COUNTRY-STYLE OMELET

4 large eggs
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
4 ounces diced ham
2 scallions, finely sliced
4 ounces shredded sharp Cheddar cheese

Steps:

  • Whisk the eggs until frothy and season with salt and pepper.
  • Meanwhile, melt 1 tablespoon of the butter in a 10-inch nonstick skillet over medium heat. Add the ham and scallions and cook until the ham is browned and warmed through, then remove to a plate.
  • Wipe the pan out and place it back over the heat. Add the remaining 1 tablespoon of butter and swirl around until melted, then add the eggs. Using a rubber spatula, move the outside edges of the eggs inward as they begin to set up. Continue to cook until the eggs are set and begin to get some color. Sprinkle the ham and cheese evenly over the surface of the eggs. When ready to serve, fold the omelet in half and slide out on to a plate.

1/4 cup chopped fresh tomato
2 large mushrooms, sliced
2 tablespoons finely chopped green or sweet red pepper
1 tablespoon diced onion
3 large eggs
1/4 cup 2% milk
2 teaspoons minced fresh parsley
1/2 teaspoon dried basil
Pepper to taste
4 spinach leaves
2 slices cheddar cheese
1 flour tortilla (10 inches)
2 slices deli ham
1 cup shredded cheddar cheese, divided
Sour cream and salsa, optional

Steps:

  • In a 10-in. nonstick skillet, coated with cooking spray, saute the tomato, mushrooms, green pepper and onion until tender; remove and set aside., In a small bowl, whisk the eggs, milk, parsley, basil and pepper. Pour into skillet,; cook over medium heat. As the eggs set, lift edges, letting uncooked portion flow underneath. When eggs are set, top with spinach, cheese slices and tortilla., Invert pan to flip omelet; return omelet to pan, tortilla side down. Place ham and sauteed vegetables on one side of omelet. Sprinkle with 3/4 cup shredded cheese; fold the omelet over filling. Cover and let stand for 1-1/2 minutes or until cheese is melted. Remove from the heat. Top with remaining shredded cheese. Serve with salsa and sour cream if desired.

1 tablespoon good olive oil
3 slices thick-cut bacon, cut into 1-inch pieces
1 cup (1-inch-diced) unpeeled Yukon Gold potatoes
Kosher salt and freshly ground black pepper
5 extra-large eggs
3 tablespoons milk
1 tablespoon unsalted butter
1 tablespoon fresh chopped chives

Steps:

  • Preheat the oven to 350 degrees.
  • Heat the olive oil in a 10-inch ovenproof omelet pan over medium heat. Add the bacon and cook for 3 to 5 minutes over medium-low heat, stirring occasionally, until the bacon is browned but not crisp. Take the bacon out of the pan with a slotted spoon and set aside on a plate.
  • Place the potatoes in the pan and sprinkle with salt and pepper. Continue to cook over medium-low heat for 8 to 10 minutes, until very tender and browned, tossing occasionally to brown evenly. Remove with a slotted spoon to the same plate with the bacon.
  • Meanwhile, in a medium bowl, beat the eggs, milk, 1/2 teaspoon salt, and 1/4 teaspoon pepper together with a fork. After the potatoes are removed, pour the fat out of the pan and discard. Add the butter, lower the heat to low, and pour the eggs into the hot pan. Sprinkle the bacon, potatoes, and chives evenly over the top and place the pan in the oven for about 8 minutes, just until the eggs are set. Slide onto a plate, divide in half, and serve hot.

150 g wafers
1 chopped onion
1 green capsicum chopped
4 eggs
2 Tbsp milk
2 Tbsp coriander chopped
4 Tbsp cheese grated
salt to taste

Steps:

  • 1. Apply some butter to a microwave baking dish.
  • 2. Then layer the base with crushed wafers,sprinkle chopped capsicum and onions.
  • 3. Microwave uncovered it for 2 minutes on high power.
  • 4. n a small bowl mix eggs,milk and salt.
  • 5. Then pour the egg mixture onto wafers and cover the microwave on medium power for 5 minutes or till the egg almost done.
  • 6. After 5 minutes touch the egg and see weather egg has done fully if not then again keep in microwave for 2 minutes.
  • 7. Then remove it and sprinkled grated cheese on the egg mixture and again microwave it for 1 minute.
  • 8. Stand it for 2 minutes.
  • 9. So finally our country style omelette has done.

6 large eggs
1 medium potato, grated
1 tablespoon parsley, diced
100 g ham, virginian sliced and diced
1/4 teaspoon ground black pepper
1/4 teaspoon sage
1 medium onion, finely diced
1 tablespoon butter
2 button mushrooms, sliced
2 cherry tomatoes, sliced
1/4 green capsicum, diced (green pepper)
1/4 red capsicum, diced (red pepper)
2 teaspoons parmesan cheese
100 g cream cheese, finely diced

Steps:

  • Whisk eggs in a medium bowl.
  • Add grated potato, parsley, ham, pepper, sage and onion to bowl and mix.
  • Melt butter in pan over medium heat and add mixture, set temperature so it is just bubbling.
  • Evenly spread mushrooms, tomato, capsicum and cheeses over top.
  • Cook without turning until top is starting to firm, around 30 minutes.
  • If required flip over and cook other side around one minute to set egg.
  • Serve cut in half without folding.

