This recipe is absolutely fantastic. I have impressed many with it and so did my grandmother. It is not the 'run-of-the-mill' cheesecake. You just have to try it! Trust me, you'll love it!

1 (8 ounce) package cream cheese, softened to room temperature
2 cups powdered sugar
1 envelope unflavored gelatin (such as Knox®)
1 (8 ounce) container frozen whipped topping (such as Cool Whip®), thawed
1 (9 inch) prepared graham cracker crust
1 (21 ounce) can cherry pie filling

Steps:

  • Combine cream cheese and powdered sugar in a large bowl; beat with an electric mixer until smooth. Add gelatin and beat until incorporated. Mix in whipped topping until smooth. Spread batter in prepared crust, leaving some room at the top. Spread cherry pie filling over cream cheese mixture.
  • Place in the refrigerator until firm, 3 to 4 hours.

Here's what you need: cream cheese, sugar, water, gelatin powder, lemon, vanilla extract, lemon, whipping cream, prepared mini graham cracker crusts, lemon wedge, fresh mint leaf

8 oz cream cheese, room temperature
1 cup sugar
3 tablespoons water
1 package gelatin powder
1 lemon, juiced
2 tablespoons vanilla extract
1 lemon, zested
2 cups whipping cream
6 prepared mini graham cracker crusts
lemon wedge, for garnish
fresh mint leaf, for garnish

Steps:

  • Bring a medium pot filled with a couple inches of water to a simmer. Set a heatproof bowl on top, making sure the bottom is not touching the water. Add the cream cheese and sugar to the bowl and stir to incorporate, then let melt.
  • Meanwhile, add the water and gelatin to a small bowl and let bloom until the water is absorbed, 2-3 minutes.
  • Once the cream cheese softens and turns off white in color, add the lemon juice, vanilla, and lemon zest. Whisk to incorporate and remove any lumps.
  • Add the bloomed gelatin to the cream cheese mixture and whisk until fully melted and incorporated.
  • Remove the bowl from the double boiler and freeze for 5-10 minutes, until cooled.
  • Remove the cream cheese mixture from the freezer and gradually fold in the whipped topping until well incorporated.
  • Scoop the filling into the mini graham cracker crusts. Freeze for 15 minutes, or until completely set.
  • Garnish with lemon wedges and mint, then serve.
  • Enjoy!

9 tablespoons butter, melted
1 pack gelatin, cherry flavor
1 pack gelatin, lime flavor
1 pack gelatin, pineapple flavor
1 ⅘ cups boiling water, 2/3 cup (160 ml) for each flavor
1 ⅘ cups cold water, 2/3 cup (160 ml) for each flavor
14 oz sweetened condensed milk, 1 can
7 oz cream uht, 1 box
10 ½ oz cream cheese, 1 pack, at room temperature
⅓ cup water
2 packs unflavored gelatin powder
mixed berry sauce

Steps:

  • Mix crushed graham crackers and butter in a bowl.
  • Transfer the mixture to the bottom of a 9-inch (23 cm) springform pan, spread evenly. Set aside.
  • Place each gelatin flavor in separate bowls, dissolve with ⅔ cup (160 ml) hot water, then, add more ⅔ cup (160 ml) cold water.
  • Refrigerate for 2-3 hours or until set.
  • Cut the gelatin into small pieces, reserve.
  • For the cream cheese filling in a bowl, mix condensed milk, cream, cream cheese until well combined.
  • Hydrate the unflavored gelatin and microwave for 20 seconds to dissolve.
  • Add the gelatin in the cream cheese mixture and mix well.
  • Place the flavored gelatin pieces over the cheesecake crust.
  • Pour the cream cheese mixture over the gelatin carefully.
  • Refrigerate for 3-4 hours or until set.
  • Garnish with mixed berry sauce.
  • Enjoy!
