1 pound boneless skinless chicken breasts, cut into 1-inch pieces
1 tablespoon olive oil
1 prebaked 12-inch pizza crust
1/4 cup prepared pesto
1 large tomato, chopped
1/2 cup canned black beans, rinsed and drained
1 cup shredded part-skim mozzarella cheese
1/2 cup shredded Parmesan cheese

Steps:

  • In a large skillet, cook chicken in oil over medium heat for 10-15 minutes or until no longer pink. , Place the crust on a lightly greased 12-in. pizza pan. Spread with pesto; top with the chicken, tomato, beans and cheeses. Bake at 400° for 10-12 minutes or until cheese is melted. Freeze option: Securely wrap and freeze unbaked pizza. To use, unwrap pizza; bake as directed, increasing time as necessary.

1 teaspoon finely chopped fresh garlic
1/2 pound boneless skinless chicken breasts, cut into bite-sized pieces
1 (12-inch) prepared thin pizza crust
1/2 cup baby spinach leaves
1/2 cup Land O Lakes® Shredded Mozzarella Cheese
1/4 cup shredded Cheddar cheese

Steps:

  • Heat oven to 450°F.
  • Melt butter in 10-inch nonstick skillet over medium-low heat until sizzling. Add garlic; sauté 1 minute. Add chicken; sauté 4-5 minutes or until chicken is no longer pink.
  • Brush liquid from pan over pizza crust. Top with spinach, chicken and cheeses.
  • Place pizza directly onto oven rack. Bake 10-12 minutes or until cheese is melted.

1 pound shredded chicken breast (or rotisserie) ((approximately 4 cups))
1 cup pre-shredded mozzarella cheese ((4 oz))
2 large eggs
salt and pepper to taste

Steps:

  • Shred the chicken by hand or cut into chunks and place into a food processor to chop. Salt and pepper to taste - until it tastes good!
  • Pre-heat oven to 400 degrees F. Line a sheet pan (18x13 inch) with parchment paper.
  • Thoroughly mix the ingredients together with a spoon, spatula, or your hand.
  • Pat the chicken firmly onto the parchment, spreading it as thin as you can without leaving holes.
  • Bake for 20 minutes or until the edges brown and top begins to brown. (You may need to bake it longer depending on your oven.)
  • Top with your favorite pizza toppings and bake for 10 minutes more. Cut and serve. Enjoy with a fork. Re-heats nicely in the oven or microwave. Serves 4.
  • The crust is 1 carb per quarter of the recipe.

4 (8 oz) boneless skinless chicken breasts*
Olive oil cooking spray
1 teaspoon Diamond Crystal kosher salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 cup pizza sauce (no added sugar (I use Rao's))
1 cup shredded part-skim mozzarella cheese ((4 oz))
1 oz pepperoni ((16 slices))
1/4 cup black olives (sliced)
1/4 cup chopped fresh basil

Steps:

  • Preheat your oven to 450 degrees F. Spray a rimmed baking dish with olive oil spray. I use a 10 X 7-inch ceramic baking dish from Sur La Table.
  • Place the chicken breasts in the baking dish, flat side up. Lightly spray them with olive oil. Sprinkle them with kosher salt, black pepper, garlic powder, and oregano. Bake for 15 minutes.
  • Remove the baking dish from the oven. Turn the chicken breasts. At this point, you can lightly spray them with more oil and sprinkle with a bit more salt and pepper, but it's optional. Top the chicken evenly with pizza sauce, shredded mozzarella, pepperoni, and olives.
  • Return the baking dish to the oven. Bake until the chicken is cooked through (its internal temperature should reach 165ºF) and the cheese is melted, about 15 more minutes. Garnish with chopped basil and serve.

2 cups chickpea flour
1 cup water
2 tsp olive oil
dash of salt
½ cup marinara or pizza sauce
handful of shredded kale
1 tbs olive oil
½ cup vegan cheese (I used Daiya mozzarella)

Steps:

  • Preheat oven to 375°. Line a baking sheet with parchment paper.
  • In a medium bowl, stir together flour, water, 2 tsp olive oil and salt until thoroughly mixed.
  • To prepare crust, spread mixture out in a circular shape (Or multiple circles if making individual pizzas) until it's about ¼" thick.
  • Bake in oven for 15-20 minutes, until edges are slightly crispy.
  • While crust bakes, toss kale in small bowl with 1 tbs olive oil.
  • Remove crust from oven. Flip parchment paper and crust upside down on baking sheet. Gently pull baking sheet away from crust.
  • Spread sauce over crust. Layer kale over sauce and sprinkle with cheese. Bake in oven for 5-7 minutes. Slice and enjoy right away.

CHICKEN ALFREDO PIZZA WITH BROCCOLI

Alfredo Sauce (recipe below)
½ cup cooked chicken, diced
1 cup broccoli, finely chopped (asparagus would also be good)
3 green onions, thinly sliced
1½ cups mozzarella cheese

Steps:

  • Prepare pizza dough according to the recipe directions, but don't forget to add garlic powder, rosemary, and basil when mixing the dough.
  • While the pizza crust is baking, I make the Alfredo sauce and prepare the other ingredients.
  • After removing pizza crust from oven top with Alfredo sauce and chicken
  • Place broccoli and onions over chicken
  • Top with cheese
  • Place pizza back in the oven on a middle rack. Bake at 450 degrees for 8 -10 minutes or until cheese is melted and just begins to turn brown.

1 ½ to 2 pounds boneless, skinless chicken breasts or thighs (about 3 medium breasts)
1 teaspoon kosher salt (divided)
½ teaspoon black pepper (divided)
2 tablespoons extra virgin olive oil (divided)
1 small yellow onion (finely chopped)
3 cloves minced garlic (about 1 tablespoon)
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes
1 24-ounce jar of your favorite pasta sauce (I used tomato basil)
1 tablespoon Worcestershire sauce
½ cup shredded Stella Fontinella Cheese
12 slices turkey pepperoni
Chopped fresh basil

Steps:

  • Place a rack in the center of your oven and preheat the oven to 375 degrees F.
  • Season the chicken 3/4 teaspoon salt and 1/4 teaspoon black pepper, sprinkling both sides.
  • In a large, heavy-bottomed, and ovenproof skillet, heat 1 tablespoon olive oil over medium high. Once hot, add the chicken breasts, top side down, and let cook undisturbed for 2 to 3 minutes, until the surface is golden brown. Flip and brown the other side. Remove to a plate (the chicken does not need to be cooked through).
  • Reduce the heat to medium. Add the remaining 1 tablespoon oil, onion, and remaining ¼ teaspoon salt and ¼ teaspoon black pepper. Sauté until the onion is tender, about 5 minutes.
  • Add the garlic, Italian seasoning, and red pepper flakes. Let cook until very fragrant, about 30 seconds.
  • Pour in the pasta sauce and Worcestershire sauce. Let simmer for 5 minutes.
  • Nestle the chicken back into the sauce.
  • Sprinkle the Stella Fontinella Cheese over the top of the chicken.
  • Arrange the pepperoni slices on top.
  • Place the skillet in the oven and cook for 15 to 20 minutes, or until a thermometer inserted in the thickest portion of the chicken registers 165 degrees F and the juices run clear (my smaller breasts were done closer to the 15-minute mark; larger ones may need longer).
  • Sprinkle with fresh basil and enjoy hot.
