CORNED BEEF HASH
Steps:
- Heat the oil in a medium skillet over high heat. Add the corned beef and cook, stirring with a wooden spoon, until it releases some fat and browns slightly, about 3 minutes. Stir in the onion, bell pepper and potatoes and cook, undisturbed, until brown and crisp on the bottom, about 6 minutes. Continue cooking, turning the hash as it browns evenly, about 15 more minutes.
- Meanwhile, heat the butter in a nonstick skillet over medium-high heat. Fry the eggs sunny-side up or over easy; season with salt and pepper.
- Place the cheese slices on top of the hash, reduce the heat and let sit until the cheese melts, about 1 minute. To serve, top each portion of hash with a fried egg.

- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Separate crescent rolls and arrange them on the parchment paper in a circle with the short sides of triangles forming a 4-inch circle; overlap the edges of the pieces. Press dough where it overlaps to flatten.
- Whisk eggs, milk, garlic powder, onion powder, cumin, and cayenne pepper together in a bowl.
- Melt butter on medium low heat in a nonstick pan. Add chopped red peppers and jalapeno peppers. Cook and stir until tender, about 5 minutes. Pour in eggs. Gently scramble, pushing and lifting eggs until just set, about 3 minutes. Remove from heat.
- Heat vegetable oil on medium heat in a nonstick pan. Add Hormel Corned Beef Hash. Cook and stir until heated through and beginning to brown, 8 to 10 minutes.
- Spoon corned beef hash around the crescent roll ring. Top with 1/2 cup shredded cheese and scrambled eggs. Sprinkle with remaining 1/2 cup shredded cheese.
- Pull the points of each triangle over the hash, eggs, and cheese and carefully tuck under the center to form a ring. Some areas will have exposed filling.
- Bake in preheated oven until browned, about 20 to 25 minutes.
- Let cool 3 minutes before serving. Serve with salsa.

CORNBREAD WILDERNESS HASH
This is a recipe my parents made 50 years ago. I have tweaked it a little by adding the cheese and cornbread topping to please my family's tastebuds. It's so easy for a quick evening meal - add a salad and dinner's ready. If you don't have self-rising cornmeal, use 1 cup cornmeal, 1T baking powder and 1/2 tsp salt and mix well.

- Preheat oven to 400 degrees.
- In a large iron skillet, brown meat with chopped bacon, canola oil, onion and bell pepper.
- Then add pinto beans, stewed tomatoes, hot sauce, liquid smoke, and salt until well blended and heated through.
- If you aren't using an iron skillet, lightly grease a casserole dish and then evenly spread meat mixture in baking dish, otherwise leave meat mixture in iron skillet.
- Top meat mixture evenly with grated cheese.
- Whisk cornmeal and milk together and pour over cheese.
- Bake for 20-25 mins or until lightly browned on top.

WILDERNESS HASH
The source of this recipe is a cookbook compiled by the wives of Methodist ministers in the Texas Conference of the United Methodist Church. The submitter, Mary Lou Krause, described it as being a camp-out dish which came in-doors. Not being an "out-doorsey" type, my family enjoyed it for nearly forty years as a Saturday night (mostly), casual, kitchen-prepared family-meal dish. Finally I waked up to the fact that perhaps the smell and taste of the campfire had something to do with its popularity. About ten years ago I started adding Hickory Flavored Liquid Smoke and it made all the difference in the taste. A very satisfying one-dish meal, with a green salad, and a pone of cornbread it makes for some very good eating.

- Fry bacon and saute onion in skillet.
- Crumble in the ground beef, brown while stirring to break up the chunks.
- Add the seasoning in the amount desired .

- Serve with green salad and cornbread.

TEXAS HASH
I got this recipe over thirty years ago from my stepmom and have tweaked it a bit over the years to suit our tastes. It was a favorite of my boys while they were growing up and they still enjoy it! You can substitute Rotel tomatoes for part or all of the tomatoes if you like it spicier!

- Spray a 2 1/2 quart casserole dish with cooking spray and set aside.
- In a large non-stick frying pan heat the olive oil; add the onions, garlic and bell pepper and saute until the onions are limp, about 10 minutes.Remove from heat and put onion mixture in the prepared casserole dish.
- In the same frying pan, saute the ground beef over medium-high heat until browned.
- Add beef to the casserole dish.
- Add the rice, tomatoes and their juices,salt,pepper,basil, oregano,cumin, and chili powder to the casserole dish and mix until well combined.
- Cover casserole dish and bake in a preheated 350 degree oven for 45 minutes.
- Uncover casserole and bake for an additional 15 minutes.
- Serve hot with a sida salad and crusty rolls.

- Preheat over to 400.
- In lg. skillet over medium heat, melt 2 TB marg.
- Brown sausage lightly and place in bottom of casserole.
- To drippings in skillet, saute onions& peppers three minute.
- Add beans, catsup, honey and worcest. sauce, stirring to combine.
- Bake 10 minutes.
- Cornbread topping: Combine ingred. and stir til moistened.

CORNED BEEF AND HAM HASH
I love fresh corned beef hash but we never have enough corned beef left when I make a brisket. So this time I saved enough and still had a bandit that left me with not enough! However, I have recently made a half ham so added the ham instead of going without. Worked out well, still had the corned beef flavor and a few hints of the sweet ham.

- Pierce potatoes with a fork and microwave on high until tender, about 5 minutes. Remove from the microwave and chop when cool enough to handle.
- Heat butter and olive oil in a skillet over medium heat. Add onion and garlic and cook until translucent, about 5 minutes.
- Add chopped potatoes, cover, and cook for 5 minutes. Stir in corned beef and ham and season with salt and pepper. Cook until potatoes are crispy on the bottom, about 5 more minutes.
- While the potatoes are cooking, crack eggs into a nonstick skillet over medium heat. Cook until outer edges become opaque, about 1 minute. Cover, reduce heat to low, and cook until whites are completely set, about 4 minutes.
- Plate the potato mixture and place fried eggs on top.
