This was an idea I had for a long time but never got around to doing it and it came out fantastic couldn't have hoped for better. My wife and I loved it. The tart cherries complement the flavorful rub on the hen perfectly. For golden brown crispy skin increase temperature to 375 degrees F (190 degrees C) for last 10 minutes of cooking.

1 teaspoon sea salt
1 teaspoon ground black pepper
½ teaspoon dried thyme
½ teaspoon garlic powder

⅛ teaspoon paprika

2 Cornish game hens
½ cup white wine
1 (15 ounce) can tart cherries, drained
1 ½ cups red wine
¼ cup pulp-free orange juice
1 tablespoon packed brown sugar
2 tablespoons unsalted butter
1 tablespoon all-purpose flour, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine sea salt, black pepper, thyme, garlic powder, rosemary, and paprika in a bowl. Place hens on a baking sheet and evenly brush with 5 tablespoons butter. Rub hens with spice mixture.
  • Bake hens in preheated oven until no longer pink at the bone and the juices run clear, about 1 1/2 hours, basting every 1/2 hour with white wine. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C).
  • Mix cherries, red wine, orange juice, and brown sugar in a saucepan; bring to a boil for 2 to 3 minutes. Reduce heat to medium-low, stir in 2 tablespoons butter, and cook until sugar is dissolved and butter is melted, about 10 minutes. Sprinkle flour into the sauce; whisk until thickened, 2 to 3 minutes. Drizzle cherry sauce over cooked hens.

1 stick celery, chopped (choose a head of celery with decent leaves, which you can use as decoration)
1 small leek, greens trimmed, bulb split, rinsed and chopped
1 carrot, peeled and chopped
1 onion, chopped
2 cloves garlic, minced
3 cups red wine
16 very thin slices streaky bacon
4 Cornish hens, halved (or 8 chicken thighs)
2 tablespoons olive oil
1 1/2 teaspoons all-purpose flour
12 pearl onions, peeled
2 sticks celery, chopped diagonally
2 tablespoons port
2 tablespoons red currant jelly
1 cup heavy cream
2 tablespoons butter
1 1/2 teaspoons caster sugar*
1 small tin cooked chestnuts (not puree)

Steps:

  • To marinate the meat: Combine the celery, leek, carrot, onion, celery, and wine in a large bowl. Wrap 2 slices of bacon around each half-hen then secure with a toothpick or kitchen string. Put the hens in the marinade, cover and refrigerate overnight.
  • Preheat the oven to 325 degrees F
  • To begin the stew: Remove the hens from the marinade and blot them dry with paper towels. Strain the marinade into a bowl and reserve. Reserve the vegetables separately.
  • Heat the oil in a heavy casserole over medium-high heat. Working in batches, brown the Cornish hens on all sides, about 15 minutes per batch. Set the browned birds aside and add the reserved marinated vegetables to the pot. Turn the vegetables once or twice in the oil then sprinkle them with the flour. Cook, stirring frequently until the flour smells toasted, about 3 minutes, then add the reserved marinade. Bring the marinade to a boil. Reduce the heat to medium-low. Return the Cornish hens to the pot, cover, and braise in the oven until the hens are well-cooked, about 45 minutes.
  • Meanwhile, prepare the vegetables. Bring a large pot of salted water to a boil over high heat. Cook the onions until they are just tender, about 7 minutes, then remove them with a slotted spoon. Add the celery to the pot and cook until it too is tender, about 3 minutes. Refresh the celery in ice water. Set the celery and onions aside.
  • Finishing the stew: When the Cornish hens are ready, transfer them to a serving plate and remove the toothpicks or string.
  • Strain the braising liquid through a fine sieve. Pour the strained liquid into a large skillet and warm over low heat. Stir in the port, the red currant jelly and the cream. Keep the sauce warm over low heat.
  • Melt the butter with the sugar in a medium skillet over medium-high heat. Add the onions, chestnuts and celery pieces. Glaze the vegetables, turning them over in the caramel for 2 to 5 minutes.
  • To serve, spoon sauce over the Cornish hens then surround with glazed vegetables.

