6 oz. reduced-fat cream cheese (Neufchatel), softened
1/3 c. Grated Parmesan cheese
3 tbsp. milk
2 cloves garlic, crushed with press
1 tbsp. butter, melted
1 recipe Easy Homemade Dough (link in step 1), or one 1 1/2-lb. ball pizzeria dough
12 oz. broccoli, coarsely chopped
4 oz. mozzarella, shredded

Steps:

  • Preheat oven to 475 degrees F. With mixer on medium speed, beat cream cheese, Parmesan, milk, garlic, butter, 1/4 teaspoon salt and 1 teaspoon pepper until smooth; spread all over Easy Homemade Dough. Top with broccoli and mozzarella.
  • Bake 25 to 30 minutes or until broccoli and crust are golden brown.

enough pizza dough for 1 large pizza
Alfredo Sauce (recipe below)
½ cup cooked chicken, diced
1 cup broccoli, finely chopped (asparagus would also be good)
3 green onions, thinly sliced
1½ cups mozzarella cheese

Steps:

  • Prepare pizza dough according to the recipe directions, but don't forget to add garlic powder, rosemary, and basil when mixing the dough.
  • While the pizza crust is baking, I make the Alfredo sauce and prepare the other ingredients.
  • After removing pizza crust from oven top with Alfredo sauce and chicken
  • Place broccoli and onions over chicken
  • Top with cheese
  • Place pizza back in the oven on a middle rack. Bake at 450 degrees for 8 -10 minutes or until cheese is melted and just begins to turn brown.

1 (3/4 pound) boneless skinless chicken breast
Kosher salt and freshly ground black pepper
2 tablespoons butter
1 clove garlic, minced
1 teaspoon red pepper flakes
1 tablespoon all-purpose flour, plus more for work surface
1 cup heavy cream
1/4 cup grated Parmesan
1 (16-ounce) ball pizza dough, store-bought
2 cups baby spinach, well washed and dried
1 cup grape tomatoes, red and yellow
1 cup grated mozzarella
Olive oil, for brushing crust

Steps:

  • Preheat the oven to 375 degrees F. Adjust racks to the middle of the oven. Put pizza stone in the oven to preheat while you begin the sauce.
  • Preheat a grill pan over medium heat.
  • Season the chicken with salt and pepper, to taste. Put the chicken on the grill pan and grill until cooked through. Remove to a cutting board and dice. Set aside.
  • Melt the butter in a medium-sized saucepan over medium heat. Add the garlic and red pepper flakes and cook until fragrant. Add the flour and cook until light blonde in color. Whisk in the cream, reduce the heat to low, and let simmer until thickened, about 2 minutes. Stir in Parmesan and season lightly with salt and pepper, to taste.
  • Flour your work surface and roll the pizza dough into a 13-inch diameter. Carefully remove the pizza stone from the oven and put the dough on top. Ladle the sauce to cover the bottom of the pizza. Evenly top with the baby spinach, grape tomatoes, grilled chicken and the mozzarella. Brush the edge of the crust with olive oil and season with salt and pepper, to taste. Bake the pizza until crisp and golden, about 25 minutes. Remove from oven and immediately top with another handful of spinach. Slice and serve.

  • Preheat an oven to 500°F, and set an oven rack in the lowest possible position. Lightly coat a pizza pan with nonstick cooking spray.
  • Stretch pizza dough into a round large enough to fit the pizza pan. Spread Alfredo sauce evenly over the pizza dough, then top pizza evenly with mozzarella cheeses and dusting of Parmesan cheese. Sprinkle a little more kosher salt on top of the pizza.
  • Transfer pizza to the oven on the lowest rack and cook until the crust is golden brown (bottom and crust) and the cheese is nice and bubbly (9 - 11 minutes). Finish the pizza with a sprinkling of chives.
