ORANGE ICE TEA

1 cup orange juice
1/2 cup sugar
2 cups water
7 black tea bags (recommended: Red Rose)
3 cups sparkling water, chilled
1/2 small orange, thinly sliced
Ice
Fresh mint or basil sprigs, to garnish

Steps:

  • Special equipment: a 60-ounce (7 1/2 cups) pitcher
  • For the syrup: In a small saucepan, bring the orange juice and sugar to a boil over medium-high heat. Simmer, stirring occasionally, until the sugar has dissolved, about 5 minutes. Remove from the heat and cool for 20 minutes.
  • For the tea: In a small saucepan, bring the water to a boil. Add the tea bags and remove the pan from the heat. Allow the tea to steep and cool to room temperature, about 20 minutes. Remove the tea bags and discard. Pour the tea and syrup into a pitcher and refrigerate until ready to serve.
  • To serve: Pour the sparkling water into the pitcher and add the orange slices. Pour the tea into 4 ice-filled glasses. Garnish with fresh mint, or basil, and serve.

I miss Bigelow's most popular tea so much, I had to make a replacement. Sure, friends do send it in "care" packages but never enough.

1 inch cinnamon stick, broken and crushed
2 teaspoons dried orange peel, broken into small pieces

Mom's favorite tea flavor was Bigelow's 'Constant Comment'. Mom told me numerous occasions that neither she, or Grandma or Great Grandmother flavored their tea with lemon slices rather orange slices. (Lemon slices with tea was only when one was ill!) With inspiration from this tea recipe Recipe #173172, I added my own little twist to the final product and used an extra special teapot to serve the tea (photo coming soon!). I'm sure it would taste equally good iced. Rest in Peace, Dear Mom. This is for you.

1 -2 constant comment tea bag (or equivalent amount of loose tea)
1 sprig fresh lavender
1/2 teaspoon rose water, to taste
half-and-half (rich or richer or richest) or heavy cream (rich or richer or richest)
sugar, to taste (your choice honey, raw sugar, brown sugar, etc.)
whole mint leaves or whole lemon verbena leaf
lavender flowers
orange slice (small, thinly cut slices)

Steps:

  • Boil water for tea. Place the tea bags (or loose tea in a tea strainer) and sprig of lavender in the teapot and pour in water.
  • Brew for about 5 minutes then stir in the rose water.
  • Pass the cream, the sugar bowl and a plate of orange slices around to flavor the tea.
  • If desired, float a few mint leaves, lemon verbena leaves or lavender blooms in each teacup.
  • Servings are estimated.

I love this recipe. My mother and my grandmother have always made this during hot weather ever since I was little. Now I make it and it's always a little taste of summer.

water
5 lipton tea bags (unflavored)
4 bigelow constant comment tea bags (flavored with rind of oranges and sweet spice)
1/2 cup sugar

Steps:

  • Open teabags and place them in a coffee pot with the strings dangling outside of the pot.
  • Place the coffee pot on the burner in your coffee maker. Pour enough water in the top of the coffee maker to fill up your coffee pot. (No filter is needed).
  • Turn the warmer on and let steep for 15 minutes.
  • After the 15 minutes are up turn the warmer off and let the pot sit on the burner for an additional 15 minutes.
  • Fill a gallon pitcher about 1/3 full of cold water so that the hot tea doesn't burn the bottom of it. Add your 1/2 cup of sugar to the water and stir with a long handled wooden spoon until sugar has dissolved.
  • When tea is done pour from the coffee pot into the gallon pitcher. Stir tea and add more water to the jug until it is full.
  • Keep tea chilled in the refrigerator for up to a week. Enjoy! :).
