CABBAGE JAMBALAYA
Good for a New Year's Day meal. Has the basic ingredients for luck for the coming year.

Steps:
- 1. In large pot, combine ground beef, smoked sausage, onion, celery, and garlic. Cook until beef is evenly browned.
- 2. Stir in cabbage, tomatoes, peas, water, and rice. Season with salt and pepper. Bring to a boil, then reduce heat to low. cover and cook for 35 to 40 minutes or until rice is done.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in large stock pot. Saute onion, green pepper, celery and garlic until tender, being careful not to burn the garlic. Add tomato paste and cook to brown slightly, stirring constantly. Stir in bay leaves, Creole seasoning blend and Worcestershire sauce. Pour into a large roasting pan. Squeeze tomatoes to break up into pieces, and add to mixture in pan. Stir in juice from tomatoes, chicken stock, ham, sausage, chicken, shrimp and rice. Mix well. Cover tightly with aluminum foil.
- Bake in preheated oven for 1 1/2 hours, stirring once halfway through baking time. Remove bay leaves before serving.

Steps:
- Brown ground meat.
- When almost done browning, add bell peppers and onions.
- Brown until bell pepper is limp.
- Add bag of cole slaw mix and mix completely.
- Add enough bloody Mary mix to cover entire mixture until it is about an inch above.
- Add uncooked rice and mix thoroughly.
- Stir occasionally until rice is fluffy and cooked.
CABBAGE JAMBALAYA
Got this recipe out of the latest issue of Louisiana Cookin' magazine, and made it this evening with a couple of minor variations. I added some leftover wine, and, mushrooms to (in the words of my hero - Justin Wilson) "raise da social status of da cabbage". Anyway, the family loved it. Try it, you'll like it too!!

Steps:
- Preheat the oven to 275 degrees.
- Saute' the ground meat in the olive oil.
- Season the meat well with Cajun seasonings, or salt, pepper and your favorite seasoning.
- Add chopped onion, celery and smoked sausage.
- Cook until onions and celery are clear, about 10 minutes Add garlic.
- While meat and veggies are cooking, chop the cabbage and combine with rice, chili powder and canned tomato blend in roaster.
- After meat mixture has cooked for 10 minutes, add it the to the cabbage mixture in the roaster.
- Mix well.
- Finally, saute' the mushrooms in a little oil for about a minute or two, then add the wine to the mushrooms and deglaze the pan.
- Add the mushrooms and wine to the roaster and mix well.
- Cover, and place in the oven to bake for 2 hours, stirring halfway through the cooking time.
- An excellent dish for pot luck suppers because it makes lots.
- Also reheats well in a microwave, but, doesn't freeze well.
- Enjoy!
CHEF JOHN'S SAUSAGE & SHRIMP JAMBALAYA
While true jambalaya is really more of a thicker rice stew than a soup, it's one of those dishes that more stock can be added to easily make it into a soup recipe. Serve garnished with green onion.

Steps:
- Place butter and sausage in a large stockpot over medium heat; cook and stir for 5-6 minutes until sausage begins to brown.
- Stir in paprika, cumin and cayenne; cook for 1 minute.
- Stir tomatoes, celery, green pepper, green onions, salt, and bay leaf into sausage mixture.
- Add brown rice and stir to combine. Stir in chicken stock and turn heat to low. Cover and cook for until rice is just tender, about 45 minutes.
- Stir in shrimp, replace lid and cook for 5 minutes. Season with salt and black pepper.

CABBAGE JAMBALAYA
If you like cabbage, you are going to love this! It's meaty, it's got flavor, but it's not too spicy. Feel free to add more heat if you like. Just put a tiny amount of cayenne in, but be sure to taste before you add any more. You can always add more, but you can't take it away.
