2 cucumbers
1/3 cup cider vinegar
5 tablespoons water
5 tablespoons sugar
1/2 teaspoon salt
1 tablespoon dill weed
1 dash white pepper (optional)

Steps:

  • Rinse the cucumbers. Do not peel, but score the skin by peeling the lines of a fork lengthwise through the peel.
  • Slice cucumbers into very thin slices. Put into bowl with a lid.
  • Mix the dressing ingredients.Pour over the cucumber slices and toss lightly.
  • Cover with a lid and shake to coat evenly. Chill several hours to allow flavors to blend.
  • It keeps well for days!

4 cucumbers
salt
1/2 cup white vinegar per qt. jar cucumber
2 teaspoons sugar per qt. jars
1/4 teaspoon pepper per qt. jar
dried dill weed

Steps:

  • Peel cucumbers, slice as thinly as possible. ("Salad shooter" is great!).
  • Sprinkle with salt, mix, let them set in a bowl until they draw water out. Then squeeze them tightly.
  • Put a handful in jar, then a sprinkle of dill. Then more cucumbers, etc. Mix vinegar, sugar, and pepper. Pour over cukes in jar. Stick a knife through to mix vinegar with cucumbers. Refrigerate. (Keeps a long time.).

2 cups cubed day-old rye bread
1 small head cauliflower, cut into florets
2 tablespoons butter
1 teaspoon caraway seeds
3 cups shredded sharp cheddar cheese
4 large eggs, beaten
1 cup flat beer or nonalcoholic beer
1 teaspoon ground mustard
1/2 teaspoon ground coriander
1/4 teaspoon pepper

Steps:

  • Place bread in a 15x10x1-in. baking pan; bake at 300° for 15-20 minutes or until crisp. In a large skillet, saute cauliflower in butter with the caraway seeds until tender. Remove from the heat; stir in bread and cheese. Transfer to a greased 11x7-in. baking dish., In a small bowl, whisk the eggs, beer, mustard, coriander and pepper. Pour over bread mixture. Bake at 350° for 30-35 minutes or until a knife inserted in the center comes out clean.

3 large carrots, cubed
1 large turnip, cubed
3 tablespoons softened butter
½ teaspoon salt
¼ cup all-purpose flour
¼ cup white sugar
2 eggs
½ cup milk
2 tablespoons white sugar
¼ teaspoon ground cinnamon

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
  • Place the carrot and turnip cubes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.
  • Return the carrots and turnips to the pot, and mash well with the butter, salt, flour and 1/4 cup of sugar. Whisk together the eggs and milk in a bowl, then stir into the mashed carrot mixture until blended. Scrape into the prepared casserole dish. Stir together 2 tablespoons of sugar with the cinnamon in a small bowl, and sprinkle over the top of the carrot mash.
  • Bake in the preheated oven until the carrot mash has slightly firmed and the top has begun to turn golden brown, about 45 minutes.

2 tablespoons butter
½ teaspoon salt
1 cup heavy whipping cream
2 eggs, beaten
⅓ cup packed brown sugar
1 cup crushed cornflakes cereal
2 tablespoons crushed cornflakes cereal

Steps:

  • Preheat oven to 350 degrees (175 degrees C).
  • Bring a pot of salted water to a boil. Add turnips; cook until tender but still firm. Drain.
  • In a large bowl, add turnips, butter, salt, cream, eggs, brown sugar and 1 cup corn flakes. Blend until well mixed.
  • Pour into a 2 quart casserole dish, sprinkle with remaining 2 tablespoons crushed corn flakes. Bake for 45 to 50 minutes.
