VIETNAMESE RICE PAPER ROLLS (SPRING ROLLS)

7 - 14 sheets of 22cm/8.5" round rice paper (Note 1)
11 small cooked prawns/shrimp (about 12cm/5" in length, unpeeled including the head)
50g / 1.5 oz dried vermicelli noodles
7 lettuce leaves - use a lettuce with soft leaves, like Oak or Butter Lettuce (Note 2)
14 mint leaves
1 cup bean sprouts
1 tbsp peanut butter, preferably smooth ((crunchy is ok too))
2 tbsp Hoisin Sauce
1 1/2 tbsp white vinegar (or lime juice)
1/3 cup milk ( (any fat %) (or water))
1 garlic clove, minced
1/2 tsp crushed chilli, samba oelak or other chilli paste, adjust to taste (optional)

Steps:

  • Peanut Sauce: Combine the Peanut Dipping Sauce ingredients. Mix briefly (it won't come together), then microwave for 30 seconds. Mix again until smooth. Set aside to cool. Adjust sour with vinegar, salt with salt and spiciness to taste. Thickness can be adjusted with milk or water once cooled.
  • Place vermicelli noodles in a bowl and cover with warm water for 2 minutes, then drain (or follow packet instructions).
  • Peel the prawns, slice in half lengthwise and devein (watch video).
  • Remove the crunchy core of the lettuce leaves (watch video).
  • Tip - LETTUCE BUNDLE (Note 4): Place some vermicelli noodles and bean sprouts in a lettuce leaf, then roll it up, finishing seam side down. Repeat.
  • Fill a large bowl with warm water. The bowl doesn't need to be large enough to fit the whole rice paper in one go.
  • Place two rice papers together (if using 2). Note which side is the smooth side - this is supposed to be the outside of the spring roll. Submerge the rice papers into the water (both of them at the same time, together) for 2 seconds. If your bowl isn't large enough to fit the whole rice paper in one go, that's fine, just rotate it and count 2 seconds for each section you submerge into the water.
  • Place both the rice papers (one on top of the other, they will stick together) on a board or the counter with the smooth side down.
  • On the top part of the rice paper, place 3 prawns with a mint leaf in between, as per the photo below.
  • Place the lettuce bundle with the seam side down onto the middle of the rice paper.
  • Fold the left and right edges of the rice paper in, then starting from the bottom, roll up to cover the lettuce bundle. Then keep rolling firmly. The rice paper is sticky, it will seal itself.
  • If you placed the ingredients on the rice paper as per the photo below, your rice paper rolls should look pretty with the prawn and mint leaves on the smooth side of the roll and the seam on the side or underside of the roll.
  • Serve immediately with the peanut dipping sauce.

6 Rice Paper Wrappers
50g Vermicelli Rice Noodles, cooked to packet instructions
100g Sriracha Tofu (CLICK THROUGH TO RECIPE)
1 Carrot, julienned
1/8 Red Cabbage, thinly shredded
1/2 English Cucumber, julienned
1/2 Red Capsicum / Bell Pepper, julienned
1/4 cup Fresh Cilantro
Peanut Hoisin Dipping Sauce

Steps:

  • Place a damp tea towel or dish cloth onto a clean surface and fill a bowl with warm water. Dip a rice paper wrapper in the water for 20 seconds or until softened, then lay the wrapper on top of the damp tea towel.
  • Pile your fillings up in the middle bottom of the wrapper (be careful not to overload), then fold the bottom and sides of the wrapper over the fillings like an envelope. Roll up tightly and set aside. *NOTE this step is clearly demonstrated in step by step photos in this post*
  • Repeat with the remaining wrappers and filling ingredients.
  • Serve with peanut hoisin dipping sauce.

Mix and match your fillings in dozens of ways for a fun, versatile gluten-free appetizer, main, or even dessert (option below!).

