WHITE CHICKEN ENCHILADAS



White Chicken Enchiladas image

Using a rotisserie chicken helps make these White Chicken Enchiladas easy to make. Most of my friends say these are better than any they have had out, and I agree! Make these as spicy or as tame as you prefer.

Sauce
3 TBS butter
3 TBS flour
3 1/4 cups chicken stock
1 4 oz can green chilies
1/2 cup salsa verde (I like spicy for this)
1 1/2 cups sour cream
1/2 teaspoon paprika
2 cups shredded Monterrey Jack or Pepper Jack cheese
Salt & pepper
Filling
1 large Vidalia onion (chopped small)
1-2 Jalapenos (chopped small (see notes))
4 oz can green chilies
1/2 cup salsa verde
4 cups shredded chicken
3/4 cup chicken stock
1 teaspoon Paprika
Salt & pepper
3/4 cup heavy cream
Assembly
2 cups shredded Monterey Jack or Pepperjack cheese
Tortillas (I use 7-8 large flour tortillas)

Steps:

  • In a medium pot, melt butter, add flour and whisk until combined. Slowly pour in chicken stock, whisking while you do.
  • Add a can (4oz) of chilies, salsa verde, sour cream, paprika and cheese and whisk until smooth.
  • Taste and add pepper and if necessary add some salt.
  • Set aside.
  • Heat 2 TBS grapeseed or olive oil in a medium pot, add onions and jalapeno and saute for 2 minutes.
  • Add chicken, a small 4 oz can of green chilies, salsa verde, stock, and paprika. Stir to combine.
  • Add cream, salt, and pepper and cayenne if you choose).
  • Heat until mixture begins to bubble, set aside.
  • Add a small amount of sauce to the bottom of your baking dish. (preheat oven to 375 degrees)
  • Fill each tortilla with a couple of big spoonfuls of the mixture, sprinkle shredded cheese over top and roll up.Place in baking dish and repeat until all mixture is used up.
  • Spoon sauce over top the enchiladas and bake for 20 minutes.
  • Remove from oven, sprinkle with cheese and return to the oven until cheese is melted.
  • Sprinkle with parsley, cilantro and/or scallions and serve.

10 to 12 corn tortillas
2 tablespoons cumin
2 tablespoons chili powder, plus more for sprinkling
2 tablespoons Cajun spice
1 teaspoon salt
1 teaspoon freshly ground black pepper
2 boneless, skinless chicken breasts
1/4 cup vegetable oil
1 large onion, diced
Three 15-ounce cans green enchilada sauce (or use red if preferred!)
3 cups grated Cheddar-Jack cheese, plus more if needed
Sour cream, for serving
Diced tomatoes, for serving
Chopped fresh cilantro, for serving
Lime wedges, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • One at a time, hold the tortillas over the stovetop burner (heated to medium heat) to brown slightly, about 30 seconds per side. Set the warmed tortillas aside.
  • In a bowl, mix together the cumin, chili powder, Cajun spice, salt and pepper. Sprinkle both sides of the chicken breasts with the spice mix.
  • Heat the oil in a skillet over medium heat and cook the chicken on both sides until done in the middle and the juices run clear, 4 to 5 minutes per side. Set aside on a plate to cool, then shred finely with a fork.
  • Throw the onions into the same skillet, stir them around and cook until deep golden brown and caramelized, 4 to 5 minutes; set them aside on a plate. Pour the enchilada sauce into the skillet and reduce the heat to low, allowing it to warm through.
  • To assemble the enchiladas: Pour 2 cups of the sauce into a 9-by-13-inch casserole dish and leave the rest in the skillet. Dip a tortilla into the sauce in the skillet, then lay it on a baking sheet or plate. Sprinkle some cheese down the middle, followed by some chicken and finally, some of the caramelized onions. Roll it up tightly, then place it seam-side down in the casserole dish. Repeat with the rest of the tortillas. Pour the rest of the sauce over the enchiladas, then sprinkle on the rest of the cheese. Give it a final sprinkling of chili powder.
  • Bake until hot and bubbly, 30 minutes. Let it sit for 15 to 20 minutes before serving.
  • Serve the enchiladas topped with a dollop of sour cream, a sprinkle of diced tomatoes, a sprinkling of cilantro and a wedge of lime.

