Creamy Mushroom And Bacon Soup Recipe

  1. bacon
  2. shallots
  3. button mushrooms
  4. garlic
  5. fresh rosemary leaves
  6. flour
  7. chicken broth
  8. marsala wine
  9. half-and-half
  10. salt
  11. pepper


  1. in a large saucepan or dutch oven pan , cook the bacon over medium heat until crispy
  2. remove the bacon with a slotted spoon and set aside
  3. add the diced shallots to the bacon grease and cook for about 3 minutes , until tender
  4. add the mushrooms , rosemary and garlic to the pan
  5. cook for about 5 minutes , until the mushrooms are tender and golden
  6. return the cooked bacon to the pan
  7. sprinkle the flour over the mushrooms and bacon and stir to coat
  8. cook for about 1 minute , stirring constantly
  9. pour the chicken broth into the pan
  10. if desired , add a splash of marsala wine
  11. stir to combine
  12. bring the mixture to a simmer , stirring frequently
  13. it should begin to thicken as it simmers
  14. simmer for a few minutes , then reduce heat and add the half and half
  15. remove about a cup of the soup with a bunch of the mushrooms when cool enough to safely handle , blend the cup of soup until smooth
  16. return the blended mixture to the pan with the rest of the soup
  17. or just use a stick blender right in the pan to make a lovely smooth soup
  18. season with the salt and pepper