2 Cornish game hens (20 to 24 ounces each), split lengthwise
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper
MUSHROOM SAUCE:
1/2 pound fresh mushrooms, quartered
4 teaspoons olive oil, divided
1/4 teaspoon salt
1/4 teaspoon pepper, divided
1/3 cup finely chopped onion
1 garlic clove, minced
1 can (14-1/2 ounces) reduced-sodium chicken broth
1-1/2 teaspoons Dijon mustard
1-1/2 teaspoons balsamic vinegar
1 teaspoon brown sugar
1 teaspoon tomato paste
1 bay leaf
1 teaspoon each cornstarch and water
1/4 teaspoon minced fresh tarragon

Steps:

  • Rub oil over hens; sprinkle with salt, thyme and pepper. Place skin side up on rack in a shallow roasting pan. Bake, uncovered, at 400° for 35-40 minutes or until thermometer reads 180°. Broil hens for 3-4 minutes or until golden brown., Meanwhile, toss mushrooms with 2 teaspoons oil, salt and 1/8 teaspoon pepper. Spread in a single layer on a 15x10x1-in. baking pan coated with cooking spray. Bake at 400° for 25-30 minutes, turning once. Set aside., For sauce, in a saucepan, saute onion and garlic in remaining oil. Add the broth, mustard, vinegar, brown sugar, tomato paste, bay leaf and remaining pepper; bring to a boil. Cook, uncovered, over medium heat until mixture is reduced to 1 cup. Combine cornstarch and water until smooth; stir into sauce. Bring to a boil; cook and stir 1-2 minutes or until thickened. Stir in tarragon and mushrooms; heat through. Discard bay leaf. Serve sauce over hens.

Very tasty dish. Not difficult to make but nice enough for a special occasion or dinner party. Serve with mashed potatoes, grits, polenta or rice to soak up the delicious sauce. You could substitute any dried fruit (cranberries, apricots, etc) for the dried cherries. Use a complimentary fruit preserve accordingly.

4 Cornish hens
3/4 cup port wine
1 cup chicken broth
1/4 cup raspberry preserves or 1/4 cup raspberry jam
1/3 cup dried cherries
salt and pepper
dried thyme
3 tablespoons cornstarch, mixed with
water, to form paste

Steps:

  • Preheat oven to 400°F.
  • Rinse hens thoroughly and cut in half along the breastbone. Place halves, skin side up, in a shallow baking dish coated with cooking spray. Season with salt, pepper and dried thyme.
  • Place in oven and roast for approximately 40 minutes to an hour, until skin is nicely browned. For extra color, brush with melted better during last 15 minutes.
  • In a medium saucepan, combine port, chicken broth, cornstarch mixture, raspberry preserves, and dried cherries.
  • When hens are done cooking, remove from oven and let them rest on counter. Add pan drippings to the port mixture. Bring to a boil and simmer until desired consistency is reached. Add more preserves if the sauce is too tart. (The sauce can actually be made/reduced ahead of time - just reheat when pan drippings are added). Add more water or chicken broth if the sauce is too thick. Season with salt and pepper if needed.
  • Serve with sauce spooned over hens.

2 Cornish hens
1 tablespoon salt
1 tablespoon ground black pepper
1 tablespoon garlic granules
1 tablespoon tarragon
1 teaspoon rosemary
1 teaspoon thyme
1 teaspoon sage
2 tablespoons paprika
1/2 cup butter
1/2 cup white grape jelly
1 1/2 cups grape juice
1 tablespoon flour
1 tablespoon cornstarch (dissolved in tbsp. water)
1/2 cup chicken stock or 1/2 cup chicken broth
1/4 cup sugar
small clusters grapes (to garnish)
fresh herb (to garnish)

Steps:

  • Preheat oven to 375 degrees.
  • Rinse the hens& pat dry inside& outside with paper towel.
  • Place hens on a rack in a roasting pan.
  • Season hens equally with salt, pepper, garlic, tarragon, rosemary, sage, thyme& paprika.
  • Roast in oven until golden brown, or until juice runs clear& not red when hens are punctured between the thigh& breast.
  • While the birds are in the oven, using a double boiler, melt the butter& stir in the flour.
  • Once blended, add the chicken stock or broth& allow the mixture to thicken, stirring occasionally.
  • Add the grape jelly, grape juice, sugar& the dissolved cornstarch.
  • Continue to cook& stir until thickened again.
  • To serve, pour some of the sauce onto the 2 plates.
  • Place the hens on top of the sauce& then pour the rest of the sauce over the hens.
  • Garnish the plates with a few small clusters of grapes& a few sprigs of herbs if desired.

