SAUTéED CORN WITH SPINACH



Sautéed Corn with Spinach image

Number Of Ingredients 7

1 tablespoon olive oil
2 cloves garlic, chopped
1 shallot, chopped
3 cups frozen corn kernels
½ lb spinach
1 tablespoon shrimp paste (or salt to taste)
1 teaspoon freshly ground pepper

Steps:

  • In a skillet, heat oil over medium heat. Add the garlic and sauté until lightly browned. Add the chopped shallot and cook for a few seconds. Add the corn and spinach and sauté for 3 minutes.
  • Add the shrimp paste (or salt to taste) and pepper. Sauté for couple more minutes.
  • Serve with steamed rice.
  • Enjoy!

4 ears corn, kernels scraped from cob
2 large cloves garlic, finely chopped

1/2 cup heavy cream

2 bundles fresh farm spinach, about 1/2 pound trimmed weight, chopped

Steps:

  • Heat a large skillet over medium heat and add the butter. When the butter is hot, stir in the corn and the starchy liquid scraped from the cobs. Cook for 5 minutes, then stir in the garlic and season with salt and pepper, to taste. Cook for 2 to 3 minutes more, then add the cream and nutmeg, stirring occasionally, until very creamy, about 15 minutes. Add the spinach and stir until wilted. Season with salt and pepper, if needed. Transfer to a serving bowl and serve.

Steps:

  • Wash spinach and chop coarsely.
  • Melt butter in large skillet, add garlic and shallot and cook over low heat until softened but not browned.
  • Add corn, cover skillet, raise heat to medium and cook 3 minutes.
  • Add spinach, basil (or other seasonings) and salt, cover skillet and cook until spinach is wilted (2-3 minutes.)

2 1/2 teaspoons sesame seeds
3 tablespoons unsalted butter
1 clove garlic, minced
6 ears fresh corn, shucked and kernels cut off the cobs (about 4 cups)
1/2 teaspoon kosher salt
Freshly ground black pepper
2 tablespoons fresh basil chiffonade

Steps:

  • Lightly toast the sesame seeds in a large skillet over medium heat, taking care not to burn them, 2 to 3 minutes. Transfer to a small bowl and reserve.
  • Return the skillet to medium heat and add the butter and garlic. Saute the garlic as the butter melts, about 2 minutes. Add the corn, salt and pepper to taste. Cook until the corn is just tender and warmed through, about 5 minutes. Turn off the heat and add the sesame seeds and half the basil and mix until combined. Transfer to a serving bowl and garnish with the remaining basil.

1-1/4 cups chopped cooked spinach (well drained)
1/4 cup butter

3/4 cup evaporated milk
3 eggs, lightly beaten
1 tablespoon chopped pimientos
2 teaspoons dried minced onion

Steps:

  • Combine corn and spinach; set aside. In a saucepan over low heat, melt butter. Add flour and stir to make a smooth paste. Stir in salt. Gradually add milk; cook, stirring constantly, until thickened. Cool. Combine eggs, pimientos and onion; fold into cooled butter mixture. This recipe is an adaptation of Argentine Spinach Pie from the More with Less Cookbook. The original recipe is made with swiss cheese and no corn, but I love corn and spinach together, so I added it in here. I also prefer the cheddar-jack combination for the cheese.

1 1/2 cups frozen spinach, thawed
1/2 cup corn kernel
2 tablespoons olive oil
3 -4 tablespoons chopped onions
1/4 teaspoon nutmeg
1 teaspoon oregano
1/2 teaspoon salt
pepper
2 beaten eggs
1 cup grated cheddar cheese or 1 cup monterey jack and cheddar cheese blend

Steps:

  • Line 9-inch pie plate with crust, prick with a fork.
  • Saute onion in oil till tender.

1 cup crumbled goat cheese
1/4 cup dried cranberries
DRESSING:
3 tablespoons cider vinegar
2 tablespoons orange marmalade
2 tablespoons mayonnaise
1/2 teaspoon salt

1/4 teaspoon Worcestershire sauce

  • In a small heavy skillet, cook walnuts over medium heat until toasted, about 3 minutes. Sprinkle with sugar and vinegar. Cook and stir for 2-4 minutes or until sugar is melted.
