HOMEMADE CHERRY PIE FILLING



Homemade Cherry Pie Filling image

Fresh tart cherries give this pie filling a homemade flavor that's superior to canned.

2/3 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
4 cups fresh tart cherries, pitted
1-1/2 cups water
2 tablespoons lemon juice
6 drops red food coloring, optional
ADDITIONAL INGREDIENT:
Pastry for double-crust pie (9 inches)

Steps:

  • In a large saucepan, combine the sugar, cornstarch and salt. Add the cherries, water and lemon juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in food coloring if desired. Yield: 4 cups. , For a lattice-crust pie: Line a 9-in. pie plate with bottom pastry; add filling. Make a lattice crust; trim, seal and flute edges. Cover edges loosely with foil. , Bake at 400° for 15 minutes. Remove foil; bake 15-20 minutes longer or until crust is golden and filling is bubbly. Cool on a wire rack.

4 cups pitted tart red cherries
1 cup white sugar
¼ cup cornstarch

Steps:

  • Place cherries into a saucepan over medium heat, and cover the pan; heat cherries until they release their juice and come to a simmer, 10 to 15 minutes. Stir often.
  • In a bowl, whisk the sugar with cornstarch until smooth; pour the mixture into the hot cherries and juice, and thoroughly combine. Return to low heat, bring to a simmer, and cook until the filling has thickened, about 2 minutes; remove from heat, let cool, and use as pie filling.

Makes excellent banana, coconut, or chocolate cream pie. This was given to me by a friend many years ago. For banana slice a layer of bananas in pie pan then fill half full with filling add more bananas then rest of filling. For chocolate, add 2 squares semi-sweet chocolate to hot milk and an additional 1/2 cup sugar. Good just to eat as pudding.

2 quarts milk
2 tablespoons butter
3 eggs, beaten
2 ¼ cups white sugar
1 ¼ cups cornstarch
1 teaspoon salt
2 teaspoons vanilla extract

Steps:

  • In a sauce pan, combine milk and butter. Bring to a boil. In a medium bowl, combine eggs, sugar, cornstarch and salt. Slowly whisk 1 cup of hot milk mixture into egg mixture. Gradually whisk egg mixture back to remaining milk mixture. Continue to cook, stirring constantly, for 5 minutes. Remove from heat and stir in vanilla. Allow to cool.

After just making this again I think some may find the filling too thick so I am changing the instructions to say 2-4 tablespoons of cornstarch. We like our apples diced so it takes 3-4 large apples to achieve 4 cups. I also used the micro.this time stirring every couple minutes. No chance of burning on the bottom that way.

4 cups diced apples
2 tablespoons lemon juice
1/2 cup sugar, depending on sweetness of apples, to taste
2 -4 tablespoons cornstarch
1/2 teaspoon nutmeg, to your taste
1 teaspoon cinnamon, to your taste
1 cup apple juice or 1 cup water, if you don't have juice, try to have juice, it adds to the flavor

Steps:

  • Sprinkle lemon juice over apples in saucepan.
  • Mix next four ingredients together and add to apples.
  • Mix well.
  • Add very hot juice to pan, (I microwave juice for 2 minutes) cook, stirring constantly until thickened.
  • Remove from heat and cool.
  • Fill a well chilled 9 inch pastry lined pan and cover with top crust.
  • Bake on lowest rack at 425* for 10 minutes, and finish baking on center rack until bubbling, about 20 minutes more.

  • Drain juice from cherries and add water to make 3/4 cup liquid. Stir liquid into corn starch mixture.
