ORANGE RICE RECIPE WITH CRANBERRIES
A quick and easy orange rice recipe using boil-in-bag Basmati rice.

Steps:
- Cook the rice according to the directions on the box.
- In a frying pan, brown the onion.
- Lower the heat and add the orange juice, orange zest, ginger, and cranberries to the onion. Cook for 30 seconds.
- Add the cooked rice the frying pan and cook until the excess liquid from the frying pan has been cooked off, approximately 1 -2 minutes.
- Serve while warm.
CRANBERRY RICE WITH CARAMELIZED ONIONS

- In a large saucepan, bring broth to a boil. Add the wild rice. Reduce heat; cover and simmer for 10 minutes. Add the brown rice; cover and simmer for 45-50 minutes or until rice is tender and liquid is absorbed., In a large skillet over medium heat, cook the onions and brown sugar in butter until golden brown, stirring frequently. Add the cranberries, orange zest and rice; heat through.

CRANBERRY ORANGE RICE
This is a good side dish when you're sick of the same old, same old. Be warned, it has a very strong cranberry flavor. If you don't like cranberries you won't like this!

Steps:
- Bring orange juice to a boil on a large saucepan, remove from heat.
- Stir in rice, cranberries, almonds and parsley.
- Cover and let stand 10 minutes.
- Fluff rice with fork before serving.
CRANBERRY AND ORANGE WILD RICE
Steps:
- Put cranberries in a medium bowl and pour in enough hot tap water to cover. Set aside while you make the rice.
- In a medium pot over medium-high heat, add the water, orange juice, and butter, and bring to a boil. Stir in the rice, and the included contents of the seasoning packet, and return to a boil. Turn the heat to low, cover, and cook until the rice is tender, about 20 to 25 minutes. Drain the cranberries and add them to the rice along with the orange zest, and almonds. Gently stir them in, fluffing the rice. Transfer the rice to a serving bowl, cover and keep warm until ready to serve.
CRANBERRY-ORANGE RELISH
Steps:
- Bring the sugars, syrup, water, cinnamon and nutmeg to a boil. Reduce to a simmer and cook gently 5 minutes. Add the cranberries and continue to simmer, uncovered, until half the berries "pop". Remove from the heat and stir in the orange segments. Cool, stir in the walnut pieces and serve.
CRANBERRY ORANGE RICE PILAF

- Melt olive oil and butter in a Dutch oven or deep sauté pan over medium heat. Add onion and garlic; cook, stirring often, until the onion is translucent and garlic is fragrant, about 4-5 minutes.
- Add the rice to the pan and stir to coat with the oil and butter. Continue to cook, stirring often, until the rice is toasted and nutty, about 2 minutes.
- Stir in the white wine. Allow the wine to reduce and absorb into the rice, about 1 minute. Add the chicken stock, thyme, Pure Orange Extract, salt and pepper and stir to combine.
- Bring the mixture to a boil. Reduce the heat to low and cover the pan. Cook for 30-35 minutes, or until the rice is tender and has absorbed all of the liquid.
- Fold in the pecans, cranberries, and orange zest. Season with salt and pepper to taste.

CRANBERRY ORANGE RELISH

- Wash the fresh cranberries, and grind them in a meat grinder using a fine blade or process in a food processor until the cranberries are finely chopped.
- Cut the oranges into eighths, and grind or process until finely chopped.
- Combine fresh cranberries, oranges, pecans, dried cranberries, maple syrup, Grand Marnier, sugar and nutmeg; stir well, and refrigerate at least an hour but up to 3 or 4 days.
EASY CRANBERRY & ORANGE RELISH

- Tip the cranberries into a large pan with the orange juice and sugar, and bring to the boil. Turn down the heat to medium and bring to a gentle simmer, then continue to cook for 10 mins until the cranberries become plump and sticky.
- Tip the mixture into a blender, blitz to a purée, then return to the pan and simmer over a low heat for 5 mins until thick and jammy. Leave to cool and tip into a serving dish or jar. Will keep in the fridge for four days or freezer for up to six months.

- Combine the rice and the zest in a 3-quart saucepan and cook rice according to package directions.
- Combine cranberries and orange juice in a small saucepan. Bring to a simmer over medium heat. Simmer 7 minutes or until juice is absorbed. Set aside.
- Add the milk, evaporated milk, sugar and salt to the rice Cover and stir over medium-low heat about 40 minutes until slightly thickened.
- Stir reserved cranberries into rice mixture. Cool to room temperature. Refrigerate until serving time.
- NOTE: You can also use the rice from Chinese take-out in this recipe!

- With a vegetable peeler, pare skin (orange part only) from oranges. Cut peel into thin strips; you should have about 1/2 cup. Reserve fruit for garnish or another use.
- In a 1- to 1 1/2-quart pan, combine orange peel and 3 cups water. Bring to a boil, then reduce heat and simmer until peel has lost its sharp bitter taste, 3 to 4 minutes; drain. Return peel to pan and add 1/2 cup water and sugar; bring to a boil, then reduce heat and simmer until peel is shiny and translucent, about 15 minutes. Strain; reserve syrup for another use.
- Meanwhile, in a 5- to 6-quart nonstick pan over medium heat, stir almonds until golden, 4 to 5 minutes; pour from pan. Add 1 tablespoon butter, 1 tablespoon water, and the cranberries to pan; stir until cranberries are puffy and beginning to brown, 2 to 3 minutes. Remove from pan and wash pan.
- Add 2 quarts water and 1/2 teaspoon salt to pan; bring to a boil over high heat. Add rice and boil, uncovered, until slightly translucent but still firm to bite, 5 to 8 minutes. Pour into fine strainer or colander (lined with cheesecloth if holes are large). Rinse rice and drain well. Rinse and dry pan.
