Karbanátky (singular: karbanátek) are delicious fried meat patties that are seasoned with marjoram and caraway seeds. Translated into English, karbanátek means "hamburger" or "meatball".

10 oz. beef (, minced)
10 oz. pork (, minced)
½ cup cold water
1 egg (, slightly beaten)
1 large onion (, finely chopped)
5 cloves garlic (, finely chopped)
1 bunch parsley (, finely chopped)
2 tablespoons flour
½ teaspoon marjoram
½ teaspoon ground caraway
2 teaspoon lemon juice
8 oz. fine breadcrumbs
8 tablespoons vegetable oil ((for frying))
Salt
Freshly ground black pepper
Chive (finely chopped)

Steps:

  • Mix the minced meats and the water. Knead well and set aside for 30 minutes.
  • Add the egg, onion, garlic, parsley, flour, marjoram, caraway, lemon juice, and 1 tablespoon of breadcrumbs to the minced meat.
  • Season with salt, pepper and knead for 10 minutes. Set aside for another 15 minutes.
  • Shape balls about 2 inches (5cm) in diameter.
  • Flatten them slightly and roll them in breadcrumbs on all sides.
  • Heat the oil in a large skillet and fry the karbanátky over medium heat for about 5 to 7 minutes on each side.
  • Serve the karbanátky immediately, accompanied by mashed potatoes, chopped scallions and fresh vegetables such as green salad and tomato (or others). Sprinkle everything with fresh chives.

Yowza! These Swedish Meatballs are fabulous! Very easy to make with such simple ingredients, and they're just delicious. This recipe has been in my family for years - friends and family wait all year to eat them.

1 pound ground beef
½ pound ground pork
½ cup chopped onion
¾ cup bread crumbs
1 egg
½ cup milk
1 tablespoon dried parsley
1 tablespoon Worcestershire sauce
2 teaspoons salt
1 teaspoon pepper
¼ cup vegetable oil
¼ cup all-purpose flour
1 teaspoon paprika
1 tablespoon salt
1 teaspoon pepper
2 cups boiling water
¾ cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a large bowl, combine ground beef, ground pork, chopped onion, bread crumbs, egg, and milk. Season with parsley, Worcestershire sauce, 2 teaspoons salt, and 1 teaspoon pepper. Mix well with your hands. Shape into walnut-size balls, and place on baking dish.
  • Bake for 30 minutes in preheated oven. Turn frequently so they brown evenly on all sides.
  • To make the sauce: In a saucepan, combine oil, flour, paprika, 1 tablespoon salt, and 1 teaspoon pepper. Cook over medium heat until sizzling. Stir in hot water and sour cream until smooth and heated through.
  • When meatballs have cooked 30 minutes, pour sauce over the top, and return to the oven for 20 minutes, stirring occasionally.

Steps:

  • Preheat oven to 400F. Cover a large baking sheet with parchment paper or aluminum foil. In a large bowl, mix the garlic, slat, caraway seeds, paprika, pepper, parsley, mustard, and egg with a fork until combined. With your hands, crumble the pork into the bowl and knead until all of the ingredients are incorporated. Moisten your hands with water and shake to remove excess. Measure a level tablespoon of pork and roll into a ball between your palms. Line up the meatballs on the prepared baking sheet, about 1/2 inch a part. Bake for 20-25 minutes, until golden brown and cooked through.

2 onions, coarsely chopped
6 stalks celery, coarsely chopped
2 ½ pounds ground veal
2 ½ pounds ground pork
1 (10.75 ounce) can condensed cream of mushroom soup
40 saltine crackers, crushed
¾ cup dry bread crumbs
½ (12 fluid ounce) can evaporated milk
3 eggs
4 teaspoons salt, or to taste
1 teaspoon dried marjoram
1 teaspoon dried onion flakes
¾ teaspoon ground black pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Mix the onions and celery together in the bottom of a large roasting pan.
  • In a large bowl, thoroughly mix together the veal and pork with your hands; lightly mix in cream of mushroom soup, cracker crumbs, bread crumbs, evaporated milk, eggs, salt, marjoram, onion flakes, and pepper until well combined. Form the mixture into meat balls, dipping your hands in water between making the balls. Place the meat balls gently into the roasting pan on top of the onions and celery; cover the pan with foil.
  • Bake in the preheated oven for 1 hour and remove foil. Carefully separate the meat balls where they have stuck together and return the pan to the oven until the meat balls are browned, turning every 15 minutes, 30 to 45 additional minutes.

3 -4 lbs under blade roast
4 cups water
2 stalks celery
2 whole carrots
1/2 cup fresh dill
16 ounces sour cream
3 tablespoons flour
2 tablespoons sugar
2 tablespoons white vinegar

Steps:

  • In a large pot.
  • Add your water-beef roast-celery-carrots.
  • Bring the pot to a boil.
  • Then let it simmer for about 1 1/2 hours.
  • This is just like you were making soup.
  • If you want to skip this part. Just add instead of water 4-cans of beef broth. This is just the old fashion way of making beef broth.
  • After 1 1/2 hours of cooking take the beef out of the pot.
  • You should have about 2 1/2 cups of beef broth left in the pot.
  • put in the dill and bring the pot to a boil.
  • Then add the sour cream-sugar-white vinegar and mix very well.
  • Then add the flour mix very well so there are no lumps.
  • Then put the beef back in the pot and cook for about 1/2 hour. If the gravy is a little thin add little flour till it is thick the way you like it. After it is done taste the gravy you may like to add a little salt. You can put this over wide noodles-potatoes or I like bread dumplings. Tell me how you like it.

2 1/4 lbs lean ground beef
1 large white onion
4 tablespoons salt
3 tablespoons pepper
4 tablespoons dried parsley flakes
2 eggs
1 cup uncooked Minute brown rice
4 tablespoons dried oregano leaves
2 tablespoons olive oil

Steps:

  • Defrost 2.25 lbs of lean ground beef.
  • add beef, salt, pepper, dried Oregano leaves, dried Parsley leaves and eggs into a bowl.
  • Mix well.
  • Cook 2 servings minute brown rice (about 1 cup uncooked.).
  • Peel onion and grade with cheese grader on medium grade.
  • Mix onion with beef, herbs and rice.
  • Preheat oven to 350*f.
  • Cover cookie sheet with foil, and spray with olive oil (i used the spray kind, but you can brush it on lightly if desired).
  • Roll each meatball into golf ball size and place on cookie sheet (i could fit about 25-30 meatballs per sheet).
  • Spray olive oil again over meatballs (you can lightly brush if desired).
  • Salt moderately over meatballs.
  • Place in oven for 20 minutes.
  • Remove from oven, serve immediately.
  • serve about 10 meatballs per serving.
