This was a much requested recipe of my mother's. Now that mom is no longer with us, we have this often in her honor.

1 (2 pound) package frozen hash brown potatoes, thawed
1 (10.75 ounce) can condensed cream of potato soup
1 (10.75 ounce) can condensed cream of celery soup
1 (16 ounce) container sour cream
¼ cup milk
½ cup chopped onion
1 teaspoon salt
½ teaspoon pepper
⅛ teaspoon dried dill weed
1 ½ cups shredded Cheddar cheese
paprika to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 inch baking dish.
  • In a large bowl combine hash browns, potato soup, celery soup, sour cream, milk and onion. Mix well and then season with salt, pepper and dill weed. Spoon into prepared dish and sprinkle with cheese and paprika.
  • Bake in preheated oven for 1 to 1 1/2 hours, or until well browned and bubbly.

1 (2 lb) bag hash browns (thawed)
1 pint sour cream
8 ounces shredded cheddar cheese
1 (10 1/2 ounce) can cream of chicken soup
1 cup margarine (softened) or 1 cup butter (softened)
1 cup of chopped onions or 1/2 cup dehydrated onion
1 cup corn flakes or 1 cup crushed cracker
1/4 cup of melted margarine or 1/4 cup butter
1 teaspoon garlic powder
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Mix all ingredients except the cornflakes or crackers and the 1/2 stick of melted butter together in a bowl.
  • Grease 9x13 inch pan (you can use cooking spray) and add all ingredients from the bowl to the pan.
  • Just before baking, mix the cornflakes or crackers and the 1/2 stick of melted butter together and then sprinkle on the top.
  • Bake for 1 hour at 350 degrees.

2 pounds Idaho russet potatoes
1/2 cup finely chopped onion
1 clove garlic, peeled
Salt to taste if desired
6 tablespoons butter, plus butter for greasing the dish
Freshly ground pepper to taste
1/8 teaspoon freshly grated nutmeg
2 tablespoons finely chopped parsley
3 tablespoons freshly grated Parmesan cheese

Steps:

  • Peel the potatoes and cut each into quarters. There should be about 4 cups. Put the potatoes in a large saucepan and add water to a depth of about one-half inch above the potatoes.
  • Add the onion, garlic and salt. Bring to a boil and cook 10 to 15 minutes or until tender. Drain the potato mixture and return to the kettle in which it was cooked. Add salt, 4 tablespoons of the butter, pepper, nutmeg and parsley.
  • Mash the potatoes to a smooth texture, using the back of a large spoon. Spoon the potato mixture into a buttered baking dish (a dish measuring 6 1/2 by 11 1/2 inches is ideal), and smooth over the top. Sprinkle with Parmesan cheese and dot with the remaining 2 tablespoons butter.
  • Meanwhile, preheat the broiler to high.
  • Place the potatoes under the broiler 3 or 4 inches from the source of heat. Broil 6 to 8 minutes or until golden brown and slightly bubbling on top.

  • -Cook unpeeled potatoes. -Chill overnight. -Peel and grate potatoes.( I use a food processor) -In a microwave safe bowl, mix 4Tb butter and cheddar. - Heat for 2 minutes or until butter has melted. -Add sour cream, onion and S&P, stir well. - Mix sauce and potatoes together in large bowl. -Put potato mixture into greased casserole dish. - Dot with remaining butter and sprinkle with paprika . -Bake at 350* for 35 minutes.

9 large white potatoes
1 (250 g) package cream cheese
1 cup sour cream
2 teaspoons onion powder
2 tablespoons butter
1 egg (beaten)

  • Peel and chop potatoes and boil in water until fork tender.
  • Drain and mash potatoes in large bowl.
  • Add cream cheese, sour cream, onion powder butter, egg, and garlic powder.
  • Beat with hand mixer until fluffy.
  • Scrape mixture into large casserole dish, and for nice appearance use back of spoon to "peak" potatoes like meringue.
  • Dot with butter and sprinkle with paprika.

6 green onions, sliced
coarse salt

Steps:

  • In a large skillet over med-high heat, melt the butter with 1 tablespoon oil.
  • Add in potatoes; cook, stirring occasionally, about 10 minutes, until lightly browned.
  • Decrease heat to medium; add in red and green onions, salt, pepper, and paprika to taste; cook until potatoes are tender, about 10 minutes; add more oil if needed.

Just wanted to do something different with potatoes. My husband likes potato skins a little crispy and we both love garlic. The ingredients are approximate and I used rosemary because that is what I had on hand. They looked like I had spent a lot of time preparing them! They were so easy and could be prepared ahead of time that I called the Company Baby Potatoes. (Plus they were GOOD!)

8 baby potatoes
3 -4 tablespoons olive oil
3 -5 cloves garlic (cut in large pieces)
2 teaspoons rosemary
1 teaspoon garlic salt
1 tablespoon parsley (chopped)
1 tablespoon grated romano cheese

Steps:

  • Wash potatoes.
  • Place them in a sauce pan and cover with water.
  • Boil until soft (approximately 20 minutes).
  • While potatoes are boiling put olive oil, garlic cloves (cut in large pieces), rosemary and garlic salt in heavy skillet.
  • Heat the oil on low until potatoes are done.
  • When the potatoes are done remove them from water and dry on paper towels.
  • Increase the skillet heat to medium and remove garlic cloves.
  • Add potatoes to skillet and saute about 10 minutes or until just browned, turning occassionly.
  • To serve remove potatoes to a serving bowl, pour remaining oil over them and dust with chopped parsley and grated romano cheese.
