Zucchini Corn Fritters image

Yummy zucchini corn fritters that my family can't get enough of. These fritters are light and fluffy with lots of zucchini and fresh corn. Cheese is optional, but not in my house. Serve hot with ranch dressing.

2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon cumin
½ cup sugar
½ teaspoon salt
fresh ground black pepper
2 eggs, beaten
1 cup milk
¼ cup butter, melted
2 cups grated zucchini
1 ½ cups fresh corn, kernels cut from cob
1 cup finely shredded Cheddar cheese
oil for frying

Steps:

  • In a large bowl, stir together flour, baking powder, cumin, sugar, salt, and pepper.
  • In a small bowl, whisk together eggs, milk, and butter. Whisk wet ingredients into dry ingredients. Stir in zucchini, corn, and cheese; mix well.
  • Warm oil in a cast iron skillet over medium-high heat. Drop batter by the tablespoonful into hot oil. Fry until crisp and brown, turning once with tongs. Remove to paper towels.

Cornmeal Zucchini Fritters image

These fritters have a wonderful texture from the cornmeal and are served with a fresh, tangy dill yogurt sauce for dipping.

2 medium zucchini (grated)
2 tbsp olive oil
1 large egg
1/3 cup cornmeal
1 tbsp honey
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon ground mustard
1/4 tsp crushed red pepper
1 cup plain Greek yogurt
Juice of half a lemon
1 tsp fresh dill
1/4 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder

Steps:

  • Grate two rinsed medium zucchini with the large holes of a box grater.
  • Squeeze the excess moisture from the grated zucchini by wrapping it in a clean dish towel and gently pressing the extra liquid out.
  • Heat two tablespoons of olive oil in a cast iron skillet over medium high heat.
  • Transfer zucchini to a large bowl and add egg, cornmeal, honey salt, pepper, garlic powder, mustard powder and red pepper flakes. Stir with a wooden spoon to incorporate all ingredients.
  • Use a cookie scoop or a spoon to transfer fritter batter to heated skillet. Allow fritters to cook 2-3 minutes until golden brown and crispy on the bottom. Flip and cook an additional 2-3 minutes until browned and crispy on the other side.
  • Transfer cooked fritters to paper towel lined plate to drain excess oil.
  • In a medium bowl, combine yogurt, lemon juice, salt, pepper, garlic powder and dill. Using a fork or small whisk, stir until all ingredients are incorporated.
  • Serve fritters warm with yogurt dill sauce on the side for dipping.

This recipe was given to me after smelling them cooking in my neighbor's kitchen while working in the garden. Zucchini is mixed with onion and cheese into some heavenly fritters. I look forward to making them every summer, all summer! You will too!!!

1 large zucchini, finely chopped
1 small onion, chopped
3 eggs, beaten
½ cup freshly grated Romano cheese
1 cup 2% milk
2 cups all-purpose flour
salt and pepper to taste
garlic powder to taste
onion powder to taste
1 pinch dried parsley
¼ cup vegetable shortening

Steps:

  • In a large bowl, mix together the zucchini, onion, eggs, Romano cheese, milk, and flour. Season with salt, pepper, garlic powder, onion powder, and parsley.
  • Heat about 1 tablespoon of shortening in a large skillet over medium heat. Drop 1/4 cupfuls of the batter into the skillet, and flatten slightly with the back of a spatula. Turn fritters over when the center appears dry. Cook on the other side until golden brown. Set aside and keep warm. Add more shortening to skillet as needed, and continue with remaining batter.

They go especially well with barbecued ribs or pork chops and corn on the cob. I'm an avid recipe clipper. 1/2 cup 2% milk
1 large egg, lightly beaten
1 cup all-purpose flour

  • In a deep cast-iron skillet or deep-fat fryer, heat oil to 375°. , Meanwhile, combine milk and egg in a bowl. Stir together dry ingredients and add to egg mixture; blend well. Fold in zucchini. Steps:

  • Toss zucchini, yellow squash, and carrots with salt in a colander and drain for 15 minutes. Wrap vegetables in a clean kitchen towel and squeeze out as much moisture as possible; transfer mixture to a bowl.
  • Combine corn muffin mix, baking powder, and paprika in a bowl. Stir in vegetables and eggs until well mixed.
  • Heat 2 tablespoons vegetable oil in a large skillet over medium heat, tilting skillet to spread oil evenly. 2 medium zucchini, coarsely shredded
kosher salt
1 tablespoon unsalted butter (can use olive oil)
1/2 small onion, finely chopped
1 garlic clove, finely chopped
2 ears corn, kernels cut off (can use 1 cup frozen)
1/2 cup yellow cornmeal
1/2 cup all-purpose flour
1/4 teaspoon baking soda
fresh ground pepper
3/4 cup buttermilk
1 large egg
vegetable oil, for frying
1/2 teaspoon crushed red pepper flakes (optional)

Steps:

  • Toss the zucchini with 1/2 teaspoon salt in a bowl; let stand 10 minutes. Wrap the zucchini in a kitchen towel and squeeze dry.
  • Meanwhile, heat the butter in a large nonstick skillet over medium-high heat. Add the onion and garlic and cook, stirring occasionally, until slightly softened, about 4 minutes. Add the corn and cook, stirring occasionally, until crisp-tender, about 3 minutes. Set aside.
  • Whisk the cornmeal, flour, baking soda, 3/4 teaspoon salt and 1/4 teaspoon pepper in a medium bowl add crushed red chili peppers here if using. Whisk the buttermilk and egg in a large bowl, then stir in the corn-onion mixture and zucchini. Add the cornmeal mixture and stir until just combined.
  • Heat about 1/8 inch vegetable oil in a large nonstick skillet over medium heat. Working in batches, scoop scant 1/4 cupfuls of the batter into the oil and use the back of the measuring cup to flatten the scoops. Cook until the fritters are golden brown, 3 to 4 minutes per side. Drain on paper towels and sprinkle with salt. Serve warm or at room temperature.
