POTATO KUGEL CUPS
As far as we're concerned, these are the best potato kugels! JOY of KOSHER recommends them as cups for maximum crunch, but a casserole dish works well too.

- 1. Preheat oven to 425°F. Liberally oil six (4- to 6-ounce) glass dessert dishes or custard cups with 1 to 2 tablespoons of evoo each. Place custard cups on a baking pan. 2. Fill a large bowl with cold water and, as you peel potatoes, place them in cold water to prevent browning. 3. Place the pan of cups in 425°F oven to heat up the evoo (be very careful with glass, extreme temperature changes can cause it to shatter) . 4. Beat eggs in a small bowl. Add salt and pepper, mix well, and set aside. 5. Pour ¾ cup of evoo in a small saucepan and place over medium-low heat. 6. Cut potatoes lengthwise into halves or quarters so they fit into food processor feed tube. Process potatoes and onions using the blade that creates thin, shoestring-like strips. 7. Transfer potatoes and onions to a large bowl, add egg mixture and heated oil from stovetop, mix very well. Remove any large pieces of potatoes or onions that weren't processed properly. 8. Remove heated cups from the oven and spoon potato mixture evenly into hot, oiled cups. 9. Bake at 425°F for 1 hour. If the sides are still pale, cook for 20 minutes longer until the tops look crunchy and sides look golden and browned. Loosen edges with a knife, unmold and serve on a platter. Tips: To make this as a potato kugel pie, bake at 425°F in a 9-inch round glass baking dish for 1 hour 20 minutes, depending on desired crunchiness. - Preheat oven to 425°F. Liberally oil 6 ramekins and place on baking sheet. Place the pan of cups in the oven to heat. Place eggs, onion, salt, and pepper in blender. Blend and pour into a large bowl. Process potatoes in food processor so that they are just diced. Add egg mixture and 3/4 cup oil. Mix well until potatoes are finely diced. Place mixture evenly in heated ramekins. Bake at 425°F for 1 hour and 15 minutes or until cooked though and browned on top.

- Preheat oven to 350°F. Heat 1 Tbsp. of the oil in medium skillet on medium high-heat. Add onion; cook and stir until crisp-tender. Set aside.
- Add potatoes, in batches, to food processor container; cover. Pulse to finely chop. Place in colander; drain 10 min.
- Beat eggs lightly in large bowl with wire whisk. Add potatoes, matzo meal, onion, salt and pepper; mix well. Spoon into greased 13x9-inch baking dish. Brush top with remaining 1 Tbsp. oil.
- Bake 1 hour or until top is browned and edges are crisp. Cool 10 min. before cutting into 12 squares to serve.

POTATO KUGEL RECIPE

- Heat oven to 350°F. By hand: Chop onions very finely and coarsely grate potatoes. With a food processor: Blend onions in food processor with regular blade until finely ground. Switch to grating blade and grate potatoes - I like to do this one their sides, for the longest strands. Both methods: Place onions and potatoes in a large bowl. Sprinkle salt, pepper and starch evenly over potatoes and toss together with two forks or, as I do it, your very clean hands, evenly coating strands. Break eggs right on top and again use forks or your fingers to work them into the strands, evenly coating the mixture. Heat a 1/4 cup oil or fat in a 10-inch cast-iron skillet** over high heat until very hot. Pour potato-egg mixture into pan carefully (it's going to splatter) and spread evenly in pan. I like to twist and tousle the top strands a little for a pretty final texture on top. Drizzle with last tablespoon of oil. Bake in heated oven for 75 to 80 minutes, until browned on top and tender in the middle. If top browns too quickly, before center is baked, cover with foil for all but the last two minutes of baking time, though this has never been necessary in my oven. Serve in squares, either right from the skillet or unmolded onto a platter. Kugel reheats exceptionally well in a warm oven. It keeps in the fridge for up to 4 days, and much longer (months, even) in the freezer. I like to defrost it in the fridge before rewarming it in an oven. * Cornstarch works too. As does flour. Matzo meal is traditional. I like potato starch because it's the least distracting and lightest. I buy mine from Bob's Red Mill; usually in a section with other BRM products at just about any store these days (hooray). ** Without a cast-iron - Use a casserole baking dish. Just heat the oil first so it's hot when the potato mixture lands in it. (You can do this in the oven, but it will take a good 5 minutes to get very hot. Might as well do it in 60 seconds on the stove.)

- Heat oven to 425°F. Grease 1 large or 2 medium cookie sheets with shortening or cooking spray.
- In 1 1/2-quart saucepan, heat margarine, onion, carrot and water to boiling. Reduce heat. Cover; simmer 2 minutes.
- In medium bowl, mix pancake mix, matzo meal, parsley, nutmeg and pepper. Add hot vegetable mixture; stir until blended. In small bowl, beat egg whites with electric mixer on high speed until stiff peaks form. Fold egg whites into potato mixture until well blended.
- Spoon mixture onto cookie sheet, forming 12 mounds. Flatten each mound slightly to a 3-inch round, about 1/2 inch thick.
- Bake 20 to 25 minutes or until light golden brown. Cool 1 to 2 minutes; remove from cookie sheet. Serve immediately, bottom side up.

POTATO KUGEL
This is a recipe tweak off of a Passover Potato Pancake mix box. I think the carrots, which I usually HATE, add some sweetness to the Kugel. Easy and delicious.

- Preheat oven to 450 degrees Fahrenheit.
- Spray a 13x9 pan with cooking spray.
- In a large skillet saute chopped onions in 3 tablespoons vegetable oil until golden brown.
- Prepare potato pancake mix following directions on box.
- Add grated carrots, matzoh meal, and seasonings, then add sauted onions.
- Allow batter to sit for 3 minutes to thicken.
- Spread in prepared pan.
- Bake for 1 hour or until golden brown.
- Serve with applesauce or sour cream.

POTATO KUGEL
Steps:
- Into a bowl grate 3 large potatoes, peeled, and squeeze them in 2 batches in a tea towel to remove the moisture. In another bowl combine the potatoes with 1 onion and 1 small carrot, both grated, and toss the mixture with 1/2 cup flour, 2 eggs, lightly beaten, 3/4 teaspoon salt, and 1/4 teaspoon pepper. In an 8-inch pie tin render 3 tablespoons chicken fat, add the potato mixture, and smooth it with a spatula. Bake the kugel in a preheated moderately hot oven (375°F.) for 45 to 50 minutes, or until it is golden. Serve the kugel cut into wedges.
