Bacon-Corn Stuffed Peppers image

Filled with corn, salsa, green onions, mozzarella cheese and bacon, these grilled pepper halves are sure to liven up your next cookout. They have a wonderful taste and give a fun twist to the usual corn on the cob. -Mitzi Sentiff, Annapolis, Maryland

2 cups frozen corn, thawed
1/3 cup salsa
6 green onions, chopped
1 medium green pepper, halved and seeded
1 medium sweet red pepper, halved and seeded
1/4 cup shredded part-skim mozzarella cheese
2 bacon strips, cooked and crumbled
Additional salsa, optional

Steps:

  • In a large bowl, combine the corn, salsa and onions. Spoon into pepper halves. Place each stuffed pepper half on a piece of heavy-duty foil (about 18x12 in.). Fold foil around peppers and seal tightly., Grill, covered, over medium heat until peppers are crisp-tender, 25-30 minutes. Carefully open packets to allow steam to escape. Sprinkle with cheese and bacon. Return to the grill until cheese is melted, 3-5 minutes. Serve with additional salsa if desired.

3 1/2 cups fat-free chicken broth, divided
3 1/2 cups red potatoes, peeled and cubed (1/2 inch)
1 large bay leaf
3/4 teaspoon dried thyme leaves
1/4 teaspoon dry mustard
2 1/2 cups 1% low-fat milk
2 1/2 cups frozen whole kernel corn
6 ounces Canadian bacon, julienned
salt, to taste
white pepper, to taste

Steps:

  • Saute onion and garlic in oil in large saucepan until tender, about 5 minute Add broth, potatoes, bay leaf, thyme, and mustard; heat to boiling.
  • Reduce heat and simmer, covered until potaoes are tender, about 10 minutes.
  • Add milk and corn; heat to boiling. Reduce heat and simmer, covered, 5 minute or until corn is cooked.
  • Discard bay leaf.
  • Process half the vegetables and liquid in food processor or blender until smooth; return to saucepan.
  • Stir in Canandian bacon and simmer, covered, 5 minute.
  • Season to taste with salt and white pepper.

3 cups red potatoes, peeled and cubed
2 cups corn
1 large onion, chopped
1 garlic clove, minced
6 ounces Canadian bacon, julienned
1 large bay leaf
3/4 teaspoon thyme
1/4 teaspoon dry mustard
2 cups whole milk, divided
2 tablespoons cornstarch
salt and pepper

Steps:

  • Combine all ingredients except milk, cornstarch, salt and pepper in slow cooker; cover and cook on high for 4-5 hours, adding 1 1/2 cups milk during last 30 minutes.
  • Discard bay leaf. Process half the soup in food processor or blender until smooth; return to slow cooker.
  • Cover and cook on high for 10 mintues; stir in combined 1/2 cup milk and cornstarch, stirring 2-3 mintues. Season to taste with salt and pepper.

1/2 cup small-diced Canadian bacon (3 oz.)
1 cup small-diced red onion (from about a 6-oz. onion)
1 cup small-diced red potato (from about a 5-oz. potato)
1/2 cup small-diced green bell pepper (from three-quarters of a 3-oz. pepper)
1 tsp. kosher salt; more to taste
2 slightly heaping cups fresh corn kernels (from about 4 medium ears)
2 tsp. minced garlic (2 medium cloves)
2 Tbs. chopped fresh flat-leaf parsley
2 Tbs. thinly sliced fresh chives
1/2 tsp. green Tabasco; more to taste
Freshly ground black pepper
One-half lemon

Steps:

  • Melt 1 Tbs. of the butter and 1 Tbs. of the olive oil in a 10-inch straight-sided sauté pan or Dutch oven over medium heat. Add the Canadian bacon and cook, stirring occasionally, until the bacon is brown around the edges, about 4 min. Transfer to a plate lined with paper towels. Add the remaining 1 Tbs. butter and 1 Tbs. olive oil to the pan. Add the onion, potato, bell pepper, and 1/2 tsp. of the salt. Reduce the heat to medium low, cover, and cook, stirring frequently, until the onions and peppers are well softened and the potatoes are barely tender and starting to brown, 5 to 7 min. Uncover, increase the heat to medium, and add the corn, garlic, and the remaining 1/2 tsp. salt. Sauté, stirring frequently and scraping the bottom of the pan with a wooden spoon, until the corn is tender but still slightly toothy to the bite, 3 to 5 min. (The corn should be glistening, brighter in color, and somewhat shrunken in size, and the bottom of the pan will be slightly brown.) Remove the pan from the heat, add the parsley, chives, Tabasco, a few generous grinds of pepper, and a small squeeze of lemon. Stir, let sit 2 min., and stir again, scraping up the brown bits from the bottom of the pan. (Moisture released from the vegetables as they sit will loosen the bits.) Corn is my three boy's favorite vegetables, so we eat a lot of it. This recipe has been a favorite for years. My husband, Bob, and the boys really enjoy it.

6 bacon strips
1/2 cup chopped onion
2 tablespoons all-purpose flour
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup sour cream
3-1/2 cups fresh or frozen whole kernel corn
1 tablespoon chopped fresh parsley
1 tablespoon minced chives

Steps:

  • In a large skillet, cook bacon until crisp. Drain, reserving 2 tablespoon of drippings. Crumble bacon; set aside. , Saute onion in drippings until tender. Add flour, garlic, salt and pepper. Cook and stir until bubbly; cook and stir 1 minute more. Remove from heat and stir in sour cream until smooth. Add corn, parsley and half of the bacon; mix well. , Pour into a 1-qt. baking dish. Sprinkle with remaining bacon. Bake, uncovered, at 350° for 20-25 minutes or until heated through. Sprinkle with chives.
