A really fast and easy way to make oatmeal if you're a college student and don't have access to a fully-stocked pantry. It's quick, simple, and wonderful for birthdays and dessert nights!

¾ cup coconut oil
¾ cup white sugar
¾ cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
1 teaspoon baking soda
¾ teaspoon ground cinnamon
½ teaspoon salt
2 ¾ cups instant oatmeal
1 cup blueberries

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat coconut oil, white sugar, and brown sugar together in a bowl until smooth. Add eggs and vanilla; beat until light and fluffy.
  • Whisk flour, baking soda, cinnamon, and salt together in another bowl. Gradually beat flour mixture into sugar mixture; stir in oatmeal and blueberries until dough is combined. Drop dough by the teaspoonful 2-inches apart onto baking sheets.
  • Bake cookies in the preheated oven until golden brown, 8 to 10 minutes. Cool slightly on the baking sheet before transferring to a wire rack to cool completely.

This all-in-one milk-and-cookies smoothie makes a nice change of pace for a summer breakfast or afternoon snack. For little kids: Let them help press the buttons on the blender. (Be sure to let it run for a full minute before you add the ice so the oatmeal-and-raisin mixture gets as smooth as possible.) For big kids: Let them measure the ingredients-it's the perfect time to teach them the difference between wet and dry ingredient measuring cups.

3/4 cup rolled oats
1/4 cup raisins
1/4 teaspoon pumpkin pie spice
1 cup whole milk, plus more if needed
1/2 cup full-fat vanilla yogurt
1 tablespoon dark brown sugar

Steps:

  • Add the oats, raisins and pumpkin pie spice to the carafe of a blender and pour in the milk, adding more to cover the oats if needed. Stir completely and set aside until the oats are soft, 15 minutes.
  • Blend on high speed until pureed and smooth, about 1 minute. Add the yogurt, brown sugar and 1 1/2 cups ice, and blend on high speed until smooth, about 30 seconds. Pour into 2 pint glasses.

1/2 cup toasted wheat germ
3/4 cup rolled oats
3/4 cup dried cherries
3/4 cup roasted sunflower seeds

Steps:

  • Preheat oven to 375 degrees.
  • Cream butter and sugar until fluffy.
  • Add egg, vanilla, and salt, and beat well.
  • Stir flour, baking powder, wheat germ and rolled oats together with a fork. Blend well with other ingredients, adding a tablespoon or more of water if necessary to hold the mixture together.
  • Place by tablespoonful on greased cookie sheets. Flatten them slightly.
  • bake for 10 - 12 minutes.
  • Makes 24.

It's very versatile...I add dried cranberries and different kinds of nuts as well as substituting flax seed, (which is an excellent source of omega-3 fatty acids) for some of the wheat germ. I feel pretty good about giving these to my kids and loved ones and I hope if you make them that you'll enjoy the same feedback as I do. mmm mmm

  • Add the egg, vanilla, and salt and beat well.
  • Stir flour, baking powder, wheat germ, and rolled oats together with a fork.
  • Add raisins so they get rolled in flour and don't stick together.
  • Blend well with other ingredients; I usually end up using my hands.
  • Add a little water if necessary to hold mixture together.
  • Place by tablespoonful on greased cookie sheets.
  • Flatten them slightly.
  • Bake for 10-12 minutes.

1 cup raisins
½ cup hot water
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups quick cooking oats
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup packed brown sugar
½ cup chopped walnuts
2 eggs
¾ cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Soak raisins in hot water and set aside.
  • In large bowl, sift flour with soda, salt and spices. Blend in rolled oats, sugar and nuts. In a separate bowl, beat eggs with fork and add oil, vanilla, and raisins and water mixture. Pour into dry ingredients, stirring until well mixed. Drop by teaspoonfuls about two inches apart onto ungreased cookie sheets.
  • Bake 10 to 13 minutes in the preheated oven, until the edges are golden.

1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla extract

1-1/2 cups quick-cooking oats
1 cup sweetened shredded coconut
5 milk chocolate candy bars (1.55 ounces each)

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in egg and vanilla. Combine flour, baking soda and salt; gradually add to creamed mixture and mix well. Beat in oats and coconut. , Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets; flatten slightly.
