1/2 cup chopped celery
1/4 cup chopped onion
1/2 cup butter, divided
3 cups crumbled cornbread
3 cups soft bread crumbs
1 jar (2 ounces) diced pimientos, drained
1 cup chicken broth
1 large egg
1/2 teaspoon poultry seasoning
1 teaspoon salt, divided
1/2 teaspoon pepper, divided
2 Cornish game hens (20 to 24 ounces each)
1 garlic clove, minced
1 teaspoon grated lemon zest
3/4 teaspoon chopped fresh mint or 1/4 teaspoon dried mint flakes

Steps:

  • In a large skillet or saucepan, saute celery and onion in 2 tablespoons butter until tender. Remove from the heat. Stir in cornbread, bread crumbs, pimientos, broth, egg, poultry seasoning, 1/2 teaspoon salt and 1/4 teaspoon pepper; mix well. , Stuff each hen with 3/4 cup stuffing. Place extra stuffing in a greased 1-qt. baking dish; refrigerate. Place hens breast side up on a rack in a greased 13x9-in. baking dish. Cover loosely with foil; bake at 375° for 45 minutes. , Meanwhile, in a saucepan, melt the remaining butter; add garlic, lemon zest, mint and remaining salt and pepper. Brush over hens. Bake 15-30 minutes longer or until a thermometer reads 180° for hens and 165° for stuffing. Bake the extra stuffing, covered, for 30 minutes.

6 tablespoons unsalted butter, divided
1/4 cup finely chopped onion
2 tablespoons finely chopped celery
1 teaspoon finely chopped fresh thyme leaves
1 1/2 cups cooked wild rice
1 tablespoon minced flat-leaf parsley, plus sprigs for garnish
1/3 cup toasted pecan pieces, broken
2 tablespoons dried cranberries
2 tablespoons dried currants
4 dried apricots, diced
Kosher salt and freshly ground black pepper
4 Cornish hens, patted dry
1 tablespoon balsamic vinegar

Steps:

  • In a medium skillet, heat 2 tablespoons of the butter over medium-low heat. Saute the onions and celery until softened, about 10 minutes. Add the thyme and cook for 1 minute more. In a mixing bowl combine the onion mixture with the rice, parsley, nuts and dried fruits and season with salt and pepper to taste. Place 1/2 cup of the stuffing into the cavity of each hen. Tie the legs of each bird together with kitchen twine.
  • Preheat the oven to 400 degrees F. Melt the remaining butter with the vinegar. Brush the birds all over with the butter mixture and season with salt and pepper. Put the hens on a rack in a large roasting pan, breast-side up. Roast the hens until an instant read thermometer inserted in the thigh registers 170 degrees F., about 80 minutes. Set the birds aside at room temperature, loosely covered with foil, for 10 minutes before carving. Split hens in half through the breast with a sharp knife or poultry shears, and keep the stuffing intact. Arrange birds skin-side up, on a platter, garnish with sprigs of parsley and serve.

2 large croissants
1 1/2 tblsp butter
1 1/4 cup chopped onion
3 tblsp fresh sage
3 tblsp fresh thyme
2 1/4 cup chicken broth
2/3 cup hazelnuts
4 cornish game hens
1/2 cup chopped shallots
3 tblsp olive oil
1 tblsp flour

Steps:

  • 1. Preheat oven to 305. Arrange croissant pieces on baking sheet. Bake until golden and crisp. transfer to large bowl. Maintiain oven temp. melt butter in medium skillet over medium heat. Add onion, 1 tblsp sage and 1 tblsp thyme and saute until onion is osft. Add onion mixutre to toasted croissants. Mix in 1/4 cup chicken stock and hazelnuts. Season stuffing to taste with salt and pepper. 2. Spoon 1/4 of stuffing into each hen. Mix shallots, olive oil and remaining thyme in small bowl. Rub mixture all over outside of hens. Tie legs together with string to hold shape. Arrange hens on large rimmmed bkaing hseet. Bake until golden brown and cooked through about 1 hour and 15 minutes. Arrange hen on platte. Tent with foil. 3. Scrape pan juice into large measuring cup. Spoon off fat, reserving 1 tblsp add enough chicken stock to degreased pna juices to measure 2 cups liquid. Pour liquid into medium saucepan. Mix reserved 1 tblsp fat and 1 tblsp flour int small bowl to form smooth paste; whisk into stock mixture. Boil until reduced to generous 1 cup about 8 minutes. Season grave to taste.

