- In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well. Shape into two loaves; place each loaf in a disposable 8x4-in. loaf pan. Cover with foil. , Prepare grill for indirect heat. Grill, covered, over medium heat for 30 minutes or until the meat is no longer pink and a thermometer reads 160°. , Meanwhile, in a small saucepan, combine sauce ingredients. Cook and stir over low heat until sugar is dissolved. Spoon over meat loaves before serving.

HOT OR COLD MEATLOAF
Yum! I love meatloaf and have been looking for the "best" meatloaf recipe. BBCGoodFood Magazine, 09/2006, is where I found this wonderful recipe originally, have tweaked it a bit.

Steps:
- Preheat oven to 370ºF.
- Put bread in processor and process to make crumbs, then tip into a bowl with the pork & chicken.
- Put the onion, garlic and herbs into the food processor and process until finely chopped.
- Add to the bowl with the parmesan and egg.
- Finely chop, 2 slices of the prosciutto and add to the mix with some salt and pepper.
- Mix well, but don't overwork, with your hands or a fork.
- Use the rest of the prosciutto to line a loaf pan.
- Spoon in an 8x4" meatloaf pan; mix and press down well.
- Flip the overhanging prosciutto over the top, then put the loaf pan into a roasting pan.
- Pour hot water from the kettle into the roasting pan to come halfway up the loaf pan and bake for 1 hr until loaf shrinks from the sides of pan.
- Cool in the pan for 10 mins, then drain off any excess liquid and turn out onto a board.
- Cut into thick slices and serve warm or cold with salad.

EASY MEATLOAF RECIPE

- Heat the oven to 190C/fan 170C/gas 5. Put bread in processor and blitz to make crumbs, then tip into a bowl with the pork.
- Tip the onion, garlic and herbs into the food processor and process until finely chopped. Add to the bowl with the parmesan and egg. Finely chop 2 slices of the prosciutto and add to the mix with some salt and pepper. Mix well with a fork or your hands.

- Cool in the tin for 10 mins, then drain off any excess liquid and turn out onto a board. Cut into thick slices and serve warm or cold with salad.

KOFTA MEATLOAF
This is a variation on meatloaf which is easy and delicious. I modified the recipe from Simply In Season. It's great hot, but also as part of a pita the next day. You can sub ground lamb for the ground beef if you want.

MOLLY'S CHICAGO DOG MEATLOAF WITH MUSTARD GLAZE
Steps:
- For the meatloaf: Preheat the oven to 350 degrees F. Grease a 9-by-5-inch loaf pan with cooking spray.
- Set a medium skillet over medium heat and add the olive oil. Add the onions and saute until starting to brown, about 10 minutes. Allow to cool slightly.
- Meanwhile, combine the milk, poppy seeds and hot dog buns in a large bowl and toss gently to combine; allow the milk to soak into the buns. Then, add the relish, Worcestershire sauce, kosher salt, celery salt, peppers, eggs, 2 tablespoons mustard and a few turns of black pepper to the bowl with the hot dog buns and stir to combine. Add the cooled onions. Add the ground beef and mix with your hands to combine.
- Transfer half of the mixture to the prepared loaf pan, place the hot dogs on top on a diagonal so they run down the center and then cover them up with the remaining half of the beef mixture, smoothing it out on top.
- In a small bowl, combine the brown sugar and remaining 4 tablespoons mustard and brush it over the top of the meatloaf. Bake until the internal temperature is 155 degrees F, about 50 minutes. Let sit for 10 minutes.
- For the topping: Top with the tomato wedges, pickle slices, a sprinkle of poppy seeds, a sprinkle of celery salt and sport peppers before serving.
TERIYAKI MEATLOAF

- Preheat the oven to 400 degrees F. Grease two 2-quart rectangular baking dishes with some sesame oil.
- In a small bowl, add the panko and milk and sprinkle with salt and pepper so all the panko has a chance at absorbing. In another bowl, add the meat, eggs, soy sauce, sesame seeds, mirin, fish sauce, 1 cup teriyaki sauce and 1 tablespoon sesame oil. Add the panko mixture and gently fold everything together. This is where a lot of folks mess up. DO NOT OVERMIX. Just combine gently. Split the meat mixture between the 2 prepared baking dishes, spreading evenly from edge to edge. Bake for 45 minutes.
- Top the meatloaves with the furikake and set aside to cool slightly. Meanwhile, add the butter to a small saucepan and heat until browned, about 2 minutes. Stir in the remaining 2 tablespoons teriyaki. Slice the meatloaves and top each slice with the teriyaki butter sauce.
