This recipe for hearty roast beef and brie sandwiches was inspired by the delectable Gatsby Arrow sandwich at Booeymongers in Georgetown. It's a sensational flavor combination!

One loaf french bread
1/2 pound rare roast beef, sliced very thin
1/2 pound Brie cheese
Romaine lettuce leaves
Dijon mustard

Steps:

  • Split the loaf of bread down the middle and spread one or both sides with mustard, depending on how much of a mustard-lover you are.
  • Layer the roast beef on the bottom of the loaf, top with lettuce and then slices of Brie. Place top of loaf on sandwich. Cut into as many sandwiches sections as you like!

8 ounces brie cheese
1 1/2 lbs roast beef (rare, thin sliced)
6 lettuce leaves
1 small onion (thin sliced)
4 tablespoons mayonnaise

Steps:

  • Set Brie out to reach room temperature.
  • Slice croissants lengthwise, toast lightly.
  • Spread Brie on halved croissant bottoms.
  • Spread mayonnaise on the other halves.
  • Place the roast beef on Brie halves.
  • Add a leaf of lettuce and a slice of onion to each.
  • Top with mayonnaise halves.

  • Layer all the ingredients, except for the lettuce, on the bread slices.
  • Broil until beef is warmed through and cheese is melted.
  • Put the romaine leaves over beef and peppers, and top with cheese toast.

a trimmed 3- to 3 1/2-pound fillet of beef, tied, at room temperature
parsley sprigs for garnish if desired
cucumber horseradish sauce andcurried yogurt sauce as accompaniments

Steps:

  • Preheat the oven to 500°F. Pat dry the fillet and season it with salt and pepper. In an oiled roasting pan roast the fillet in the middle of the oven for 20 to 25 minutes, or until a meat thermometer registers 130°F for medium-rare meat, and let it cool to room temperature. The fillet may be roasted 2 days in advance and kept wrapped and chilled. Slice the fillet crosswise, arrange it on a cutting board or platter, and garnish it with the parsley. Serve the beef with the sauces.

4 pounds chuck roast
5 cloves garlic, minced
1 ½ cups prepared strong coffee
2 tablespoons cornstarch
½ cup water

Steps:

  • Preheat slow cooker to low setting OR preheat oven to 350 degrees F (175 degrees C).
  • Using a sharp knife, make 5 or 6 deep slits around the top and side of the roast. Push the whole cloves of garlic down into the slits. Place the meat in a slow cooker OR a 10x15 inch roasting pan and pour the coffee over the meat.
  • Cook in slow cooker on low setting for 6 to 8 hours OR bake at 350 degrees F (175 degrees C) for 2 to 3 hours.
  • When roast is done, remove from slow cooker OR oven, and pour the drippings into a small saucepan over medium low heat. In a separate small bowl, combine the cornstarch and water. Mix well and add slowly to the drippings, stirring constantly. Simmer until thickened.

Raw vegetables, such as carrots and potatoes, may be added at the start of the cooking time, if desired. My whole family loves this recipe. The leftovers also make great roast beef sandwiches.
