Best Broccoli Soup image

Here's a creamy, comforting broccoli soup. It's a delicious way to eat your vegetables. -Carolyn Weinberg, Custer, Montana

Number Of Ingredients 13

2 cups water
4 cups chopped fresh broccoli (about 1-1/2 pounds)
1 cup chopped celery
1 cup chopped carrots
1/2 cup chopped onion
6 tablespoons butter, cubed
6 tablespoons all-purpose flour
3 cups chicken broth
2 cups 2% milk
1 tablespoon minced fresh parsley
1 teaspoon onion salt
1/2 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • In a Dutch oven, bring water to boil. Add the broccoli, celery and carrots; boil 2-3 minutes or until crisp-tender. Drain; set vegetables aside. , In the same pot, saute onion in butter until tender. Stir in flour to form a smooth paste. Gradually stir in broth and milk until smooth. Bring to a boil; cook and stir for 1 minute or until thickened. , Stir in reserved vegetables and remaining ingredients. Reduce heat; cook, stirring occasionally, for 15 minutes or until vegetables are tender.

Here's what you need: olive oil, small onion, garlics, kosher salt, pepper, mashed potato, broccoli, low sodium vegetable broth, milk, ground nutmeg

Number Of Ingredients 10

1 tablespoon olive oil
1 small onion, diced
3 garlics, minced
1 teaspoon kosher salt
½ teaspoon pepper
2 cups mashed potato
2 small heads broccoli, including stems, chopped
2 ½ cups low sodium vegetable broth
2 ½ cups milk, of your choice
¼ teaspoon ground nutmeg

Steps:

  • Heat the olive oil in a large pot over medium heat. Once the oil begins to shimmer, add the onion and cook for 3-4 minutes, until semi-translucent. Add the garlic, salt, and pepper and cook for 2-3 minutes more, until the garlic is fragrant.
  • Add the mashed potatoes, broccoli, vegetable broth, and milk and bring to a boil. Cover and reduce the heat to low. Simmer for 20 minutes, or until the broccoli is tender.
  • Use an immersion blender to blend the soup until smooth.
  • Stir in the nutmeg, then ladle into bowls.
  • Enjoy!

This is one of my favorite soup recipes, and luckily, also one of the easiest! It tastes every bit as good if you substitute cauliflower for the broccoli, or if you use half broccoli and half cauliflower.

1 tablespoon olive oil
1 medium onion, chopped
1 garlic clove, chopped
2 stalks celery, chopped
2 potatoes, peeled and chopped
6 cups broccoli, chopped
1 teaspoon basil
1 teaspoon savory
1/2 teaspoon curry powder
1/2 teaspoon thyme
1/8 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups vegetable broth

Steps:

  • In a large soup pot, heat olive oil and sauté the onion and garlic, about 5 minutes.
  • Add celery, potatoes, broccoli, and spices and stir.
  • Add vegetable broth and bring to a boil. Simmer 20 minutes.
  • Purée and enjoy!

1 tablespoon olive oil
1 lb kielbasa or 1 lb smoked ham, in small chunks (I like to use Mr. Sausage from the Co-op's freezer section)
4 cloves garlic, chopped
1 (14 1/2 ounce) can muir glen diced tomatoes, including juice
1 quart chicken broth
salt
pepper
1 bunch broccoli, stems peeled and chopped fine,florets chopped (about 1 1/4 lbs)
1 teaspoon red pepper flakes, optional
1/4 cup chopped Italian parsley
1/2 cup grated parmesan cheese

Steps:

  • In a heavy soup pot, heat the olive oil over medium heat and add the meat chunks.
  • Sauté until lightly golden.
  • Add the garlic and cook for 1 minute.
  • Add the tomatoes and chicken broth, cover, and bring to a boil.
  • Add the broccoli pieces and return to the boil, then lower to simmer and cook, uncovered, 10 minutes or until the broccoli stems are tender.
  • Ladle the soup into warm bowls and add a big pinch of hot pepper flakes if you like.
  • Sprinkle parsley and Parmesan over each bowl and serve immediately.
