1 teaspoon hot water
1/2 cup Crisco® Butter Flavor All-Vegetable Shortening or 1/2 stick Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening
3/4 cup brown sugar, firmly packed
1 large egg
1/2 teaspoon vanilla extract
1 1/2 cups Pillsbury BEST® All Purpose Flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/3 cup chocolate, decorator bits

Steps:

  • DISSOLVE instant coffee in hot water. Beat shortening, brown sugar, egg, vanilla and coffee mixture in large bowl with electric mixer until light and fluffy. Mix in flour, baking powder, cinnamon, nutmeg and salt.
  • DIVIDE dough into two equal parts. Shape each half into a roll 7-inches long x 1 1/2-inches in diameter. Roll in chocolate decorator bits, pressing lightly. Wrap tightly. Refrigerate at least 2 hours.
  • HEAT oven to 375ºF. Cut rolls into 1/4-inch slices. Place slices 1-inch apart on ungreased baking sheet.
  • BAKE 6 to 8 minutes or until set. Cool on rack.

1 egg
1/2 teaspoon vanilla
1 1/2 cups all-purpose flour

1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/3 cup chocolate sprinkles

Steps:

  • In measuring cup dissolve instant coffee in hot water.
  • In large mixing bowl, cream butter flavor Crisco, brown sugar, egg, vanilla and coffee mixture until light and fluffy.
  • Mix in flour, baking powder, cinnamon, nutmeg and salt.
  • Divide dough into two equal parts. Shape each part into roll 1-1/2" in diameter and about 7" long.
  • Roll in chocolate jimmies, pressing lightly. Wrap; refrigerate for at least 2 hours.
  • Preheat oven to 375° . Cut rolls into 1/4" slices. Place slices 1" apart on ungreased baking sheet.
  • Bake for 6-8 minutes, or until set. Transfer to cooling rack.

3 Tbsp. finely ground coffee (not instant)
2 Tbsp. granulated dried orange peel
2 Tbsp. ground cinnamon
2 tsp. ground cardamom
2 tsp. ground fennel seeds or 1⅔ tsp. fennel seeds, ground in a spice mill

Steps:

  • Mix together bee pollen, coffee, orange peel, cinnamon, cardamom, and fennel in an airtight container and cover.
  • Do ahead: Spice mix can be made 1 month ahead. Store at room temperature.

1/3 cup instant coffee granules
2 tablespoons hot water
2 eggs
2-1/2 cups all-purpose flour

Steps:

  • In a bowl, combine sugar and oil. Dissolve coffee in water; add to sugar mixture and mix well. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder and salt; gradually add to the sugar mixture., Roll into 3/4-in. balls, then roll in additional sugar. Place 2 in. apart on lightly greased baking sheets; flatten with a fork. Bake at 400° for 8-10 minutes or until edges are firm. Remove to wire racks to cool.

Steps:

  • In large bowl, dissolve 1 1/2 tablespoons espresso in hot water. Beat in butter, shortening, 1 cup granulated sugar, the brown sugar and egg with electric mixer on medium speed until fluffy. Beat in flour, baking powder, 1 teaspoon espresso, the cinnamon and salt on low speed.
  • Divide dough in half. Shape each half into 10-inch-long roll. Wrap each roll with plastic wrap; refrigerate 30 minutes.
  • On large plate, mix coating ingredients. Roll each roll of dough in coating (reserve any remaining coating). Rewrap in plastic wrap; refrigerate 2 hours longer.
  • Heat oven to 375°F. Cut each roll into 1/4-inch slices. On ungreased cookie sheet, place slices about 2 inches apart. Sprinkle with remaining coating.
  • Bake 8 to 10 minutes or until edges are light brown. Cool slightly; remove from cookie sheet. Cool completely.