7-10 sheets rice paper
1/2 avocado (sliced)
1/4 cup each of green, red and yellow pepper (sliced)
1 zucchini (spiralized or finely sliced)
1 carrot (spiralized or finely sliced)
1 cucumber (spiralized or finely sliced)
1/2 cup red cabbage (shredded)
1/2 can chickpeas
Lettuce, fruits, edible flowers, fresh herbs like mint
120 g cellophane noodles (or thin rice noodles)

Steps:

  • You can watch the video in the post for visual instructions.First, prepare the noodles as per the package instructions. You can either boil them for some seconds or simply soak them in hot water for a couple of minutes. However, this will vary based on the type of noodle and the brand. Drain the hot water and rinse the noodles with cool water.Optional step: If you'd like to color your noodles, you can separate them into portions and mix them with the natural color of your choice. Pink = beet juice, Blue/turquoise = blue spirulina powder, Yellow= turmeric powder.
  • While the noodles cool, it's time to prepare the rest of your fillings. Finely chop, slice, shred, or spiralize the vegetables.
  • If you want to use chickpeas, I recommend crisping them up slightly in a saucepan with a bit of oil and soy sauce (GF or tamari).
  • First, place a damp kitchen towel onto your working surface.I've found this is the best way to avoid the rice paper from sticking to your surface.
  • Fill a large bowl or pot with water and completely dip one rice paper in the water for 2-3 seconds. Then shake off any excess water and place the rice paper flat onto the kitchen towel.
  • Place the cooled noodles and veggies about 1/3 of the way up the roll, leaving 1-2-inches of space on the sides.Whatever you place first (at the bottom) will be visible on top once the summer rolls are rolled up.
  • Fold in both sides, then roll from the bottom upwards until it's fully sealed (check the step-by-step-photos in the post). Be careful while doing this, as the rice paper is fragile and can tear. Repeat this step with the remaining fillings and rice paper wraps until they're all ready.If it tears, you can use a second rice paper to wrap the broken roll.
  • Serve the summer rolls with a Peanut Sauce or Hoisin Sauce. Enjoy!

2 large beets, cut into matchsticks
4 carrots, shredded (preferably multicolored)
1 large ripe avocado, sliced
1 English cucumber, cut into matchsticks
24 thin slices Parmesan cheese, sliced into strips
1 ½ cups kale
2 large radishes, cut into matchsticks
1 small bunch alfalfa sprouts
1 cup poppy seed salad dressing

Steps:

  • Put warm water into a shallow pan large enough to fit a rice paper wrapper. Soak 1 wrapper until softened; carefully transfer to a large cutting board or plate.
  • Arrange a portion of beets, carrots, avocado, cucumber, Parmesan cheese, kale, radishes, and sprouts in the center of the wrapper with tips of vegetables extending above the top. Fold the bottom of the wrapper as far over the filling as possible. Fold in each side; place on a plate. Repeat with the remaining wrappers and vegetables.
  • Pour 1/4 cup salad dressing into a small bowl; serve alongside 3 wrappers.

2 sheets rice paper (available in most grocery stores)
1/4 avocado, sliced lengthwise
1 carrot, grated
1 beet, steamed and sliced lengthwise
1/4 red bell pepper, sliced lengthwise
2 inches cucumber, sliced into long strips
1/4 cup baby spinach
2-3 sprigs fresh cilantro
1/4 cup glass noodles (optional)
salt/pepper to taste
1/2 cup raw almonds (or almond butter)
1/4 cup water
1 Tbsp fresh lemon juice
2 tsp maple syrup or agave nectar
2 tsp tamari
1/2 tsp crushed garlic
1/4 tsp fresh ginger
dash cayenne
dash salt

Steps:

  • Soak one piece of rice paper in warm water until soft and pattern in paper is less noticeable.
  • Pull out of water carefully, allow excess water to drain, and lay out on flat surface.
  • Arrange veggies in a row along the centre of rice paper. Add noodles first if using and greens last. Leave about 1 1/2 inches at both ends.
  • Fold in edges that meet the veggies and than wrap up sides.
  • Place second piece of rice paper in water to soften.
  • Pull out of water carefully, allow excess water to drain, and lay out on flat surface.
  • Place the first roll along centre of second piece of rice paper and wrap.
  • Enjoy with dipping sauce, or with your favourite pesto.
  • Place all ingredients in a blender and process until smooth.
  • Will keep in a stored container in the fridge for up to five days.
  • Can also be used as a salad dressing.

