SPICED MAPLE CRANBERRY FRENCH TOAST BAKE
Lazy weekend mornings or just cozy winter mornings, it definitely calls for this easy Spiced Maple Cranberry French Toast that is prepped and refrigerated overnight, all ready for you to just pop it in the oven as you wait for your morning coffee to be done. This is perfect as a make ahead Christmas morning breakfast as well.

Steps:
- Grease a baking pan with butter. Scatter a few cranberries into the pan.
- Tear up the brioche roughly and place it tightly all throughout the pan. Now scatter the remaining cranberries on to the brioche, tucking a few in between the pieces of bread as well.
- In a medium bowl, beat the eggs well. Add the milk, maple syrup, vanilla, cinnamon and all spice. Beat well.
- Pour this mixture all over the brioche and cranberries.
- Wrap tightly with a cling wrap and refrigerate overnight.
- Preheat oven to 350F. Place the casserole out of the refrigerator while the oven preheats.
- Remove cling wrap and bake uncovered for 25 minutes. Cover with aluminium foil and bake for another 15 minutes, till most the cranberries have burst.
- Serve warm with whipped cream, warm maple syrup and powdered sugar dusted on top.

RASPBERRY BAKED FRENCH TOAST

- Grease a 9 x 13 x 2-inch oval baking dish with the butter and set aside. In a large bowl, whisk together the eggs, half-and-half, 1/3 cup of granulated sugar, the brown sugar, vanilla, orange zest, and salt.
- Spread half of the diced bread in the prepared baking dish. Sprinkle on the raspberries in one layer. Top with the rest of the bread and pour on the egg mixture, pressing down lightly to moisten the bread. Sprinkle with the remaining 2 tablespoons of sugar, cover with plastic wrap, and refrigerate for 1 hour.
- Preheat the oven to 350 degrees. Place the baking dish on a sheet pan and bake it for 60 to 70 minutes, until the custard is set and the top is puffed and browned. Check after 45 minutes; if the top is getting too browned, cover it lightly with aluminum foil. Cool for 10 minutes, sprinkle with confectioners' sugar, dust with extra orange zest, and serve warm with maple syrup.
BAKED FRENCH TOAST WITH STREUSEL TOPPING AND CRANBERRY MAPLE SYRUP

- Grease an 8-inch cast iron skillet or other round 8-inch pan with the tablespoon of butter. Line the slices of bread in the pan, point side-up. In a bowl, whisk together the eggs, milk, sugar, and vanilla. Pour over the bread slices, making sure every slice is moistened. Cover with plastic wrap and chill in the fridge for at least 2 hours and up to overnight.
- When ready to bake the french toast, preheat oven to 350°F.
- In a medium bowl, combine the flour, brown sugar, cinnamon and salt. Add the butter and use a pastry blender or a pair of knives to cut the butter into the dry ingredients until they are the size of very small peas. (Note: this step can also be done the night before. Store topping in the fridge.)
- Sprinkle the streusel topping over the bread slices. Bake until the topping is golden and the center is set, about 35-40 minutes. Let cool 20 minutes before serving.

- Arrange half the bread in a single layer in a greased 13x9-in. baking dish; top with cream cheese and spoonfuls of cranberry sauce. Top with remaining bread., In a large bowl, whisk eggs, milk, 1/3 cup syrup, cinnamon and nutmeg until blended. Pour over casserole. - In a nonstick skillet scramble 2 eggs in 1 tsp butter till done to your liking.
- Remove eggs and set aside and wipe out skillet.
- Assemble the sandwiches with one slice of swiss cheese, 2 slices of ham, 1 scrambled egg, top with another slice of cheese.
- Break remaining egg into a bowl with 1 tsp milk and mix well.
- Brush the sandwiches liberally with the egg wash with a pastry brush (but don't saturate the bread) and grill over medium/medium high heat in a nonstick skillet in 1 tsp of butter till golden brown. (grill the egg side down first and the melted cheese will help hold the sandwich together when it is time to flip it)Add another tsp butter and flip carefully to grill other side until golden.
- Serve with grape jelly or maple syrup on the side.

- First allow your sliced bread to sit at room temperature for approximately 1 hour to allow the surfaces to dry out.
- In a wide bowl, beat your eggs with your maple syrup until the mixture is slightly thickened.
- Beat in the milk, vanilla, nutmeg and salt.
- Place your bread slices in the mixture and allow them to soak in the mixture for approximately 5 minutes until saturated well.
- Next you will want to preheat your skillet over medium heat and add 2 Tablespoons of butter.
- Once your butter has melted reduce your heat to medium-low and saute bread slices for about 5-6 minutes per side, making sure that you flip each slice over every 2 minutes or so to make sure that they brown evenly.
- You may have to cook in 2 batches if you use a smaller skillet.
- Sprinkle with confectioners' sugar, and place random berries around the plate for a nice look and tasty meal.

- Beat cream cheese, 1/4 cup sugar, vanilla and cinnamon in large bowl with mixer until blended. Add eggs, 1 at a time, mixing well after each addition. Gradually beat in milk.
- Arrange bread on bottom of 13x9-inch baking dish sprinkled with cooking spray; sprinkle with 1 cup cranberries. Pour cream cheese mixture over cranberries. Let stand 15 min.
