TASSO SHRIMP AND CREAM ON PASTA

3/4 stick butter
1 tablespoon Cajun meat seasoning
2 1/2 cups julienne tasso
3 cups heavy cream
4 dozen cleaned shrimp
1 1/2 cups sliced green onion

Steps:

  • Melt most of the butter in skillet then add tasso and seasoning. Cook at medium heat for about 10 minutes, scraping the pan every so often to remove the fond. Add cream and increase heat to reduce it by 1/21/2 being careful to not let the cream boil over on the stove. When cream starts to thicken add shrimp and cook 1 to 2 minutes until shrimp are just cooked. Add the green onions and cook for a count of five then add rest of butter and toss over your favorite pasta shape.

This recipe is one of my family's all-time favorites! You may substitute crawfish for the shrimp and it turns out just as delicious. The tasso gives the sauce its wonderful smoky flavor. You can substitute smoked ham for the tasso but the smoky flavor may not be as intense.

½ (16 ounce) package uncooked rotini pasta
1 tablespoon olive oil
1 cup tasso ham, cut into matchsticks
2 tablespoons minced garlic
¾ cup chopped onion
½ cup chopped green bell pepper
¼ cup chopped green onions
¼ cup chopped celery
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh thyme
1 tablespoon Cajun seasoning blend (such as Tony Chachere's®)
¼ teaspoon hot sauce (such as Tabasco®)
2 cups heavy cream
½ cup grated Parmesan cheese
1 pound peeled crawfish tails
¼ cup chopped fresh parsley

Steps:

  • Bring a large pot of lightly-salted water to a rolling boil. Stir the rotini into the boiling water. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  • Meanwhile, heat the olive oil in a large saucepan over medium heat. Stir in the tasso, and cook until golden brown, about 5 minutes. Stir in the garlic, onion, green pepper, green onion, and celery. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the basil, thyme, Cajun seasoning, and hot sauce; cook 1 minute.
  • Pour in the cream, and bring to a simmer over medium-high heat. Reduce heat to medium-low and stir in the Parmesan cheese. Cook and stir until the sauce begins to thicken slightly, about 3 minutes. Add the shrimp and crawfish tails, and cook until hot, then toss with the rotini pasta. Sprinkle with parsley to serve.

Ralph & Kacoo's was a local, Louisiana restaurant that has changed hands several times. This is one of their original recipes that I'd saved from their newsletter from 1995 and was always one of my favorite dishes containing a variety of seafood (shrimp, oysters, crawfish) and a spicy Cajun ham called "Tasso". NOTE REGARDING TASSO: [TAH-soh; TA-soh] Much to the disappointment of many, this Cajun specialty is generally hard to find outside Louisiana. Tasso is a lean chunk of cured pork (usually shoulder) or beef that's been richly seasoned with ingredients such as red pepper, garlic, filé powder and any of several other herbs or spices, depending on the manufacturer. It's then smoked for about (again, depending on the cook) 2 days. The result is a firm, smoky and flavorfully tangy meat that is principally used for seasoning. Outside of Cajun country, tasso is available in some specialty gourmet shops and by mail order. If you can't find Tasso in your area, use a strong smoked ham. Or just move down here to Louisiana.

6 ounces butter, unsalted
2 teaspoons garlic, chopped
16 ounces tasso
16 ounces shrimp
8 ounces crawfish tails
32 ounces whipping cream
1 teaspoon salt
2 cups oysters, liquid reserved
1/4 cup green onion, chopped
16 ounces cooked pasta noodles (bowtie, rotelle, etc)

Steps:

  • In a heavy skillet, melt butter on medium heat until about one-half melted.
  • Add garlic and saute, stirring constantly.
  • Add tasso. Brown over high heat until tasso starts to stick to skillet.
  • Turn heat down to a medium heat and add shrimp and crawfish tails.
  • Simmer until shrimp start to curl, stirring constantly.
  • Add whipping cream, stirring until the mixture reaches a boil. Boil for two minutes, stirring constantly.
  • Add cooked pasta and salt.
  • Cook until sauce thickens, stirring often.
  • Add oysters and juice.
  • Simmer and stir occasionally until the oysters begin to curl.
  • Sprinkle green onions over the sauce.

Quick and easy pasta at its best. By the time your pasta is cooked, the sauce will be done! Can't get any better! If you can't find Tasso ham, you can use prosciutto, pancetta, bacon or Virginia ham--though none of those has the deep salty flavor of Tasso. As for the artichokes, use fresh or frozen or the ones in brine in tins -- not the kind that are marinated in oil.

1 lb shrimp, peeled and deveined
2 ounces tasso, diced
3 ounces artichoke hearts, chopped
1 ounce red pepper, diced
1 ounce mushroom, sliced
2 ounces onions, diced
1 ounce garlic, minced
1 tablespoon scallion, chopped
1 tablespoon parsley, chopped
2 lemons, juice of
1 ounce flour
4 ounces chicken stock
1 teaspoon thyme
1/4 teaspoon cayenne pepper
2 ounces unsalted butter, cubed
1 lb angel hair pasta, cooked and warm
4 ounces white wine
Old Bay Seasoning (or your favorite seafood seasoning)

Steps:

  • In a hot pan, sauté the shrimp, Tasso ham, red pepper, mushrooms, onion, garlic, and scallions for 2 minutes.
  • Deglaze the pan with white wine and simmer.
  • Add parsley, lemon juice, chicken stock, thyme, cayenne pepper and seasoning; reduce to a simmer.
  • Whisk in the whole butter and serve over warm pasta immediately.

This is one of my favorite dishes because it is so good and very easy. The flavor of the Tasso makes this dish exceptional. If you have dinner guests they will be very impressed. If I'm making this dish and I know my dinner guests aren't big fans of thyme and basil I'll substitute Emeril's Essence for all of the dry seasonings. I usually will add 2 Tbsp of Emeril's Essence and adjust accordingly.

16 ounces bow tie pasta
3/4 cup butter
4 garlic cloves, minced
1 cup diced tasso (if Tasso is not available use heavily smoked ham)
1 cup sliced green onion
2 cups sliced mushrooms
1 medium bell pepper, minced
1 small onion, minced
3 tablespoons flour
2 -2 1/2 cups heavy whipping cream
1 teaspoon thyme
1 teaspoon basil
1/4 teaspoon ground cayenne pepper
1/4 teaspoon ground black pepper
1/4 teaspoon white pepper
1 teaspoon salt, to taste
2 lbs peeled and deveined shrimp
1/2 cup grated parmesan cheese

Steps:

  • Saute garlic in butter until tender over low to medium heat.
  • Add mushrooms, green onions, bell pepper and onion and saute until soft over medium heat.
  • Add Tasso and saute 5 minutes.
  • Stir in flour and saute 5 minutes.
  • Gradually stir in 2 cups of whipping cream and seasonings.
  • Bring to a simmer stirring constantly for 1 minute or until smooth and thickened.
  • Add Shrimp and additional 1/2 cup whipping cream if too thick.
  • Cook for 5 minutes.
  • Add cheese and cook until cheese is melted.
  • Pour over cooked pasta tossing gently.