1 small apple (about 4 ounces), peeled, cored, and diced

2 cups cubed day old cornbread
3/4 to 1 cup chicken broth, homemade or low-sodium canned

  • In a medium skillet, heat the 2 tablespoons of the butter over medium-low heat. Saute the leeks for 8 to 10 minutes, until softened. Add the apples and cook for 3 minutes more. 2 ounces bacon, cut crosswise into 1/2-inch pieces
1/2 small onion, finely chopped
1/2 Granny Smith apple, peeled, cored, and chopped into 1/4-inch pieces
3 ounces baguette, cut into 1/2-inch cubes and toasted
1/2 teaspoon freshly grated orange zest
1 1/2 teaspoons finely chopped fresh sage
1/2 teaspoon ground cinnamon
1 cup store-bought low-sodium chicken stock, warmed
1 large egg, lightly beaten
4 Cornish game hens (1 pound each)
3 tablespoons olive oil
Coarse salt and freshly ground black pepper
Maple Vanilla Gastrique, for serving (optional)
Leek Stew, for serving (optional)

Steps:

  • Preheat oven to 375 degrees.
  • Melt 6 tablespoons butter; set aside. Place bacon in a medium skillet over medium heat and cook bacon pieces until crisp. Add onions and cook until translucent. Add apple and cook until soft. Fold in bread, orange zest, sage, cinnamon, and melted butter. Slowly add just enough stock so that mixture sticks together. Remove from heat and let cool slightly; stir in egg.
  • Stuff the cavity of each game hen with one quarter of the stuffing mixture. Truss each game hen using kitchen twine.
  • Heat remaining tablespoon butter and olive oil over medium heat in a small roasting pan until foaming. Season game hens with salt and pepper and add to pan. Sear game hens on all sides until golden brown. Transfer roasting pan to oven and cook until juices run clear and the hens reach 160 degrees on an instant-read thermometer, 40 to 45 minutes.
  • Transfer hens to individual serving plates. Drizzle maple vanilla gastrique over hens and serve with leek stew.

1 lb Cornish hen
2 tablespoons slivered almonds
2 tablespoons finely chopped onions
1/3 cup uncooked long grain and wild rice blend
3 tablespoons butter
1 cup water
1 chicken bouillon cube
1 teaspoon lemon juice
1/2 teaspoon salt
1/2 cup small mushroom, sliced

Steps:

  • Heat oven to 400.
  • Season hens inside and out with salt & pepper. Set aside.
  • In a small pan, sautee almonds, onions and rice in butter for 5-10 minutes. Stir frequently.
  • Add water, boullion, lemon and salt. Bring to a boil to dissolve boullion. Reduce heat, cover and simmer slowly for 20 minutes or until liquid is absorbed and rice is tender.
  • Stir in mushrooms.
  • Lightly stuff birds with stuffing.
  • Place breast side up in a shallow baking pan. Brush with melted butter and roast uncovered at 400 for 30 minutes.
  • Cover and roast an additional hour or until drumstick can be twisted easily in socket.
  • Brush with butter during last 15 minutes.
  • Serve with white wine.

STUFFING:
1 box - betty crocker homestyle stuffing
1 - apple, cored and diced
2 - strips cooked bacon, broken into pieces
CORNISH GAME HENS:
2 - cornish game hens, innards removed and insides rinsed and patted dry
1 stick - butter
1 tsp. - seasoning salt
1 tsp. - paprika
1 tsp. - garlic powder
1 tsp. - dried thyme
1/2 tsp. - italian seasoning
1/4 tsp. - coarse ground pepper

Steps:

  • Make stuffing according to pkg. directions. Add in apples and bacon when fluffing with fork. Set aside. Remove anything inside the hens and rinse inside with cold water. Pat dry with paper towels. (Don't rub or you can have bits of paper towel left in there. Not good.) In small saucepan, melt butter on low. Add seasonings and spices. Stir well to mix. Remove from heat. When stuffing has cooled, stuff each bird. You may have a bit left over. Place in small baking dish with lid for extra helpings. ;) Place hens into metal or glass 13x9 baking pan. Tie legs together and tuck wings under. Baste hens with a little butter mixture to coat. Bake in preheated 350 oven for 50 minutes to 1 hour. Baste with butter mixure every 15-20 minutes. When done, baste with any last remaining butter mixture over them. Tent with foil covering to keep warm, and let rest til serving for at least 5-10 minutes.

1 lemon, quartered
4 sprigs fresh rosemary

  • Preheat oven to 450 degrees F (230 degrees C).

1 large shallot, minced
1 onion, minced
1 garlic clove, minced
3/4 stick (6 tablespoons) unsalted butter

1/2 cup chopped dried apricots
1/2 cup dry white wine
4 cups cubed stale homemade-type white bread (about 8 slices), toasted
3/4 cup skinned, lightly toasted hazelnuts, (procedure follows), chopped fine
6 Cornish hens, each weighing about 1 1/4 pounds, rinsed and patted dry
1/2 sticks (1/4 cup) unsalted butter, melted and cooled
1/3 cup fresh lemon juice
an 8 1/2-ounce jar mango chutney (about 3/4 cup)

Steps:

