BETTY'S CREAM CHEESE POUND CAKE
This is a quick and easy recipe that starts with a cake mix so it goes together really fast. The texture is lighter than most pound cakes. Top it with some fruit, whipped cream, chocolate sauce, nuts, or a little bit of everything or anything. It's good for those unexpected guests since it goes together so quickly. I found this on the Betty Crocker site.

Steps:
- Preheat oven to 350 degrees.
- Grease and flour a bundt or tube pan.
- Mix all ingredients, except powdered sugar on low for 1 minute.
- Beat on high 2 more minutes until thickened and smooth.
- Pour into prepared pan.
- Bake 38-43 minutes until toothpick in center comes out clean.
- Cool 15 minutes.
- Then turn upside down on a wire rack and remove from pan.
- Cool completely.
- Sift powdered sugar over the top if desired.

- Preheat oven to 325°. Grease and flour a 10-in. tube pan. In a large bowl, cream butter, sugar and cream cheese until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. In a small bowl, whisk flour and baking powder. Gradually beat into creamed mixture. Transfer to prepare pan. Bake until a toothpick inserted in center comes out clean, 80-90 minutes. Cool in pan 10 minutes before removing to a wire rack to cool completely. Serve with desired toppings.

CREAM CHEESE POUND FROM CAKE MIX
This is my cousin's favorite cake. So easy to make in the morning. Just add all ingredients and mix then bake. Sometimes I'll use almond extract and vanilla. Just one teaspoon of each for a little change.

Steps:
- 1. Preheat oven to 350. Lightly mist a 10 inch tube pan with oil and flour. I use Pam for baking. To soften the cream cheese either warm in microwave or allow to reach room temperature. Makes for easy mixing.
- 2. Place cake mix, soften cream cheese, eggs, water, sugar, oil, and vanilla extract in a large mixing bowl. Blend for 1 minute on low. Scrap down sides and blend for 2 minutes on medium. The batter should be well blended. Pour the batter into the prepared pan.
- 3. Bake for 35 to 40 minutes or until golden brown and spring back when lightly pressed.
- 4. Slice the cake when still a little warm. Great with coffee!

- Preheat oven to 325 degrees F (160 degrees C) grease and flour a 10 inch tube pan.
- In a large bowl, cream butter and cream cheese until smooth. Add sugar gradually and beat until fluffy.
- Add eggs two at a time, beating well with each addition. Add the flour all at once and mix in. Add vanilla.
- Pour into a 10 inch tube pan. Bake at 325 degrees F (160 degrees C) for 1 hour and 20 minutes. Check for doneness at 1 hour. A toothpick inserted into center of cake will come out clean.

Steps:
- Bring cream cheese to room temperature. (This will keep the batter from becoming lumpy.).
- Place all ingredients in large mixing bowl.
- Mix with electric mixer on low for one minute until all combined.
- Mix at medium for two minutes.
- Batter should look uniform and thick.
- Bake in a greased and floured 10 inch tube pan at 350°F for about 45 minutes or until cake springs back when touched.
- Serve alone or with berries and sweetened whipped cream.
- The cake is rich on its own.

- Preheat oven to 325°F (163°C). Not 350°F. Generously grease a 10-12 cup Bundt pan with butter or nonstick spray.
- Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter on high speed until smooth and creamy, about 2 minutes. Scrape down the sides and up the bottom of the bowl with a rubber spatula. Add the cream cheese and beat on high speed until completely smooth and combined, about 1 minute. Add the sugar and beat on high speed until combined, about 1 minute, then add the sour cream and vanilla and beat on high speed until combined and creamy. Scrape down the sides and up the bottom of the bowl with a rubber spatula.
- On low speed, beat the eggs in 1 at a time allowing each to fully mix in before adding the next. Careful not to overmix after the eggs have been added. Once the 6th egg is combined, stop the mixer and add the cake flour, baking powder, and salt. Beat on medium speed *just* until combined. Do not overmix. Using a rubber spatula or sturdy whisk, give the batter a final turn to make sure there are no lumps at the bottom of the bowl. The batter will be a little thick and very creamy.
- Pour/spoon batter evenly into prepared pan. Bang the pan on the counter once or twice to bring up any air bubbles. Bake for 75-95 minutes. Loosely tent the baking cake with aluminum foil halfway through bake time to ensure the surface does not over-brown. The key to pound cake is a slow and low bake time. Use a toothpick to test for doneness. Once it comes out completely clean, the pound cake is done. This is a large heavy cake so don’t be alarmed if it takes longer in your oven. If it needs longer, bake longer.