2½ cup shredded chicken (cooked)
2 cup chicken broth
3 Tbsp canola oil
12 small corn tortilla shells
1 large onion (diced)
3 4-oz can green chillies (diced or substitute with green peppers for less heat)
1 jalapeno (seeded and diced or substitute with green peppers for less heat)
1 tsp paprika
½ cup heavy cream
2 Tbsp butter
2 Tbsp flour
1 cup sour cream
2½ cup Monterey Jack cheese (shredded)
salt (to taste)
pepper (to taste)
Picante sauce (optional)
Cilantro (chopped)

Steps:

  • Cook your chicken. If your meat is not cooked, rinse it and then place it into a large pot. Cover with water and boil for about 30 minutes or until the internal temperature of the meat reaches 165°F. Remove and allow to cool.
  • In a skillet, heat canola oil and add onions and peppers, over medium heat, sauté for 1 minute. Add cooked chicken, paprika, and half of your diced chilies (or green peppers) if desired. Stir until combined and continue cooking over medium heat. Add chicken broth and stir until combined. Add heavy cream. Stir and allow to boil once all ingredients are added to your filling. Remove from heat and set aside.
  • To make sauce, in a deep skillet or pan, melt butter over medium-low heat. Sprinkle flour into the butter and whisk vigorously. Boil for 1 minute, while whisking. Add 1 ½ cup chicken broth and whisk together. Cook for 1 to 2 minutes while whisking. The mixture will begin to thicken. If desired, you can add the remaining chilies to the sauce at this point. Turn your heat as low as it will go, then add sour cream and whisk in. Add 1 ½ cups shredded cheese, and whisk until melted. Add paprika, salt, and pepper to taste. Remove sauce from heat.
  • Now that all your components are made, it is time to assemble your enchiladas. Begin by preparing another skillet over medium heat with a drizzle of canola oil. Now there are two ways you can proceed from here. The first way is to place your tortilla shells into the canola oil for about 20 seconds on each side, and then fill them. The other way is to fill them first and then place them into the canola oil. This will help to make the shells crispy and to seal them. One note, if you choose to fill the shells first, you may want to place your tortilla shells into the microwave, covered with a wet paper towel for 30 seconds first. This will allow your shells to become soft and not rip as easily.
  • Once your shells are full, place the rolled enchiladas into a greased 9x13 baking pan. Once all your shells have been filled, pour cheese sauce over the top. Sprinkle additional cheese on top of the cheese sauce-covered tortillas. Bake at 350°F for 30 minutes, until the top of the cheese has just started to turn golden brown. Remove from oven and sprinkle cilantro on top. If desired serve with Picante sauce. Enjoy!

SIMPLE PERFECT ENCHILADAS

2 tablespoons canola oil
2 tablespoons all-purpose flour
One 28-ounce can enchilada or Mexican red sauce
2 cups chicken broth
1/2 teaspoon salt
1/2 teaspoon black pepper
1 pound ground beef
1 medium onion, finely chopped
1/2 teaspoon salt
Canola oil, for frying
10 to 14 corn tortillas
Two 4-ounce cans diced green chilies
1 cup chopped green onions
1/2 cup chopped black olives
3 cups grated sharp Cheddar cheese
Cilantro, for garnish

Steps:

