SHRIMP MOLD
A great shrimp appetizer! Serve with crackers or toasted French bread.

Steps:
- Heat soup in a small saucepan or in a microwave oven.
- In a medium bowl, stir gelatin into cold water. Mix hot tomato soup into the gelatin liquid.
- In a medium size mixing bowl, combine cream cheese and mayonnaise together. Mix soup mixture into the mayonnaise and cream cheese mixture. Mix well. Add shrimp, celery, and green onions.
- Spoon the mixture into a 1 quart mold and refrigerate for at least 1 hour, but preferably overnight. Unmold onto a serving plate before serving.

CREAMY SHRIMP MOUSSE
Folks will think you're spoiling them when you serve this wonderful shrimp mousse! Molded in a ring, it looks fancy even as it feeds a crowd.

- In a large saucepan, combine the soup, cream cheese and mayonnaise. Cook and stir over medium heat until smooth; remove from the heat; set aside. , Meanwhile, in a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Cook and stir over low heat until gelatin is completely dissolved. , Transfer to a large bowl; cool slightly. Add the shrimp, onion, celery and cream cheese mixture. , Transfer to a lightly greased 6-cup mold. Cover and refrigerate for 4 hours or overnight. , Unmold onto a lettuce-lined serving plate. Garnish with parsley if desired. Serve with crackers. Refrigerate leftovers.

SHRIMP-CRAB MOUSSE

- In saucepan, heat soup, cream cheese, and gelatin until warm and blended. Working with 1/2 mixture at a time, add remaining ingredients; mix until smooth. Grease a favorite seafood mold very well; fill with mousse mixture. Chill overnight. Unmold and garnish as desired. Serve with crackers or vegetable sticks.

CRAB MOUSSE
Mother always knows best. Mom used to make this on special occasions such as Thanksgiving and Christmas. It's an awesome recipe.

Steps:
- 1. Dissolve gelatin in 3 tablespoons of warm water.
- 2. Heat cream of mushroom (condensed) in medium-size saucepan.
- 3. Add dissolved gelatin to cream of mushroom & cream chees until melted.
- 4. Cool mixture.
- 5. Add remaining ingredients.
- 6. Pour into a medium-size mold or 2 small molds sprayed with Pam or vegetable oil.
- 7. Chill until set (approximately 3 hours).
- 8. Loosen mousse around edges of mold, place plate on top of mold, and invert to release the mousse.
- 9. Garnish with fresh parsley annd serve with plain crachers.
CRAB OR SHRIMP MOUSSE

- Spray a 2-quart mold with cooking spray. Combine shrimp, celery, bell pepper, onion, salt, lemon juice, Worcestershire, and Tabasco. Mix well and let stand to blend flavors. Combine soup and cream cheese in double boiler. Heat and stir until cheese melts. Soften gelatin in cold water for 5 minutes. Add to soup mixture. Remove from heat and cool. When mixture begins to thicken, blend in mayonnaise. Stir in shrimp mixture, spoon into mold, and chill. Serve with crackers, or may be used as a salad served on lettuce leaves.

Steps:
- Drain shrimp and rinse well. Set aside.
- Bring undiluted soup to a low boil (watch not to splatter).
- Dissolve the gelatin in 1/2 cup warm water, add to soup and stir well.
- Beat cream cheese and mayonnaise together.
- Add the tomato soup and beat mixing well.
- Fold in celery and onion with a wooden spoon.
- Fold in the shrimp, being careful not to break shrimp.
- Pour into a nice mold and refrigerate for several hours or overnight.
- Serve with party crackers that aren't heavily flavored.

- Combine tomato juice, cream cheese, onion juice, lemon juice, salt, and hot sauce in top of a double boiler. Cook over boiling water until cheese melts, stirring constantly.
- Dissolve gelatin in cold water; add to tomato juice mixture, stirring well. Remove from heat; cool. Add shrimp, crab meat, green pepper, mayonnaise, olives, celery, and pimiento; mixing well. Gently fold in whipped cream.
- Pour mixture into an oiled 5 1/2-cup fish mold; chill several hours or overnight. Unmold onto a lettuce-lined serving plate. Serve as a salad with Chilled Steamed Asparagus, if desired.
