CHICKEN CORN DOGS

2 skinless, boneless chicken breasts (about 8 ounces each), halved crosswise, then cut lengthwise into 3/4-inch-wide strips
3/4 teaspoon smoked paprika
1/4 teaspoon garlic powder
Kosher salt
1 tablespoon vegetable oil, plus more for frying
1 1/2 cups yellow cornmeal
1 cup all-purpose flour, plus more for coating
2 teaspoons mustard powder
1 1/2 teaspoons baking powder
1 1/4 cups whole milk
2 large eggs
1 tablespoon honey
Yellow mustard, for serving

Steps:

  • Toss the chicken strips with 1/2 teaspoon smoked paprika, the garlic powder and a big pinch of salt. Thread each strip onto an 8-inch skewer, making sure it is secure.
  • Fill a medium Dutch oven or other heavy pot with 2 inches of vegetable oil. Heat over medium heat until a deep-fry thermometer registers 365 degrees F.
  • Meanwhile, combine the cornmeal, flour, mustard powder, baking powder, 1 teaspoon salt and the remaining 1/4 teaspoon smoked paprika in a large bowl. Whisk the milk, eggs, honey and vegetable oil in a small bowl. Whisk the milk mixture into the flour mixture until smooth. Pour some into a tall glass for dipping.
  • Spoon some flour onto a plate. Working in batches, hold the chicken by the skewers and lightly coat in the flour, tapping off any excess. Dip the skewers into the batter to coat, letting the excess drip off. (If the batter becomes too thick, stir in a bit of water.) Add the coated chicken to the hot oil, skewers and all, and fry, turning with tongs, until browned and cooked through, 4 to 5 minutes. Remove the chicken to paper towels to drain; let the oil return to 365 degrees F before frying the next batch.
  • Lightly sprinkle the chicken with salt while hot. Serve with mustard.

Steps:

  • Blend water, chiles and onions in blender until smooth; strain. Discard solids; set strained liquid aside.
  • Heat dressing in 6-qt. Dutch oven or large deep skillet on medium heat. Add chicken; cook in batches 5 min. or until browned in all sides, turning occasionally. Add corn, zucchini and epazote leaves. Pour strained chile liquid over ingredients in Dutch oven. Bring to boil; cover. Simmer on medium-low 20 min. or until chicken is done (165ºF) and vegetables are tender.
  • Serve topped with sour cream.

1 tsp avocado oil
1 large garlic clove (crushed)
1/4 tsp salt
Ground black pepper (to taste)
1.5 lbs 3 medium zucchini, cut into half moon shapes
2 cups corn (frozen or fresh)
1 tsp avocado oil

Steps:

  • Chicken: Preheat cast iron skillet on medium heat and swirl oil to coat. Add garlic and cook for 10 seconds. Then add chicken, sprinkle with salt and pepper to taste. Cook for 8-10 minutes uncovered, stirring occasionally. Transfer to a bowl and set aside.
  • Zucchini and Corn: Cook the same way as chicken but for 5 minutes.
  • Add chicken back to skillet and stir. Remove from heat, sprinkle with herbs and more garlic if you wish, stir.
  • Serve hot or cold (I know!) with any salad or brown rice, quinoa, potatoes etc.

2 tablespoons olive oil
1 teaspoon dried thyme
1 1/2 teaspoons salt, divided
1/2 teaspoon black pepper, divided
4 zucchini or 4 yellow squash, quartered, crosswise
2 onions, quartered
4 ears corn, quartered, crosswise
8 green onions
4 chicken drumsticks or 4 chicken thighs

Steps:

  • Preheat oven to 425°F.
  • In a jar, combine oil, thyme, 3/4 teaspoon salt and 1/4 teaspoon pepper.
  • Shake well and set aside.
  • In a large shallow roasting pan, combine squash and onions with half of the seasoned oil; toss well.
  • In a bowl, coat corn and green onions with remaining oil mixture.
  • On the rack in the broiler place chicken.
  • Sprinkle with remaining 3/4 teaspoon salt and 1/4 teaspoon pepper.
  • Plan pan with vegetables on lower rack in oven and the broiler pan with chicken on the top rack.
  • Roast for 25- 30 minutes, turning both occasionally.
  • Add corn and green onions to vegetable pan.
  • Continue roasting until chicken is cooked and vegetables are tender (10-15 minutes), turning occasionally.

EASY FUN-SIZE CORN DOGS

Not only are these corn dogs easy and fun, but because we're doing them in the oven and not deep frying them, they are way, way less messy to make. 1 large egg, beaten
4 tablespoons vegetable oil, divided
2 tablespoons white sugar
1 cup milk
1 teaspoon white vinegar
1 cup cornmeal
1 cup all-purpose flour
1 ¾ teaspoons baking powder
¼ teaspoon baking soda
¾ teaspoon kosher salt
1 pinch cayenne pepper

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Cut each hot dog into 6 pieces.
  • Pour egg, 2 tablespoons vegetable oil, sugar, and milk into a mixing bowl; whisk until combined. Add white vinegar, cornmeal, flour, baking powder, baking soda, kosher salt, and cayenne. Whisk briskly until ingredients are combined and batter is relatively thin and overmixed. Set batter aside for 10 minutes before using.
  • Meanwhile, brush two 12-cup mini muffin tins with 2 tablespoons vegetable oil. Fill the prepared muffin cups to about 1/8 inch from the top. Gently push a piece of hot dog into the center of each one.

1 large egg
½ cup breadcrumbs
¼ cup sour cream
8 to 10 popsicle sticks
4 hot dogs, cut in half
3 tablespoons vegetable oil

Steps:

  • To make the sauce, mix the mayo, mustard, chili paste, relish, and ketchup in a small bowl. Set aside in the fridge until ready to use.
  • Preheat oven to 350 degrees F.
  • Using a fork, poke a few holes into each Idaho® Russet Potato. Rub each potato with olive oil and salt and place on a baking sheet. Bake the potatoes for about 1 hour, until tender.
  • Peel the potatoes and run them through a potato ricer into a large bowl. Add the scallions, Parmesan, egg, and breadcrumbs. Stir well to combine. Add the sour cream, starting with about half, and stir to combine. Add more as needed until the mixture is smooth, but not too wet. It should be stiffer than mashed potatoes.
  • One by one, stick a popsicle stick into a hot dog starting at the cut end and putting it about 3/4 of the way through the dog. Take about 1/4 cup of the potato mixture in your hand and press it flat into your palm. Wrap it around the hot dog, adding more as needed. Press to tightly seal. Repeat until you run out of the potato mixture or the hot dogs.
  • Heat about 3 tablespoons vegetable oil in a heavy bottom pot to 375 degrees F. Working in batches, fry the potato dogs, flipping a few times to evenly brown on all sides. Remove from oil to a drying rack or paper towel and season with a pinch of salt.
  • Serve the potato dogs with the sauce on the side, or drizzled on top if desired.
