- In a blender, combine the first eight ingredients; cover and process until smooth. Store in the refrigerator., For each serving, place coffee in a mug. Stir in 1/3 cup Irish cream. Heat mixture in a microwave if desired.

HOMEMADE IRISH CREAM RECIPE
This homemade Irish Cream recipe is much simpler than other recipes. And the result is an Irish Cream with perfect flavor and texture!

- To begin making this Irish cream recipe, mix the cream with the coffee grounds, cocoa powder, and vanilla, and place into a large wide-bottomed saucepan. Heat the cream over medium heat until it begins to steam (but before it begins to simmer). Reduce the heat as necessary to hold the cream at this temperature for 20 minutes, stirring often. (The color of the cream will darken as it infuses with the coffee and chocolate.)
- After 20 minutes of steeping, remove the cream from the heat. Strain the cream through a fine-mesh strainer lined with a few layers of cheesecloth, to catch all the coffee grounds.
- Stir the honey into your strained cream. Then stir in the Irish whiskey.
- Stir the Irish Cream occasionally as it cools, uncovered, on the counter. Once cool, transfer it to a sealed container. Store in the refrigerator until ready to use.
- Homemade Irish Cream Liqueur should be used within 2 months. If you won't use it within that time, I'd recommend freezing it to make some tasty Irish Cream ice cream. It will last a bit longer that way!

SCOTTISH CREAM (AS OPPOSED TO IRISH CREAM)
I started making our own supply of Irish Cream a few years ago, but noticed that we never use Irish whiskey, we only have the Scottish stuff in our house, thanks to good friends and Duty Free shopping.

Steps:
- Dump all the ingredients in a blender and whizz on high for 30 seconds.
- Bottle in a tightly sealed container and keep in the fridge.
- Be sure the shake the bottle well before serving.
- This will keep for up to two months in the fridge.
- Note: Don't use heavy cream, it tends to separate.
- If you can't find light cream, use half and half, or whole milk.
HOMEMADE IRISH (WHISKEY) CREAM
This recipe turns out with the best flavour if you make it ahead and let it chill for 24 hours before serving. If you'd rather not serve it over crushed ice, chill the glass while you prepare the drink. Store leftovers in the refrigerator up to two months in an airtight container. If the Irish cream has been sitting in the refrigerator, shake it before serving.

- 1. Using a baking tray with baking paper on it, toast the oatmeal and almonds at 300 Fahrenheit for 5 to 10 minutes, mixing repeatedly, making sure not to let the mixture burn.
- 2. Whip the cream but not overly so and stir in the honey.
- 3. Next, mix in the whiskey, oats, almonds and lemon juice.
- 4. Mix well and then pour the mixture into long serving glasses.
- 5. Chill and serve cold.
