Wok-Seared Chicken Tenders with Asparagus & Pistachios image

Here's an East-meets-West stir-fry that will soon become a family favorite. Serve it over rice or noodles, with a simple salad of arugula and orange sections dressed in a light vinaigrette.

1 tablespoon toasted sesame oil
1 1/2 pounds fresh asparagus
1 pound chicken tenders
4 scallions
2 tablespoons fresh ginger
1 tablespoon oyster-flavored sauce
1 teaspoon chile-garlic sauce (see Tip)
1/4 cup shelled salted pistachios

Steps:

  • Heat oil in a wok or large skillet over high heat. Add asparagus; cook, stirring, for 2 minutes. Add chicken; cook, stirring, for 4 minutes. Stir in scallions, ginger, oyster sauce and chile-garlic sauce; cook, stirring, until the chicken is juicy and just cooked through, 1 to 2 minutes more. Stir in pistachios and serve immediately.

2 tablespoons sesame oil
1 tablespoon cooking oil
2 boneless chicken breasts, cut in strips
1/4 teaspoon ground ginger
1 tablespoon black bean sauce
1 -2 garlic clove, minced
1 lb asparagus, cut in 1-inch pieces
4 green onions, sliced
1 cup chicken broth
2 tablespoons soy sauce
1 teaspoon cornstarch

Steps:

  • Heat 1 T. sesame oil and 1 T. cooking oil in wok. Add chicken; sprinkle with ginger. Stir-fry; remove and keep warm.
  • Heat 1 T. sesame oil in wok. Add black bean sauce and garlic. Stir-fry 1 minute. Add asparagus and onions; stir-fry 3-4 minutes. Add broth; cover and steam 5 minutes, until tender.
  • Return chicken to wok. Mix soy sauce with cornstarch. Pour into wok and stir to thicken mixture.

1 Tbls. oyster flavored sauce
1 tsp. chile-garlic sauce
1/4 c. shelled salted pistachios, chopped

Steps:

  • Heat oil in a wok or large skillet over high heat. Add asparagus; cook stirring for 2 min. Add chicken; cook, stirring for 4 min. Stir in scallions, ginger, oyster sauce and chile garlic sauce; cook, stirring until the chicken is juicy and just cooked, 1-2 min. Stir in pistachios and serve immediately.

1 pound medium-thick asparagus
2 tablespoons fresh lemon juice
1/2 tablespoon mustard
2 tablespoons extra-virgin olive oil
2 cloves garlic, sliced
Salt and freshly ground black pepper
1/3 cup chopped scallions

Steps:

  • Snap off the ends of the asparagus where they break naturally and peel the spears. Slant-cut them about one-inch long.
  • Beat the lemon juice and mustard and set aside.
  • Heat the oil in a wok or skillet. Add the garlic, stir-fry about a minute, then add the asparagus and stir-fry about 5 minutes, until they are crisp-tender, lightly seared but still bright green. Stir in the lemon-mustard.
  • Season to taste with salt and pepper, stir in the scallions and stir-fry another few seconds. Transfer to a serving dish.
