Provided by Jackie Currie

Categories     Side Dish

Time 2h20m

Number Of Ingredients 8

1 cup warm water
2 tbsp margarine ((butter works well too))
1 tsp salt
1 egg beaten
1/4 cup sugar
3 cups all-purpose flour
3 tsp quick rise yeast ((also known as instant yeast))
melted butter for brushing buns

Steps:

  • Add all ingredients to bread machine in the above order, and press "dough" setting.
  • When done, transfer dough to a lightly-floured counter top and shape into a ball.
  • Cut ball in half, and then cut those two pieces in half and so on, until you have 16 pieces. (sprinkle more flour on your counter if dough starts to stick)
  • Shape your pieces into round buns, and place in a sprayed 9 x 13 baking dish or 2 smaller dishes. Leave about an inch between buns.
  • Brush buns with melted butter, and cover the baking dish with Plastic Wrap. Set in warm spot (about 80 degrees Farenheit) until buns have doubled in size - about 40 mins. (I usually heat my oven to about 200, and then turn my oven right OFF, and place the dish in there with the door open a crack.
  • Once doubled, remove plastic wrap, and bake 12-15 minutes at 375 degrees.

AMISH DINNER ROLLS (BREAD MACHINE)

Amish Dinner Rolls (Bread Machine) image

In my quest for the perfect fluffy and flavourful dinner roll recipe for my bread machine I came across a treasure on the King Arthur Flour site. It soon became a family favourite. However, I found that I often didn't have the mashed potato and potato water it required right at hand to quickly mix up a batch whenever I wanted, so I experimented and modified the original recipe in order to use instant mashed potato flakes instead. I now keep a box in my pantry exclusively for this recipe. Note: Sometimes I substitute 2 cups of the all-purpose flour with whole wheat flour. The resulting rolls are just as heavenly this way too! The preparation time does not include the machine cycle or the rising time. I usually allow approx. 4 hours to get them into the oven.

Time 40m

Yield 16 serving(s)

Number Of Ingredients 9

1 1/3 cups water
2 eggs
6 tablespoons butter (or margarine)
1/3 cup sugar
1 1/2 teaspoons salt
1 tablespoon powdered milk
2/3 cup potato flakes
4 1/4 cups all-purpose flour
2 1/2 teaspoons bread machine yeast

Steps:

  • Place all the ingredients into the pan of your bread machine in the order recommended by the manufacturer (usually, liquids first, yeast last).
  • Program the machine for 2 lb dough cycle, and press Start.
  • Check the dough about 10 minutes before the end of the final kneading cycle and adjust its consistency as necessary by adding additional water or flour to form a soft, smooth ball.
  • DON'T SKIP THIS STEP! Allow the machine to complete its cycle, then allow the dough to remain in the machine till it's doubled in bulk, perhaps an additional 30 minutes or so.
  • To make stand-alone rolls, divide the dough into 16 equal pieces. If you want to make soft-sided, pull-apart rolls, divide the dough into 15 pieces. This will make quite large rolls. If you prefer smaller rolls you can easily get 24 from this amount of dough.
  • Place the 16 dough balls onto a parchment-lined or lightly greased baking sheet or sheets, leaving about 2 inches between them. Or place the 15 dough balls into a lightly greased 9 x 13-inch pan, spacing them evenly in five rolls of three balls each. If I'm making 24 soft-sided rolls I use a baking sheet with a rim and create six rows of four buns.
  • Cover the pan(s) with a proof cover or lightly greased plastic wrap, (I just use a clean dish towel) and allow the rolls to rise for about 2 hours, until they're quite puffy.
  • Bake the rolls in a preheated 350°F oven for 20 to 25 minutes, until they're golden brown. In my convection oven I bake two trays at a time (the large buns) on the convection bake setting for about 18 minutes.
  • Remove them from the oven, carefully turn them out of the pan -- the pull-apart rolls will come out all in one piece -- and brush them with melted butter, if desired.

COUNTRY WHITE BREAD OR DINNER ROLLS (BREAD MACHINE) RECIPE - (3.7/5)

Country White Bread or Dinner Rolls (Bread Machine) Recipe - (3.7/5) image

Provided by Harleygirl

Number Of Ingredients 10

1 cup water, plus
1 tablespoon water (70-80 F)
1 large egg
4 1/2 teaspoons vegetable oil
3 1/4 cups bread flour
1/4 cup sugar
1 1/2 teaspoons salt
1 1/2 teaspoons instant yeast
2 tablespoons melted butter (for dinner rolls only) (optional)
2 tablespoons shortening (for dinner rolls only) (optional)

Steps:

  • Directions: 1 In bread machine pan, place all ingredients from flour through yeast in order as recommended by the manufacturer. 2 Select the basic bread setting. 3 Check dough after 5 minutes of mixing, if needed add 1-2T of water or flour. 4 Bake as normal. 5 For dinner rolls. 6 Mix in bread machine but use only the dough option. 7 Lightly grease a 9 x 13 baking pan (I always use a metal pan). 8 When dough is finished shape into 15 uniformly sized balls. I always grease my hands with shortening to smooth the dough out and it helps keep the dough from drying out. 9 Cover and let the rolls rise in a warm, draft free place until risen to the desired size. 10 I let them about double in size. 11 Bake in a 350° oven about 12-15 minutes until golden brown. 12 After removing from the oven, brush the tops of the rolls with melted butter. 13 Take out of pan and let completely cool before storing.
