4 8 oz (225 gram) boneless ribeye steaks, 1-inch thick ((or scotch fillet, sirloin, rump, strip or porterhouse steaks))
Salt and pepper, (to season)
2 tablespoons olive oil
1 onion (yellow, white or brown), (sliced)
2 large garlic cloves, (minced)
7 ounces (200 grams) brown mushrooms (sliced)
3 tablespoons unsalted butter
3 tablespoons plain flour
2 1/2 cups beef broth (or stock)
2 teaspoons Worcestershire sauce
Salt and pepper (to taste)

Steps:

  • Pat steaks dry with paper towel. Season with salt and pepper to your taste.
  • Heat a lightly oiled skillet or pan (or barbecue) on high heat until just beginning to smoke. Cook steaks for 3 minutes each side or until cooked to your liking. Rest for 5 minutes.
  • Heat remaining oil in the skillet. Add onion and cook for 2-3 minutes until onions are translucent, then add the garlic and cook for a further 30 seconds, or until fragrant.
  • Add the sliced mushrooms into the skillet and cook for 3 minutes until golden and beginning to soften.
  • Reduce heat to medium and melt butter in the skillet. Add flour and cook while stirring for 1 minute, allowing the flour to brown slightly.
  • Slowly and gradually add in the beef broth (or stock), while stirring. Allow to simmer for 4-5 minutes, or until thickened. Stir in the Worcestershire sauce and season with salt and pepper to taste.
  • Add the steaks back into the gravy in the pan along with the juices on the plate OR serve steaks with the onion mushroom gravy on the side. Garnish with chopped thyme, parsley or rosemary if desired.

1 cup boiling water
1/2 cup sun-dried tomatoes (not packed in oil), julienned
2 teaspoons butter
2 cups whole fresh mushrooms, quartered
1 shallot, chopped
2 garlic cloves, minced
1 beef top sirloin steak (1-1/2 pounds), cut into 4 pieces
1/2 teaspoon pepper
1/4 teaspoon salt
1 tablespoon olive oil
1/2 cup dry red wine or reduced-sodium beef broth
1/4 teaspoon dried thyme
1 to 2 tablespoons all-purpose flour
1-1/4 cups reduced-sodium beef broth

Steps:

  • In a small bowl, pour boiling water over sun-dried tomatoes; let stand 5 minutes. Drain., In a large skillet coated with cooking spray, heat butter over medium-high heat; saute mushrooms and shallots until tender, 3-4 minutes. Add garlic; cook and stir 1 minute. Remove from pan., Sprinkle steaks with pepper and salt. In same skillet, heat oil over medium heat; cook steaks until desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°), 5-7 minutes per side. Remove from pan; keep warm. , Add wine and thyme to skillet; bring to a boil, stirring to loosen browned bits from pan. Cook, uncovered, until liquid is reduced by half. 2 ½ pounds sirloin tips, uncut
½ (750 milliliter) bottle Burgundy wine
2 (14.5 ounce) cans beef broth
4 portobello mushroom caps, sliced
¼ cup butter
1 clove garlic, chopped
½ teaspoon dried thyme
¼ teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste
1 shallot, finely chopped
2 tablespoons all-purpose flour

Steps:

  • Preheat an outdoor grill for medium-high heat. Melt butter in a large skillet over medium-high heat. Sautee the shallot until transparent, then add mushrooms, and cook, covered, until darkened, about 5 minutes. Remove mushrooms from pan, and set aside. Deglaze the pan with one can of beef broth, and burgundy wine. Increase heat, and bring to a boil. Allow the mixture to boil until it has reduced by 1/3.
  • Grill the sirloin tips to desired doneness. Season with salt and pepper if desired. Remove to a plate, and set aside.
  • When the sauce is reduced, stir in the other can of beef broth, and garlic. Return to a boil, and continue to cook for another 5 to 10 minutes. Sauce will be thin like au jus. Whisk in flour, and cook until the sauce is the desired thickness. Taste and adjust seasoning if necessary. Stir in the mushrooms. Serve tips with mushroom sauce spooned over.

1 cup sliced fresh mushrooms

  • Heat oil and 2 T butter in large skillet.

One of my favorite meals to eat, this is sooo easy and can be done in about 30 minutes. Goes great with mashed potatoes and rolls of some kind are a MUST to sop up the extra mushroom sauce.

