EASY IRISH COLCANNON
Traditional Irish potato dish, very easy to make. Bear in mind that the UK and Ireland weren't exactly known for their cuisine, but for authenticity, this is what you want. For unauthentic but enhanced flavor, you can add bacon bits, or Cheddar cheese, or both.

Steps:
- Place the potatoes, cabbage, and green onions into a large sauce pan, fill with water, and bring to a boil. Reduce heat, cover, and simmer until the potatoes are tender, about 20 minutes.
- Drain the vegetables and place into a large bowl. Mash the potatoes and vegetables with the butter using a fork until the mixture is chunky, pouring in half-and-half gradually as you mash. Season with salt and pepper, and serve.

- Place potatoes in a Dutch oven; cover with water. Bring to a boil. Cover and cook over medium heat for 12-15 minutes or until potatoes are almost tender, adding the cabbage during the last 5 minutes of cooking., Meanwhile, in a small saucepan, combine green onions and milk. Bring to a boil. Reduce heat; simmer, uncovered, for 5-6 minutes or until onions are soft., Drain potato mixture. Mash with milk mixture, butter, salt and pepper.

- Place potatoes in a large pot, and add enough water to cover. Bring to a boil, and cook for about 10 minutes, until potatoes are soft enough to mash. Drain. Transfer to a large serving bowl, and mash potatoes with 1/4 cup of butter and all of the sour cream until well blended.
- Melt remaining butter in a large pot (you can use the same pot) over medium heat. Add garlic and green onion, and cook, stirring until softened. Add the cabbage, cover the pan, and let the cabbage steam for about 10 minutes, stirring occasionally. Stir the cabbage mixture into the mashed potatoes, and season liberally with salt and pepper. Serve hot.

- Add the butter to a medium saucepan over medium heat, then add the onion and garlic and saute until the onion is soft and translucent. Stir in the celery and carrots and cook for a couple more minutes, then add the brussels sprouts and sweet pepper.
- Add the shredded chicken and 1/2 cup of the broth along with the frozen peas. Cook, stirring frequently, until the peas are a vibrant green. In a small bowl, whisk the cornstarch into the remaining 1/4 cup of broth, then slowly add to the pot, stirring, until thickened. If needed, add a bit of the colcannon to thicken. Season to taste with the fresh herbs, salt & pepper.
- Pour into an oven safe bowl or divide into two large ramekins. Top with colcannon, spreading to almost completely cover the mixture, then sprinkle the shredded cheese on top.

- Tie thyme sprigs with twine or in a cheesecloth bag. Combine milk, garlic and thyme in a small saucepan. Bring to a simmer over medium heat. Reduce heat to low and simmer gently until garlic is soft, 5 to 10 minutes. Discard thyme.
- Transfer the milk mixture to a blender and puree until smooth. Return to the pan and stir in scallions. Cover and set aside.
- Bring 1 inch salted water to a boil in a large pot. Add cabbage, cover and cook until very tender, 8 to 10 minutes. Drain well.
- Meanwhile, place potatoes in a large saucepan and cover with cold salted water. Bring to a boil, reduce heat to medium and cook, covered, until tender, 10 to 15 minutes.

- Add the diced potatoes to a stock pot. Cover with water. Bring to a boil and cook until fork tender, about 10 minutes. Meanwhile, rub the kale with the tsp of olive oil and massage. This will help tenderize the kale. Set aside in a small dish.
- Drain the potatoes and add to a large bowl or stand mixer. Add the butter, milk and cream. Beat with a hand mixer or stand mixer until whipped, this could take a minute or two.
- Fold in the cooked kale, parsley, green onions, salt and pepper to the bowl with the whipped potatoes. Serve immediately with an extra pat of butter for garnish!