  • In a saucepan over medium-low heat, combine the canola oil and flour. Whisk together and allow to bubble for 1 minute. Pour in the red sauce, chicken broth, salt and pepper. Bring to a boil. Reduce the heat and simmer while you prepare the other ingredients.
  • While the sauce is simmering, brown the ground beef with the onions in a large skillet over medium-high heat. Drain the fat, add the salt and stir to combine. Turn off the heat and set aside.
  • In a small skillet over medium heat, heat some canola oil. Lightly fry the tortillas just until soft. Do not crisp. Drain on a paper towel-lined plate. Repeat until all the tortillas have been fried.
  • Preheat the oven to 350 degrees F.
  • Spread 1/2 cup of the sauce in the bottom of a 9- by 13-inch baking dish. Next, one at a time, dip each tortilla into the sauce. Set the sauce-soaked tortilla on a plate. Place on some of the meat mixture, chilies, green onions and black olives. Top with a generous portion of grated Cheddar. Roll up the tortilla to contain the filling inside.
  • Place the tortilla seam side down in the baking dish. Repeat with the rest of the tortillas and pour the remaining sauce over the top. End with a generous sprinkling of cheese and any other bits of chiles, green onions or olives you have left over from the filling.
  • Bake the enchiladas for 20 minutes, or until bubbly. Sprinkle chopped cilantro over the top and serve.

Kosher salt and freshly ground black pepper
2 tablespoons olive oil
2 green bell peppers
2 red bell peppers
2 yellow bell peppers
2 or 3 hot chiles, such as serrranos, jalapenos or the like
1 large onion, diced
1 jalapeno, seeded and finely diced
1 tablespoon vegetable oil
3 cups low-sodium chicken broth, plus more as needed
1 1/2 cups heavy cream
1 teaspoon paprika
4 tablespoons (1/2 stick) butter
1/4 cup all-purpose flour
3 1/2 cups grated Monterey jack cheese
1 cup sour cream, plus more for serving
16 small corn or flour tortillas
1 cup store-bought salsa
1/4 cup fresh cilantro leaves

Steps:

  • Preheat the oven to 400 degrees F.
  • Sprinkle the chicken breasts with salt and pepper and drizzle with the olive oil. Put on a baking sheet and bake until just cooked through, about 15 minutes. Let cool slightly, then shred the meat with 2 forks.
  • Roast the bell peppers and chiles directly on a gas burner (or directly under the broiler) until the skin is mostly black. Throw the peppers and chiles into a plastic storage bag and seal it. Let them steam inside the bag for 30 minutes or so. Core and seed, then scrape off the black skin. Chop and set aside.
  • In a large skillet over medium heat, saute the chopped onions and jalapeno in the vegetable oil until the onions are translucent, 2 to 3 minutes. Throw in the shredded chicken, then stir in 1 cup of the chicken broth and 1 cup of the heavy cream. Add 1/2 teaspoon of the paprika and some salt and pepper, then add half of the chopped roasted peppers and chiles. Stir the mixture around and let it cook for a couple of minutes, then set it aside.
  • In a separate skillet over medium-high heat, melt the butter. Sprinkle in the flour and whisk it together to combine. Cook, whisking constantly, for 1 minute. Then pour in the remaining 2 cups chicken broth, stirring constantly. Cook, stirring, until the mixture is smooth, 1 to 2 minutes. Then add the remaining 1/2 cup heavy cream, the remaining 1/2 teaspoon paprika and 1 1/2 cups of the grated cheese. Finally, stir in the sour cream and the rest of the chopped roasted peppers and chiles. If the sauce needs a little thinning, splash in as much broth as you need. Give the sauce a taste and add salt if it needs it (with all the cheese, it shouldn't need much).
  • Preheat the oven to 350 degrees F.
  • Wrap the tortillas in paper towels and microwave until very soft and pliable, about a minute.
  • Place a small amount of the chicken mixture and about a tablespoon of the grated cheese down the center of each tortilla. Fold over the edges and arrange them seam-side down in a 9-by-13-inch baking dish. Pour the sauce over the top. Sprinkle the top with the remaining 1 cup grated cheese and bake until bubbly, 20 to 25 minutes.
  • Serve with a dollop of sour cream and salsa on top and a sprinkle of cilantro leaves.
