CRANBERRY-BEET RELISH



Cranberry-Beet Relish image

3/4 cup walnut halves
1 pound cranberries, thawed if frozen
1 medium red beet, peeled and chopped
1/2 cup sugar
1 teaspoon finely grated lemon zest
Kosher salt and freshly ground pepper
1 Gala or Fuji apple, finely chopped
3 tablespoons chopped fresh parsley
1 tablespoon chopped fresh dill

Steps:

  • Preheat the oven to 350˚. Spread the walnuts on a baking sheet and bake until toasted, about 12 minutes. Let cool, then chop.
  • Meanwhile, combine the cranberries, beet, sugar, lemon zest, 1/2 teaspoon salt and a few grinds of pepper in a food processor. Pulse until finely chopped.
  • Scrape the cranberry relish into a bowl. Stir in the walnuts, apple, parsley and dill. Refrigerate at least 2 hours and up to 1 day.

1 tablespoon unsalted butter
1/3 cup finely diced onion
Kosher salt
1/2 cup plus 2 tablespoons coarsely chopped dried sweetened cranberries (about 2 1/2 ounces)
Finely grated zest of 1 medium orange
2 tablespoons light brown sugar
1 cup homemade or no-salt-added chicken broth
1 pound peeled, trimmed golden beets, cut into 1/2-to-3/4-inch chunks
Water (optional)

Steps:

  • 1 Melt the butter in a large saute pan over medium heat
  • 2 Add the onion and a small pinch of salt and stir to coat; cook, stirring occasionally, for 3 to 4 minutes, until the onion is soft
  • 3 Add 1/2 cup of the chopped dried cranberries, the orange zest, brown sugar and broth, stirring to combine
  • 4 Season lightly with salt
  • 5 Stir in the beets
  • 6 Increase the heat to medium-high; once the mixture comes to a boil, reduce the heat to medium; cover and cook for 20 to 25 minutes or until the beets become tender, adjusting the temperature as needed to maintain gentle bubbling at the edges
  • 7 If the broth starts to reduce to a glaze before the beets are tender, add water as needed so the beets can finish cooking
  • 8 Uncover; if the broth has not yet reduced to a glaze, increase the heat to medium-high so the liquid reduces
  • 9 Transfer the beets and their glaze to a serving dish
  • 10 Sprinkle with the remaining 2 tablespoons of chopped cranberries
  • 11 Serve right away

1 1/2 lb lean (at least 80%) ground beef
1/2 cup finely chopped onion (about 1 medium)
1/2 cup Progresso™ plain bread crumbs
1/2 teaspoon salt
1/8 teaspoon pepper
2 eggs, slightly beaten
1 bottle (12 oz) chili sauce (1 1/2 cups)
1/2 can (16-oz size) jellied cranberry sauce (1 cup)
60 fresh cranberries, if desired

Steps:

  • Heat oven to 375°F. In large bowl, stir meatball ingredients until well mixed. Shape into 1-inch balls; place in ungreased 15x10x1-inch pan.
  • Bake 25 to 30 minutes or until meatballs are thoroughly cooked and no longer pink in center.
  • Meanwhile, in 3-quart saucepan, stir sauce ingredients until well blended. Heat to boiling over medium heat. Reduce heat to low; simmer 5 minutes, stirring occasionally.
  • Add meatballs to sauce; stir to coat. Cook over medium heat about 5 minutes, stirring occasionally, until thoroughly heated. Thread cranberries on toothpicks; stick toothpicks in meatballs to serve.

1 ½ cups cranberry sauce
1 tablespoon grated orange zest
½ cup packed brown sugar
⅓ cup red wine
1 teaspoon prepared mustard

Steps:

  • If making a ham, score the ham, and stud with the whole cloves. In a small saucepan over medium heat, combine the cranberry sauce, orange zest, brown sugar, red wine, and mustard. Stir to blend. Bring to a boil, then remove from heat and set aside. If using the sauce for turkey, mix the whole cloves into the sauce while cooking.
  • To glaze meat, use half of the glaze before roasting, and use the remaining to baste during the last 30 minutes of cooking.

1 tablespoon unsalted butter
1/2 shallot, finely chopped (about 2 teaspoons)
2 fresh sage leaves
1 teaspoon whole juniper berries
1 cup fresh or thawed cranberries
2/3 cup pure maple syrup
2/3 cup apple cider, plus more if needed
1/2 cup red-currant jelly
1/4 teaspoon coarse salt
Pinch of freshly ground pepper

Steps:

  • In a medium saucepan, melt butter over medium heat. Add shallot, and cook until translucent, stirring occasionally, about 2 minutes. Add sage leaves and juniper berries; cook, stirring, 1 minute. Add cranberries, maple syrup, apple cider, jelly, salt and pepper. Raise heat to medium-high, and simmer until cranberries are soft and starting to burst, about 3 minutes.
  • Transfer cranberry mixture to a food processor, and puree until smooth. Pass puree through a fine sieve into a small saucepan.
  • Return glaze to stove, and simmer gently over medium heat until it has thickened, about 10 to 15 minutes; you should have about 1 1/4 cups. If glaze seems too thick, thin it with a little apple cider. Keep warm until ready to use.
