toffee treat with hints of espresso. An English Toffee recipe all grown up!

1 cup unsalted butter
1/2 cup brown sugar, levelled, but not packed
1/2 cup granulated sugar
1 1/2 tsp molasses
1/4 heaping tsp flaky sea salt (or 1/4 tsp table salt)
1 1/2 tsp instant espresso powder (decaf espresso works too)
1 cup semisweet chocolate chips (or 6 oz./170 grams semisweet chocolate, chopped)
1/2 cup chopped toasted hazelnuts

Steps:

  • Line a small baking sheet with non-stick paper.
  • In a medium heavy sauce pan (with a candy thermometer attached), melt butter, brown and white sugar, molasses, salt, and espresso together over medium-high heat. Cook, stirring occasionally with a whisk until the temperature reaches 250°F. Then whisking constantly, until mixture reaches 300°F.
  • Carefully pour mixture onto baking sheet and spread evenly with a spatula. Immediately sprinkle chocolate chips over the toffee and let sit for about a minute until softening, then spread chocolate evenly over the candy base. Sprinkle hazelnuts over chocolate.
  • Place in fridge (or freezer) till toffee is set, about 15-20 minutes.
  • Break toffee into pieces and store in an airtight container.

Steps:

  • Combined butter, sugar and water in a heavy sauce pan.
  • Cook stirring constantly to the hard crack stage or 300 degrees.
  • Immedieately pur into a buttered 9x13 cake pan, spreading quickly.
  • Cool When cooled break into pieces and dip into the dipping chocolate.
  • Place on waxed paper to set up.
  • Sprinkle with ground nuts.
  • When set place in an air tight container.
