4-5 ounces piloncillo*, roughly chopped or 1/2 to 2/3 cup packed brown sugar, plus 1 teaspoon molasses
2 inches cinnamon stick
A few aniseeds (optional )
2/3 cup (2 ounces) Viennese-roast coffee, medium to coarse grind
*Unrefined sugar that is pressed into cone or disk shapes. Also called panela.

Steps:

Boiling and steeping: In a noncorrosive pan, combine 1 quart water, the sugar, cinnamon and optional aniseed. Bring slowly to a boil, stirring to melt the sugar. Stir in the coffee, remove from the fire, cover and steep for 5 minutes.
Straining: Strain the coffee through a fine-mesh sieve into cups or mugs and serve immediately.

1 1/2 cups sugar
water, 1 coffee pot full
ice cube

Steps:

put coffee filter in filter holder.
add two family size tea bags in laying them flat with the tea of bottom of pouches and with the bottoms touching
next fill the coffee pot full & fill resevior.
brew the tea
when done brewing pour into gallon jug & pour in sugar to melt the sugar.
pour in ice and stir to melt and make cold, if any ice cubes are left scoop them out and then add a little more water to make a full gallon.

Loose tea or tea bag

Steps:

Whether you use loose tea or tea bags, the preparation method is the same. Start with a spotlessly clean teapot made of glass, china or earthenware. Add rapidly boiling water, and allow to stand a few minutes to "hot the pot". Pour out just before before brewing the tea.
Heat cold water to a full rolling boil. (use water from the cold-water tap; water from the hot-water tap may contain mineral deposits from water pipes that can affect the flavor of the tea.)
Add tea to the warm pot, allowing 1 teaspoon of loose tea or 1 tea bag for each cup tea. Pour boiling water over tea (3/4 cup for each cup of tea); let stand 3 to 5 minutes to bring out the full flavor. Stir tea once to ensure uniform strength. Do not judge the strength of tea by its color; you must taste it. Strain the tea, or remove tea bags. Serve wtih sugar and milk or lemon if desired.
