- In a large bowl, combine the chicken, apples, celery, onions and pecans. Combine the yogurt, mayonnaise, curry and salt; add to chicken mixture and toss to coat. Cover and refrigerate for 2 hours or until chilled., Meanwhile, place cantaloupe on it's side; cut into six rings. Discard seeds and ends. With a sharp knife, cut off rind. To serve, place cantaloupe rings on lettuce-lined plates. Top with chicken salad.

- To make dressing: In a blender, process the cantaloupe, water, honey, ginger and vinegar until smooth.
- To make the salad: Steam the broccoli, snow peas and carrots for about 4 minutes, or until crisp-tender.
- Transfer to a large plate and spread out in a thin layer.
- Place in the freezer for 5 minutes, or until cold; do not let the vegetables freeze.
- Transfer to a large bowl.
- Add the cantaloupe, strawberries and radishes; toss well.
- Divide the spinach among individual plates.
- Top with the salad.
- Drizzle with the dressing.

- To make the dressing, in a blender combine the olive oil, vinegar, jalapeño (with or without the seeds) and oregano. Puree until mostly smooth. Season with salt, then set aside.
- To assemble the salad, start by standing each ear of corn on a cutting board on its wide end. Use a serrated knife to saw down the length of the cobs to remove the kernels. Discard the cobs.
- In a large bowl, gently toss together the corn kernels, tomatoes, cantaloupe, radishes, cucumber and red onion.
- Drizzle the dressing over the salad, then toss again to coat evenly. Crumble the feta cheese over the salad.

- Bring a large pot of lightly salted water to a boil. Add the corn and cook until slightly soft but still crisp, about 5 minutes. Cut corn kernels from the cobs; discard cobs.
- Heat olive oil in a large skillet over medium heat. Cook and stir bacon in hot oil until browned and crispy, 5 to 10 minutes. Transfer bacon to a paper towel-lined plate to drain, reserving drippings in the skillet.
- Cook potatoes, stirring occasionally, in the same skillet over medium heat until potatoes are golden brown, about 5 minutes. Add red bell pepper and salt; cook and stir until peppers are tender, about 5 minutes more.
- Stir corn kernels into potato mixture and cook until corn is heated through, about 5 minutes.
- Pour corn-potato mixture into a large bowl. Add bacon, red onion, cider vinegar, and red pepper flakes; toss to combine.
