SHRIMP SPRING ROLLS

12 fully cooked and peeled Costco shrimp
1 carrot cut into matchsticks (or julienned)
1 wedge red cabbage, thinly sliced
1 avocado thinly sliced
2 cups lettuce, thinly sliced
6-8 sprigs fresh cilantro and mint
8 sheets Vietnamese rice paper (large size )
1/3 cup peanut butter
2 tbsp soy sauce
1 tbsp rice wine vinegar
2 tbsp agave or maple syrup (or honey)
2 tbsp lime juice
2 tsp sriracha hot sauce
4 tbsp water ((plus more depending on how thick your peanut butter is))

Steps:

  • Add all the peanut sauce ingredients to a bowl and mix until blended. Set aside.
  • Slice your cooked shrimp in half lengthwise and set aside along with the chopped vegetables and herbs.
  • Prepare a bowl of warm water and a flat surface such as a cutting board. Dip the dry rice paper into the bowl by holding it up with both hands and wetting along the sides. Once all sides are wet, lay the rice paper flat. Do not submerge the entire rice paper into the water at once as it will crumble up and be very difficult to manipulate.
  • Start assembling your roll by layering the avocado, carrots, and lettuce about 1.5" up from the bottom edge of your rice paper.
  • Fold in the sides of the rice paper then roll the bottom of the rice paper over the vegetables, then roll again and add a layer of the cilantro and mint. Roll again then add 3 pieces of shrimp before completing your final roll.
  • Enjoy with homemade peanut sauce.

A true delight served in a large glass, similar to what you might get at a great Mexican restaurant off the beaten path. Quality ingredients are the key. Costco has a shrimp marinated with cilantro that make this recipe super EASY. This is super for a party you can put all the ingredients in and hand them out. (to serve immediately you should use pre marinated shrimp)

1 1/2 lbs medium shrimp, to large
1/2 cup ketchup, prefer organic
2 avocados, diced
1 medium red onion, diced
1/2 bunch fresh cilantro (pull out the stems and chop up the leaves)
3 limes
1 cucumber, diced
sea salt and pepper
12 ounces orange juice

Steps:

  • Take 4 Pint size beer glasses or mugs.
  • Load each with Shrimp to cover just under 1/2 the mug.
  • Add catchup to each.
  • add 1/2 avocado to each cup.
  • add 1/4 of the onion, cilantro, cucumber,.
  • Squeeze the juice of a half of each lime into each glass.
  • I like to cut a little bit of the lime pulp to put in each.
  • shake of salt and pepper into each glass.
  • add some OJ to each glass to get them to about 1/2 inch from the top. Gently stir until mixed.
  • Take remaining lime and quarter to put on the top of each glass.
  • BEST option refrigerate for 1 hour and serve. (note to spice up add one shake of tobasco to each.).