  • Make the stuffing:
  • In a large heavy skillet cook the shallot, the onion, and the garlic in the butter over moderate heat, stirring, until the vegetables are golden. Stir in the sage, the cloves, the raisins, the apricots, and salt and pepper to taste and cook the mixture, stirring, for 1 minute. Stir in the wine and boil the mixture until the liquid is evaporated. Remove the skillet from the heat and stir in the bread cubes, the hazelnuts, and salt and pepper to taste. Let the mixture cool before stuffing the hens.
  • Divide the stuffing among the cavities of the hens, packing the cavities loosely. Truss the hens, sprinkle them with salt and pepper, and arrange them so that they do not touch on the rack of a large, foil-lined broiler pan. Brush the hens with the butter and roast them in the upper third of a preheated 400°F. oven for 1 hour.
  • While the hens are roasting, in a small saucepan combine the lemon juice, the chutney, and salt and pepper to taste, bring the glaze just to a boil, stirring, and in a blender or food processor purée it. Brush the hens with the glaze, roast them for 15 to 25 minutes more, or until they are golden brown and cooked through, and discard the trussing string.
  • To toast and skin hazelnuts:
  • Toast the hazelnuts in one layer in a baking pan in a preheated 350°F. oven for 10 to 15 minutes, or until they are colored lightly and the skins blister. Wrap the nuts in a kitchen towel and let them steam for 1 minute. Rub the nuts in the towel to remove as much of the skins as possible and let them cool.

2 tablespoons dry Sherry

Steps:

  • Preheat oven to 475°F. Butter 11x7-inch baking pan. Bring 6 tablespoons broth just to simmer in medium saucepan; remove from heat. Mix in stuffing mix and 1 teaspoon sage. Spoon stuffing in 4 equal mounds in prepared pan. Season hen quarters with 1 teaspoon sage and salt and pepper. Press 1 hen quarter onto each stuffing mound.
  • Bake until hen is golden brown and juices run clear when hen is pierced with skewer, about 20 minutes. Transfer hen and stuffing to 2 plates; tent with foil to keep warm. Do not clean baking pan.
  • Place liver and remaining 1/4 cup broth in same baking pan. Set pan over medium heat. Boil until slightly thickened, scraping up browned bits, about 2 minutes. Mix in dry Sherry; simmer 1 minute. Spoon gravy over hen pieces and serve immediately.

8 ounces rye bread (about 1/2 loaf), trimmed of crust and cut into 1/4-inch dice
1/2 tablespoon extra-virgin olive oil
1 small leek, white and pale-green parts only, halved lengthwise, thinly sliced into half-moons, and rinsed well
3 ounces shiitake mushrooms, stemmed, wiped clean, and coarsely chopped
1 garlic clove, finely chopped
1 teaspoon coarse salt
1 tablespoon chopped fresh sage, plus leaves (optional), for garnish
1 tablespoon chopped fresh flat-leaf parsley
1/2 teaspoon dry mustard
1/2 teaspoon dried thyme
3/4 cup dried cranberries
3/4 cup reduced-fat, low-sodium canned chicken broth
6 Cornish game hens (1 1/2 pounds each)
1 tablespoon unsalted butter, room temperature
1/4 teaspoon freshly ground pepper

  • Preheat oven to 350 degrees. Spread out diced bread on a rimmed baking sheet; toastin oven, turning occasionally, until light brown and dry, 10 to 12 minutes. Set aside.
  • Raise oven temperature to 450 degrees. In a large nonstick skillet, heat the oil over medium-high heat until hot but not smoking. Add leek, mushrooms, garlic, and 1/2 teaspoon salt.   • Set roasting pan on top of stove across two burners; set heat to medium-high. Add port and remaining 1/4 cup broth; deglaze pan, scraping up any browned bits from bottom with a wooden spoon. Add remaining 1/4 cup dried cranberries; cook, stirring, until sauce reduces slightly, 2 to 3 minutes.
  • Place birds on a serving platter, and drizzle sauce over them. Garnish with sage leaves, if desired, and serve.

8 Cornish game hens (20 to 24 ounces each)
1/4 cup butter, softened
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups unsweetened apple juice
1 tablespoon honey
1 tablespoon Dijon mustard
PECAN RICE:
2 tablespoons butter
1-1/2 cups uncooked long grain rice
2 teaspoons ground cumin
1 teaspoon curry powder
4 cups reduced-sodium chicken broth
1 cup chopped pecans, toasted
3 green onions, thinly sliced
1/2 cup golden raisins

Steps:

  • Tuck wings under hens; tie drumsticks together. Rub skin with butter; sprinkle with salt and pepper. Place hens breast side up in a shallow roasting pan., Bake, uncovered, at 350° for 1 hour. Meanwhile, place apple juice in a small saucepan. Bring to a boil; cook until reduced by half. Remove from heat. Stir in honey and mustard. Set aside 1/2 cup for serving., Brush hens with apple mixture. Bake, basting occasionally with pan drippings, until a thermometer reads 180°, 25-35 minutes longer. Cover hens loosely with foil if they brown too quickly., For pecan rice, heat butter in a large saucepan over medium heat. Add rice, cumin and curry; cook and stir until rice is lightly browned, 2-3 minutes. Stir in broth. Bring to a boil. Reduce heat; simmer, covered, until rice is tender, 15-20 minutes. Stir in pecans, onions and raisins., Cover hens; let stand 10 minutes before serving. Serve with rice and reserved sauce.
