MONGOLIAN BEEF STIR FRY

Mongolian Beef Stir Fry image

Slightly sweet and full of umami, our version of Mongolian beef is better than take out. Insider tip: baking soda helps to both tenderize and quickly brown the beef.

Yield Serves 4

Number Of Ingredients 14

1 1/2 pounds Certified Angus Beef ® flank steak, cut across the grain into thin strips
3 tablespoons soy sauce, divided
1 teaspoon baking soda
3/4 cup corn starch
3 tablespoons hoisin sauce
3 tablespoons brown sugar
2 teaspoons white vinegar
3 tablespoons water or broth
1 cup canola oil
1 tablespoon fresh ginger, minced
1 tablespoon fresh garlic, minced
6 green onions, cut into 2-inch segments
1 teaspoon red pepper flakes
3 cups cooked white rice

Steps:

  • Place sliced flank steak in bowl, combine with 1-tablespoon soy sauce and baking soda; marinate 30 minutes.
  • Place cornstarch in medium mixing bowl. Toss marinated beef with corn starch, coating thoroughly and dusting off any excess. Lay out in a single layer on a baking sheet; allow to sit 10 minutes.
  • In small mixing bowl combine 2-tablespoons soy sauce, hoisin sauce, brown sugar, white vinegar and water. Whisk until sugar is dissolved.
  • In large wok or 12" cast iron skillet, heat canola oil over medium-high heat. Working in batches, lightly fry beef strips until crisp (about 4 to 5 minutes, flipping half way through). Lay beef on a paper towel lined plate, avoiding any overlap.
  • Allow oil to cool enough to pour into a heat proof container, reserving 2-tablespoons in the pan for cooking. Put pan back over medium heat. Add garlic, ginger and green onions; stir fry until fragrant, 2 to 3 minutes. Stir in red pepper flakes and stir fry 30 seconds. Stir in prepared sauce to combine.
  • Bring sauce to a boil and reduce to a rapid simmer. Combine seared beef with sauce to coat while sauce reduces, about 2 minutes. Serve with prepared rice.

COLORFUL MONGOLIAN BEEF STIR FRY

Colorful Mongolian Beef Stir Fry image

I wanted to make JanRoundOz's Recipe #21444, but I also wanted to use up some cabbage. So I googled Mongolian and Cabbage to see whether the combination might be appropriate. I came across this Kylie Kwong recipe on a cooking blog. It looks yummy, and I love serving beef mince in new ways!

Provided by Gingernut

Categories     Meat

Time 20m

Yield 4 serving(s)

Number Of Ingredients 18

500 g lean ground beef
5 cups finely shredded Chinese cabbage
2 teaspoons sea salt
1/4 cup vegetable oil
2 tablespoons dry sherry
2 tablespoons hoisin sauce
1 tablespoon oyster sauce
1 teaspoon malt vinegar
1/2 teaspoon sesame oil
1 small carrot, peeled and finely sliced
1/2 medium red pepper, finely sliced
3/4 cup finely sliced green onion
2 tablespoons dry sherry
1 tablespoon light soy sauce
1 tablespoon cornstarch
1 tablespoon finely diced gingerroot
3 garlic cloves, finely diced
1/2 teaspoon sesame oil

Steps:

  • Combine ground beef with marinade ingredients in a large bowl, cover, and leave to marinate in the refrigerator for 30 minutes.
  • Meanwhile, place cabbage and salt in a large bowl, mixing together well with your hands to combine. Stand for 15 minutes then rinse under cold water and drain. Use your hands to squeeze out any excess liquid.
  • Heat 2 tablespoons of the oil in a hot wok until surface seems to shimmer slightly. Add half the marinated beef and stir-fry for 30 seconds, breaking up any lumps with a wok spoon. Remove from the wok with a slotted spoon and set aside.
  • Add remaining oil to hot wok, stir in remaining beef and cook, stirring for 30 seconds. Return reserved beef mixture to the wok with wine or sherry, hoisin sauce, oyster sauce, vinegar and sesame oil and stir-fry for 30 seconds.
  • Toss in reserved cabbage, carrot and pepper and stir-fry for a further minute. Stir through scallions, reserving just a little to garnish, and remove from heat.
  • Spoon beef into a serving bowl, sprinkle with remaining scallions and serve.

30 MINUTE MONGOLIAN STIR-FRY RECIPE

30 Minute Mongolian Stir-Fry Recipe image

There's no need to order out! This easy 30 minute Mongolian beef stir-fry is fresh, flavorful and ready to go in a hurry!

Provided by LifeMadeSimpleTeam

Categories     Main Course

Time 30m

Number Of Ingredients 16

1 1/2 lbs flank steak (cut across the grain into 1/4-inch strips)
3 tbsp cornstarch
2 tbsp vegetable oil
1 tbsp vegetable oil
3 cloves garlic (minced)
1/4 tsp ginger root (freshly grated (or ginger paste))
1/2 cup water
1/3 cup hoisin sauce
1/3 cup low-sodium soy sauce
2 tbsp brown sugar
2 tbsp rice wine vinegar
1/2 tsp crushed chili paste or chili flakes
1/2 cup water chestnuts (sliced)
1 cup bell peppers (chopped)
1 head broccoli (cut into florets and lightly steamed)
3 green onions (cut into 1-inch pieces)

Steps:

  • Toss the strips of beef in the corn starch and let them sit on the cutting board for 15 minutes.
  • Meanwhile, prepare the sauce. In a small saucepan set over medium heat add the vegetable oil.
  • When the oil is hot, lightly sauté the garlic for a minute, then add the ginger and cook for 30 seconds. Pour the remaining ingredients in the pan and simmer for 5 minutes or until the sauce begins to reduce or thicken. Keep warm while preparing the rest of the ingredients.
  • In a large skillet set over medium-high heat, add the 2 tablespoons of vegetable oil. When the oil is hot, quickly stir-fry the beef in 2-3 batches. You want it to be nice and crisp on the outsides, but not cooked throughout. Transfer cooked beef to a plate. If the pan has a lot of oil in it, remove all but 1 tablespoon of oil.
  • Add the vegetables and sauté for 2-3 minutes before returning the beef to the skillet. Add the sauce, stir, and allow everything to cook for an additional 2 minutes before removing from the heat. Serve immediately with a side of steamed rice or your favorite noodles.

MONGOLIAN BEEF

Mongolian Beef image

This is another American-born Chinese dish that is part of our wok vocabulary. I will always firmly believe that dishes, like Mongolian beef and California roll, that were born in the States are authentic dishes. The secret to tender meat in the wok is the marinade. You will see this in many of my recipes. Baking soda tenderizes the meat, cornstarch and water create a slurry that brings in the baking soda and oil pre-lubricates the meat and keeps us from using too much oil in the wok.

Time 2h25m

Yield 4 to 6 servings

Number Of Ingredients 20

1 1/2 pounds (750 grams) flank steak, trimmed
2 tablespoons (16 grams) cornstarch
2 teaspoons baking soda
1 teaspoon kosher salt
2 tablespoons (30 milliliters) water
2 tablespoons (30 milliliters) vegetable oil
3 tablespoons (45 milliliters) oyster sauce
3 tablespoons (45 milliliters) hoisin sauce
2 tablespoons (30 milliliters) soy sauce
1/2 tablespoon (4 grams) cornstarch

4 to 6 dried chiles

Massage all the ingredients into the meat. Cover and refrigerate for 2 to 12 hours.
