3 cups cubed cooked chicken breast
2 cups chopped tart apples
3/4 cup chopped celery
1/4 cup sliced green onions
1/4 cup chopped pecans
1/2 cup fat-free reduced-sugar vanilla yogurt
1/4 cup reduced-fat mayonnaise
1/2 teaspoon curry powder
1/4 teaspoon salt
1 medium cantaloupe
6 lettuce leaves

Steps:

  • In a large bowl, combine the chicken, apples, celery, onions and pecans. Combine the yogurt, mayonnaise, curry and salt; add to chicken mixture and toss to coat. Cover and refrigerate for 2 hours or until chilled., Meanwhile, place cantaloupe on it's side; cut into six rings. Discard seeds and ends. With a sharp knife, cut off rind. To serve, place cantaloupe rings on lettuce-lined plates. Top with chicken salad.

2 tablespoons water
1 tablespoon honey
1 tablespoon fresh ginger, minced
1 tablespoon balsamic vinegar
1 cup broccoli floret (small)
1 cup snow peas
1 carrot, julienned
1 1/2 cups cantaloupe (cubes)
1 1/2 cups strawberries (halved)
8 red radishes, julienned
2 cups fresh spinach

Steps:

  • To make dressing: In a blender, process the cantaloupe, water, honey, ginger and vinegar until smooth.
  • To make the salad: Steam the broccoli, snow peas and carrots for about 4 minutes, or until crisp-tender.
  • Transfer to a large plate and spread out in a thin layer.
  • Place in the freezer for 5 minutes, or until cold; do not let the vegetables freeze.
  • Transfer to a large bowl.
  • Add the cantaloupe, strawberries and radishes; toss well.
  • Divide the spinach among individual plates.
  • Top with the salad.
  • Drizzle with the dressing.

1/2 cup extra-virgin olive oil
1/4 cup red wine vinegar
1 -2 yellow chili pepper (original recipe calls for 2 jalapeno peppers)
1/2 tablespoon fresh oregano or 2 teaspoons dried oregano
salt, to taste
2 ears fresh corn (we roasted the corn first)
2 large tomatoes, cut into chunks (try an heirloom variety!)
1 small cantaloupe, halved, seeded and scooped with a melon baller (Tuscan melon tested in this recipe)
1 bunch radish, thinly shaved on a mandolin (or sliced as thinly as possible)
8 ounces feta cheese (we are able to buy freshly made cotija from a local source) or 8 ounces Cotija cheese (we are able to buy freshly made cotija from a local source)

Steps:

  • To make the dressing, in a blender combine the olive oil, vinegar, jalapeño (with or without the seeds) and oregano. Puree until mostly smooth. Season with salt, then set aside.
  • To assemble the salad, start by standing each ear of corn on a cutting board on its wide end. Use a serrated knife to saw down the length of the cobs to remove the kernels. Discard the cobs.
  • In a large bowl, gently toss together the corn kernels, tomatoes, cantaloupe, radishes, cucumber and red onion.
  • Drizzle the dressing over the salad, then toss again to coat evenly. Crumble the feta cheese over the salad.

5 ears corn, shucked
2 teaspoons olive oil
3 slices bacon, chopped
½ pound Yukon Gold potatoes, cut into 1/2-inch cubes
1 red bell pepper, cut into cubes
salt to taste
1 small red onion, thinly sliced
1 tablespoon cider vinegar
½ teaspoon red pepper flakes, or more to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the corn and cook until slightly soft but still crisp, about 5 minutes. Cut corn kernels from the cobs; discard cobs.
  • Heat olive oil in a large skillet over medium heat. Cook and stir bacon in hot oil until browned and crispy, 5 to 10 minutes. Transfer bacon to a paper towel-lined plate to drain, reserving drippings in the skillet.
  • Cook potatoes, stirring occasionally, in the same skillet over medium heat until potatoes are golden brown, about 5 minutes. Add red bell pepper and salt; cook and stir until peppers are tender, about 5 minutes more.
  • Stir corn kernels into potato mixture and cook until corn is heated through, about 5 minutes.
