Steps:
- Preheat the oven to 350˚. Spread the walnuts on a baking sheet and bake until toasted, about 12 minutes. Let cool, then chop.
- Meanwhile, combine the cranberries, beet, sugar, lemon zest, 1/2 teaspoon salt and a few grinds of pepper in a food processor. Pulse until finely chopped.
- Scrape the cranberry relish into a bowl. Stir in the walnuts, apple, parsley and dill. Refrigerate at least 2 hours and up to 1 day.
GLAZED GOLDEN BEETS WITH CRANBERRIES

Steps:
- 1 Melt the butter in a large saute pan over medium heat
- 2 Add the onion and a small pinch of salt and stir to coat; cook, stirring occasionally, for 3 to 4 minutes, until the onion is soft
- 3 Add 1/2 cup of the chopped dried cranberries, the orange zest, brown sugar and broth, stirring to combine
- 4 Season lightly with salt
- 5 Stir in the beets
- 6 Increase the heat to medium-high; once the mixture comes to a boil, reduce the heat to medium; cover and cook for 20 to 25 minutes or until the beets become tender, adjusting the temperature as needed to maintain gentle bubbling at the edges
- 7 If the broth starts to reduce to a glaze before the beets are tender, add water as needed so the beets can finish cooking
- 8 Uncover; if the broth has not yet reduced to a glaze, increase the heat to medium-high so the liquid reduces
- 9 Transfer the beets and their glaze to a serving dish
- 10 Sprinkle with the remaining 2 tablespoons of chopped cranberries
- 11 Serve right away

Steps:
- Heat oven to 375°F. In large bowl, stir meatball ingredients until well mixed. Shape into 1-inch balls; place in ungreased 15x10x1-inch pan.
- Bake 25 to 30 minutes or until meatballs are thoroughly cooked and no longer pink in center.
- Meanwhile, in 3-quart saucepan, stir sauce ingredients until well blended. Heat to boiling over medium heat. Reduce heat to low; simmer 5 minutes, stirring occasionally.
- Add meatballs to sauce; stir to coat. Cook over medium heat about 5 minutes, stirring occasionally, until thoroughly heated. Thread cranberries on toothpicks; stick toothpicks in meatballs to serve.

- If making a ham, score the ham, and stud with the whole cloves. In a small saucepan over medium heat, combine the cranberry sauce, orange zest, brown sugar, red wine, and mustard. Stir to blend. Bring to a boil, then remove from heat and set aside. If using the sauce for turkey, mix the whole cloves into the sauce while cooking.

CRANBERRY GLAZE

Steps:
- In a medium saucepan, melt butter over medium heat. Add shallot, and cook until translucent, stirring occasionally, about 2 minutes. Add sage leaves and juniper berries; cook, stirring, 1 minute. Add cranberries, maple syrup, apple cider, jelly, salt and pepper. Raise heat to medium-high, and simmer until cranberries are soft and starting to burst, about 3 minutes.
- Transfer cranberry mixture to a food processor, and puree until smooth. Pass puree through a fine sieve into a small saucepan.
- Return glaze to stove, and simmer gently over medium heat until it has thickened, about 10 to 15 minutes; you should have about 1 1/4 cups. If glaze seems too thick, thin it with a little apple cider. Keep warm until ready to use.