1/4 cup chopped sweet red pepper
1 tablespoon dried parsley flakes
1 cup shredded Swiss cheese or shredded part-skim mozzarella cheese
4 large eggs
1-1/4 cups whole milk
1/4 teaspoon paprika

Steps:

  • In a skillet, saute 1/2 cup onion in oil. Add hash browns, 3/4 teaspoon salt and 1/4 teaspoon pepper. Cook over medium heat for 5 minutes or until hash browns are thawed. Press mixture into an ungreased 10-in. pie plate, forming a shell. , Bake at 400° for 20 minutes. Meanwhile, in a skillet, cook the beef, peppers and remaining onion over medium heat until meat is no longer pink; drain. Stir in parsley. Spoon into the potato shell. Sprinkle with cheese. , In a bowl, beat eggs, milk, paprika and remaining salt and pepper; pour over meat mixture. Bake at 400° for 30 minutes or until a knife inserted in the center comes out clean. Let stand 5 minutes before cutting.

2 onions (about 3/4 pound), peeled and sliced
1 1/4 pounds potatoes, peeled and sliced thin
1 large tomato (about 12 ounces), sliced thin
8 large eggs
1/2 cup coarsely chopped chives
3/4 teaspoon salt
1/2 teaspoon freshly ground pepper

Steps:

  • Heat the oil and butter in a nonstick skillet until hot but not smoking. Add the onions and potatoes and cook, covered, for about 10 minutes, stirring the mixture every 3 to 4 minutes. Arrange the tomato slices so they cover most of the surface of the potato-and-onion mixture, cover, and cook for 1 minute.
  • Meanwhile, break the eggs into a bowl, add the chives, salt and pepper, and mix together with a fork. Add the egg mixture to the skillet and stir gently with the tines of the fork for about 1 minute to allow the eggs to flow between the potatoes. Then place the skillet under a hot broiler, 3 or 4 inches from the heat, and cook for about 3 minutes, until eggs are set.
  • Invert onto a platter, cut into wedges and serve.

2 chorizo sausage, simmered 5 minutes,then diced
1 medium potato, peeled and finely diced
6 eggs, lightly beaten
1 tablespoon minced fresh parsley
1 tablespoon minced green onion (white part only)
salt and pepper
1/2 cup grated cheddar cheese or 1/2 cup swiss cheese

Steps:

  • Preheat broiler to a moderate heat.
  • In a skillet heat 1 T butter and the olive oil; add diced ham and sausages and saute for about 2 minutes over medium heat until lightly browned.
  • Remove ham and sausages and reserve.
  • Add potato to pan; saute until soft and golden brown.
  • Combine eggs with parsley and green onion; season with salt and pepper.
  • Stir in ham and sausages.
  • Pour egg mixture into pan.
  • Blend quickly with the potato and cook over moderate heat, shaking the pan a few times to prevent sticking.
  • When the edge of the omelette starts to set, put the remaining butter on the edge of the omelette and tilt pan to let butter flow around it.
  • After about 2 minutes, sprinkle omelet with grated cheese, put pan under a medium broiler to brown the top and melt the cheese.

2 maple sausage patties, crumbled
6 slices bacon, chopped
1/4 cup sliced mushrooms
6 eggs
3 tablespoons half-and-half
2 tablespoons unsalted butter
1 cup spinach leaves
1/4 cup grated cheddar cheese

Steps:

  • In a 10- or 12-inch skillet, cook the sausage and bacon fully over medium heat. Add the mushrooms and cook until tender. Reserve the mixture in a bowl.
  • In a blender, whip the eggs and half-and-half until very light, about 90 seconds on high. (A milkshake blender, while not entirely necessary, does offer a little bit more fluff and a bit more fun.)
  • Give the skillet a wipe and warm it over medium heat. Swirl the butter in the hot pan to coat it completely. Pour the whipped eggs into the pan and cook until fully set around the outer edges, 2 to 3 minutes. Turn the heat to low and top the whole surface of the omelet with the spinach and cheddar. Cook until the spinach is slightly wilted and the cheese begins to melt.
  • Add the sausage mixture to one side of the eggs and use 2 spatulas to fold the other half over the side with the sausage mixture. Cook until the eggs are set and the cheese is fully melted, another 2 minutes. The outer surface will be lightly browned in places and likely have some spots where cheese has broken the surface and possibly caramelized on the edges. This is considered a good thing, not unlike "burnt ends" in the BBQ world.