1 large shallot, minced
1 onion, minced
1 garlic clove, minced
3/4 stick (6 tablespoons) unsalted butter
3/4 teaspoon crumbled dried sage
1/8 teaspoon ground cloves
1/3 cup golden raisins
1/2 cup chopped dried apricots
1/2 cup dry white wine
4 cups cubed stale homemade-type white bread (about 8 slices), toasted
3/4 cup skinned, lightly toasted hazelnuts, (procedure follows), chopped fine
6 Cornish hens, each weighing about 1 1/4 pounds, rinsed and patted dry
1/2 sticks (1/4 cup) unsalted butter, melted and cooled
1/3 cup fresh lemon juice
an 8 1/2-ounce jar mango chutney (about 3/4 cup)

Steps:

  • Make the stuffing:
  • In a large heavy skillet cook the shallot, the onion, and the garlic in the butter over moderate heat, stirring, until the vegetables are golden. Stir in the sage, the cloves, the raisins, the apricots, and salt and pepper to taste and cook the mixture, stirring, for 1 minute. Stir in the wine and boil the mixture until the liquid is evaporated. Remove the skillet from the heat and stir in the bread cubes, the hazelnuts, and salt and pepper to taste. Let the mixture cool before stuffing the hens.
  • Divide the stuffing among the cavities of the hens, packing the cavities loosely. Truss the hens, sprinkle them with salt and pepper, and arrange them so that they do not touch on the rack of a large, foil-lined broiler pan. Brush the hens with the butter and roast them in the upper third of a preheated 400°F. oven for 1 hour.
  • While the hens are roasting, in a small saucepan combine the lemon juice, the chutney, and salt and pepper to taste, bring the glaze just to a boil, stirring, and in a blender or food processor purée it. Brush the hens with the glaze, roast them for 15 to 25 minutes more, or until they are golden brown and cooked through, and discard the trussing string.
  • To toast and skin hazelnuts:
  • Toast the hazelnuts in one layer in a baking pan in a preheated 350°F. oven for 10 to 15 minutes, or until they are colored lightly and the skins blister. Wrap the nuts in a kitchen towel and let them steam for 1 minute. Rub the nuts in the towel to remove as much of the skins as possible and let them cool.

2 tablespoons raw hazelnuts
1 Cornish hen or other small hen (about 3/4 pound)
1/4 teaspoon kosher or coarse sea salt
1/2 teaspoon ground allspice
1 tablespoon fat-free Greek-style yogurt
1 teaspoon extra-virgin olive oil
3 tablespoons Mulled Wine Syrup (page 7) made with red wine (or substitute 1/2 cup Pinot Noir or other fruity red wine plus 1/2 teaspoon sugar, or more to taste)
2 to 3 tablespoons dried cherries, preferably unsweetened
Freshly ground black pepper

Steps:

  • Toast the hazelnuts in a small, dry skillet over medium-high heat, stirring constantly, until they are lightly browned and begin to smell toasty, 4 to 5 minutes. Watch carefully; nuts can burn quickly. Transfer to the folds of a clean dish towel to remove the skins while the nuts are still warm, then discard the skins and let the nuts cool. Coarsely chop the nuts.
  • Using poultry shears or a very sharp knife, cut along each side of the hen's backbone and remove it. Turn the hen over on your cutting board, splay it out butterfly-style, and press on the breastbone to break it. Sprinkle it with salt and allspice then rub the yogurt all over it.
  • Heat the olive oil in a large nonstick skillet over medium-high heat until it starts to shimmer. Place the hen, meat side down, in the skillet and weight it down with a smaller skillet with a large can of tomatoes or other heavy object on top. (Or, do as I do, and use a heavy cast-iron bacon press, made for just this kind of thing.)
  • Let the hen cook until the yogurt has formed a dark brown crust on the meat side, 5 to 10 minutes. Lift off the weight assembly, and use tongs to turn the hen over onto the bone side. Return the weights and cook until an internal thermometer inserted into the thickest part of the thigh and the breast reads at least 165°F, another 5 to 6 minutes. Transfer to a plate and loosely cover with aluminum foil while you make the sauce.
  • Pour the wine syrup into the skillet and use a spatula to scrape up any browned bits from the bottom of the pan. Add the dried cherries and hazelnuts, stir to combine, and season with salt and pepper to taste. (If you're using wine instead of the syrup, pour it in, scrape up the browned bits from the pan, add the dried cherries and hazelnuts, then let the wine bubble and reduce by about half. Add the sugar to taste and continue reducing the sauce until it is thick and sticky, then season with salt and pepper to taste.)
  • Remove the sauce from the heat, spoon the sauce over the hen, and eat.
