CREAMSICLE® COCKTAIL
In June of 2020 we were still dealing with the Coronavirus ravaging our country and making us pretty much stir-crazy. Luckily in California the lockdown rules were loosening, and my husband and I were able to host some good friends at our home for the weekend. The weather was heating up and while we were spending the day by the pool (pretending we were at an exotic resort) my friend asked if I could make her a foofie drink. I went inside, took an inventory of my ingredients, and the COVID Creamsicle® cocktail was created.

Steps:
- Pour vodka into a chilled single rocks glass or stemless wine glass and add ice. Add orange sherbet and lemon sorbet. Top with lemon-flavored sparkling water and orange-flavored carbonated water. Use a long-handled or tall drink spoon to quickly stir together until completely blended.
- Top with Prosecco and garnish with lemon slice.

- Scoop ice cream into an 8x4x2 1/2" loaf pan; pack ice cream along one long side to fill half of pan. Cover and freeze until firm, at least 1 hour.
- Meanwhile, bring sugar and 1 1/4 cups water to a boil in a small pot, stirring to dissolve sugar. Remove from heat; add tea bags and zest. Let steep for 10 minutes. Remove tea bags; discard. Stir in grapefruit juice. Cover and chill grapefruit mixture until cold, about 1 hour.
- Process grapefruit mixture in an ice cream maker according to manufacturer's instructions. Pour sorbet into empty side of pan alongside ice cream. Cover and freeze until firm, about 2 hours.
- To serve, spoon across ice cream and sorbet to form swirled scoops.
CREAMSICLE SORBET

- Mix cream, vanilla, and Splenda. Refrigerate. Mix juice and sugar. Freeze 1 hour. Stir. Freeze an additional three hours. Whisk cream until softly whipped. Spoon into bowl. Scrape frozen juice flakes over cream with a fork.

CREAMY PINEAPPLE SORBET
A light and cooling low fat treat! For a richer sorbet, replace the yogurt with 3/4 cup half-and-half or heavy whipping cream.

- In a food processor with knife blade attached, pulse frozen pineapple until it resembles finely shaved ice, occasionally scraping down side of bowl with rubber spatula. (If pineapple is not finely shaved, sorbet will not be smooth.).
- Add yogurt and sugar to pineapple and blend until mixture is smooth and creamy, occasionally scraping down side of bowl with rubber spatula.
- Serve immediately for a creamy texture or, freeze and serve later for a firmer texture. If made ahead, remove from freezer 5-10 minutes before serving.
- Scoop sorbet into dessert bowls or martini glasses. Garnish with fresh berries if desired.
