BAKED BABY BACK RIBS
Even a barbeque purist cannot scoff at these foil-wrapped, baked and glazed baby back ribs. They're satisfyingly sweet, savory, smoky and flavorful. The meat falls off the bones! Baking in foil also reduces the amount of clean up. You'll be busy enjoying these ribs -- who has time for dishes?

- In a small bowl, combine the brown sugar, chipotle chile powder, salt, onion powder, garlic powder, seafood seasoning and black pepper.
- Place each slab of ribs on a piece of aluminum foil large enough to fold over and seal, then place on a baking sheet. Do not seal the ribs in the foil yet (see Cook's Note). Generously sprinkle the dry rub on both sides of the ribs. Place in the refrigerator, meat-side down and uncovered, for at least 1 hour. Preheat the oven to 300 degrees F.
- In a small bowl, combine the apple cider, apple cider vinegar, maple syrup, Worcestershire and minced garlic. Pour half the liquid over each slab and tightly seal each in the aluminum foil, crimping the edges to make a packet.
- Transfer the foil packets and baking sheet to the oven and bake until the meat is tender and starts to pull away from the bones, about 2 hours.
- Remove the sheet pan from the oven. Carefully open the aluminum packets and pour the braising liquid into a small saucepan. Bring the liquid to a simmer over medium heat until it becomes a thick and syrupy glaze, about 4 minutes.
- While the braising liquid reduces, line a baking sheet with foil and gently transfer the ribs to it. Position a rack on the top level of the oven and preheat the broiler.
- Using a pastry brush, generously brush the ribs with about half the glaze. Place the ribs under the broiler for about 1 minute. Brush with the remaining glaze and return to the broiled until charred in spots, about 1 minute more. Slice each rack between the bones into 2-rib portions and serve.
BARBECUED BABY BEEF RIBS (OVEN VERSION)
Oven temperature: 450 degrees F and 400 degrees F This basting sauce is good also for chicken or turkey legs or for ground meat patties.

- 1. Preheat oven to 450 degrees F.
- 2. Wipe ribs with wet towel or with damp paper towels.
- 3. Place ribs in a single layer in a shallow roasting pan.
- 4. Roast ribs at 450 degrees F for about 20 minutes, turning once.
- 5. Prepare basting sauce by mixing all ingredients together.
- 6. Remove ribs from oven.
- 7. Brush ribs with sauce on both sides.
- 8. Return to oven.
- 9. Bake at 450 degrees F for about 20 minutes longer or until ribs are tender.
- 10. Baste with remaining sauce from time to time while baking.
- 11. If ribs start getting too dark, cover with aluminum foil and reduce heat to 400 degrees F for the last 10 minutes of baking time.
OVEN-BARBECUED BABY BACK RIBS

- Preheat oven to 325 degrees. In a bowl combine all ingredients except ribs to make a sauce; season with salt and pepper. On a rack set in a roasting pan season ribs with salt and pepper and brush with a thick layer of sauce. Roast ribs, basting every 30 minutes, until tender and falling off the bone, about 1 1/2 hours. Slice into individual ribs before serving with potato salad.
- In a bowl, stir together mayonnaise with cilantro, garlic, salt and 7 turns black pepper. Add potatoes and onions and toss to combine thoroughly; cover and refrigerate up to 24 hours before serving.
PLAIN BABY BACK RIBS FROM THE OVEN
I tried to find a recipe that was not too complicated, This was the result. I started with a very basic recipe from "Cooking with Chef Doug", and added some extra spices to it. It was delicious. Since neither of us likes BBQ sauce, this recipe is ideal for us.

- Preheat the oven to 300 degrees.
- Spray a baking dish with a non-stick spray.
- Remove the thin membrane from the bone side of the ribs. Using a paper towel to hold the membrane will make this easier.
- Mix dry ingredients together in a small bowl or dish.
- Rub the dry ingredients into each side of the slab(s) of ribs.
- Place ribs, bone side down, into baking dish. Cover with aluminum foil, cut two or three slits into the foil.
- Bake for one hour to one hour fifteen minutes, remove the foil. Cook for an additional hour, or until the meat is tender enough to pull apart easily.
- If desired, cover with favorite BBQ sauce.

CONVECTION OVEN BABY BACK RIBS

- Step 1: Season Your Ribs Peel the tough sheet of membrane from the back or concave side of the ribs, and discard it. Rub the ribs with your favorite dry spice rub or wet seasoning paste, then cover them with plastic film wrap and refrigerate them. The spices need at least four hours to begin flavoring the meat, though up to 24 hours is better. Step 2: Prep Your Dish Heat the oven to 325 degrees Fahrenheit and turn on the convection feature. Line a sheet pan with aluminum foil or parchment paper to speed cleanup and then arrange the racks of ribs evenly on the sheet. Step 3: Bake and Baste Slide the sheet of ribs into your oven and bake them for 2 to 2 1/2 hours, or until the bones move freely when you grasp one and rotate it. Baste the ribs periodically during the second hour of cooking or brush on a glaze when they're fully cooked and increase the oven temperature to 500 degrees Fahrenheit for five to eight minutes to caramelize the sauce. - 1. You can mix all of the spices together in a small bowl, and then sprinkle liberally on ribs, or do each one separately. I find it is easier to mix spices together, and then sprinkle equally among the ribs.
- 2. Wash ribs thourgly, removing all visible fat. Take a sharp knife with a sharp point on end, and remove the thin shiny membrane on back side,by placing the tip at the end of the bone, then slip knife under thin skin, grasp with fingers and pull to remove.
- 3. Then season liberally on both sides.I usually cut the ribs in half at this point and arrange them in a single layer on a long shallow pan. Cover and let marinate for a few hours or over night.
- 4. Then spray a long jelly roll size pan with non stick cooking spray. Add the ribs and add 1/4 cup of water, just enough to create steam. Cover tightly to seal with aluminum foil. Place in preheated 300 degree F. oven and bake for 2 hours. After 2 hours remove foil and brush with your favorite Bar B Q sauce and let them bake an additional 30 to 45 minutes. Remove from oven and cut into serving size pieces.
- 5. Note: When using the spices, use the ones you prefer, there may be one that I use that you do not care for, you can disreguard it, and use your personal preferance instead. But note that It may alter the flaver some what.
- 6. ANOTHER NOTE OF IMPORTANCE: If you are using SPARERIBS, ask the butcher to remove the brisket from the rib. The brisket is the part that is lean and only has the grissle in it at the top of the spare rib. Usually when it is cut into smaller pieces, it is referred to as the rib tips. THE BACK RIBS DOES NOT HAVE A BRISKET ATTACHED. Also 3 1/2 and down refers to the weight of the rib, it usually means that the ribs weigh 3 1/2 pounds or less. These are the more tender & better cuts of the ribs,more than that means that they are tougher and takes longer to cook.

- Preheat oven to 300F. In a small bowl mix all of rub seasonings together. Lay 2 sheets of foil down on a sheet pan. Rinse your ribs with cold water and pat *completely* dry with paper towel (having your ribs be slightly wet will cause steaming which you do not want).
- Lay ribs on foil and use all of your rub on both sides -- make sure seasoning is spread evenly. Use another sheet of foil for over top and tightly seal shut to prevent ribs from steaming/to bake properly. Bake for 2 1/2 hours.
- Once time is up remove ribs from oven, take the top sheet of foil off. Turn oven broil on high and baste ribs with BBQ sauce, place back in oven for 2 minutes. Keep a close eye on them to prevent burning. Repeat process until BBQ sauce is used up and ribs are crispy on the outside. Serve with your favorite barbecue sides and ENJOY!