4 minute steaks (if you don't see this cut of meat, ask the butcher)
oil, for frying
salt
self-rising flour, for dredging
2 (10 ounce) cans cream of mushroom soup
1 (10 ounce) can milk
1 (4 ounce) can mushrooms or 1/2 lb fresh mushrooms, sliced
1 tablespoon butter

Steps:

  • Slice mushrooms (if using fresh) and saute in butter until tender.
  • If using a can, drain well.
  • Set aside.
  • In a large skillet, heat oil.
  • Salt minute steaks and dredge in flour.
  • Fry until breading is brown.
  • **Make sure when frying you leave the meat long enough for the breading to fry until it sets, as it will fall off if not fried long enough.
  • This is what makes it GOOOOD!
  • When the meat is fried, place on paper towels to drain excess oil.
  • Place in a 2 quart casserole dish and keep warm.
  • Leave 2 tablespoons of oil in the skillet and remove the rest.
  • Add cream of mushroom soup, milk, and mushrooms, stirring constantly.
  • Let soup simmer on med-low heat until throughly heated.
  • Pour over warm meat and serve.

1 tablespoon butter
2 tablespoons olive oil
2 large red onions, diced
2 cups (about 6 to 8 ounces) small button mushrooms, cleaned trimmed and sliced
Salt and freshly ground black pepper
3 pounds top round steak, cut into 6 portions, seasoned with salt and pepper and tenderized with a meat mallet
4 (12-ounce) bottles ale, enough to immerse the steaks (recommended: Samuel Adams Boston Lager
4 tablespoons (1/2 stick) butter, cut into chunks

Steps:

  • To make the mushroom confit, melt butter in 1 tablespoon of the oil over medium-high heat in a large saute pan. Add onion and saute until they begin to turn translucent. Add mushrooms and cook until they give up their juices. Lower heat and cook until the mixture caramelizes, then season with salt and pepper to taste and remove to a bowl. Cover and set aside.
  • In the same pan, heat the other tablespoon of oil over medium-high heat and sear the steaks about 2 minutes each side. Reduce the heat to low and add the ale. Maintain the ale at a simmer, just below boiling and cook uncovered until fork tender, about 45 minutes to 1 hour. Remove the steak to a carving board to rest. Increase the heat under the skillet to allow the ale to reduce by two-thirds. Season with salt and pepper, remove from heat and whisk in butter just before service.
  • Slice steak into thin slices and arrange on a platter. Spoon mushroom onion confit over and spoon sauce around.

1/2 teaspoon smoked paprika
1 large egg
1 clove garlic, minced

1 pound ground beef (80/20)
2 tablespoons breadcrumbs
1 tablespoon vegetable oil
10 ounces baby bella mushrooms, sliced
2 sprigs thyme, leaves picked and stems discarded
3 tablespoons unsalted butter
1 small onion, thinly sliced
1 clove garlic, sliced
3 tablespoons all-purpose flour
2 cups low-sodium beef broth, hot
2 teaspoons Worcestershire sauce
2 tablespoons fresh parsley, roughly chopped

Steps:

  • For the hamburger steaks: Whisk together the mustard, smoked paprika, egg, garlic, 1 teaspoon salt and 1/4 teaspoon pepper in a medium mixing bowl. Mix in the ground beef and breadcrumbs by hand, then form into 4 oval patties, about 1/2 inch thick.
  • Set a large nonstick pan over medium-high heat and add the oil. Add the patties and brown on both sides, about 3 minutes per side. Transfer the patties to a plate; set aside.
  • For the onion and mushroom gravy: Turn the heat down to medium and add the mushrooms and thyme. Cook until the mushrooms release their liquid and are browned, about 8 minutes. (The mushrooms might seem dry at first, but will eventually release liquid and add moisture to the pan.) Transfer the mushrooms to a plate; set aside.
  • Melt the butter in the pan, add the onions and garlic and cook until translucent and lightly golden, about 10 minutes. Sprinkle in the flour and cook, stirring, until the butter and liquid are absorbed, about 1 minute. Pour the broth and Worcestershire into the pan and stir until the flour is dissolved.
  • Turn the heat to high and bring to a boil. Stir the mushrooms back into the pan and nestle in the beef patties. Cover with a lid and reduce the heat to medium low. Let simmer until the sauce has thickened and a thermometer inserted into the patties registers 165 degrees F, about 10 minutes.
  • Turn the patties over a few times to coat in the sauce. Season with salt and pepper and top with the parsley.