CRUNCHY VEGGIE RICE PAPER WRAPS

I just threw this together for an appetizer and they turned out as very tasty wraps - lots of crunch and peppy with the sweet chili sauce . It can be vegetarian by leaving out the crab or shrimp- still tasty. These may also be served as a side dish or as a course with an Oriental meal. I usually make the filling early in the day and roll the wraps within an hour or two before serving keep cool if you do these ahead. 1/2 cup green cabbage, finely chopped
1/2 cup fresh carrot, finely chopped

5 ounces imitation crabmeat (optional) or 5 ounces shrimp, chopped (optional)

Steps:

  • Mix all the ingredients except rice paper& Chili sauce Shortly before serving soften each rice paper wrap separately- Do this by submerging the wrap in a bowl of warm water for a minute of two.
  • When it is pliable it is ready, remove that one from the water and drop in another one.
  • Lay out a couple of paper towels and place the softened wrap on the towel.
  • Don't rub it just place it on the towel Place 1-2 tbsp of the veggie mix in the center of the wrap, add 1/2- 1 tsp sweet chili sauce.
  • Fold up the bottom then fold in the sides and roll to form a sealed roll.
  • Allow 3-5 per serving.

1 1/2 cups julienned vegetables ((such as carrots, red pepper, and cucumber))
1 bunch fresh cilantro
1 bunch fresh mint
4 ounces vermicelli or rice noodles ((the thinner the better))
8-10 whole spring roll rice papers
1/3 cup salted creamy almond butter
1 Tbsp reduced sodium soy sauce ((tamari if gluten-free))
1-2 Tbsp brown sugar, agave, or honey if not vegan ((depending on preferred sweetness))
1 Tbsp fresh lime juice
1/2 tsp chili garlic sauce
Hot water ((to thin))
8 ounces extra-firm tofu ((drained and thoroughly dried/pressed))
4 Tbsp sesame oil ((divided))
3 Tbsp cornstarch
2 1/2 Tbsp almond butter dipping sauce
1 Tbsp reduced sodium soy sauce ((tamari if gluten-free))
1 Tbsp brown sugar or agave nectar

Steps:

  • Start by preparing rice noodles in boiling hot water for about 10 minutes (read instructions on package), then drain and set aside.
  • Meanwhile, heat a large skillet over medium heat and cut pressed tofu into small rectangles. Toss in 3 Tbsp cornstarch and flash fry in ~3 Tbsp sesame oil (amounts as original recipe is written // adjust if altering batch size), flipping on all sides to ensure even browning - about 5 minutes. Remove from skillet and set aside.
  • Prep veggies and prepare almond butter sauce by adding all sauce ingredients except water to a small mixing bowl and whisk to combine. Add enough hot water to thin until a pourable sauce is achieved. Adjust flavors as needed (I often add a little more chili garlic sauce and brown sugar).
  • To add more flavor to the tofu, transfer ~2.5 Tbsp of the sauce to a small bowl and add an additional Tablespoon each of soy sauce, sesame oil and brown sugar or agave (amounts as original recipe is written // adjust if altering batch size) and whisk to combine.
  • Add tofu back to the skillet over medium heat and add "sauce/glaze," stirring to coat. Cook for several minutes or until all of the sauce is absorbed and the tofu looks glazed, stirring frequently (see photos). Set aside with prepared veggies and vermicelli noodles.
  • To assemble spring rolls, pour very hot water into a shallow dish or skillet and immerse rice paper to soften for about 10-15 seconds.
  • Transfer to a damp cutting board or damp towel and gently spread out edges into a circle. It may take a little practice, so don't feel bad if your first few attempts are a fail!
  • To the bottom third of the wrapper add a small handful of vermicelli noodles and layer carrots, bell peppers, cucumber, fresh herbs and 2-3 pieces of tofu on top (see photo). Gently fold over once, tuck in edges, and continue rolling until seam is sealed.
  • Place seam-side down on a serving platter and cover with damp warm towel to keep fresh. Repeat until all fillings are used up - about 8-10 spring rolls total (amount as original recipe is written // adjust if altering batch size).
  • Serve with almond butter sauce and sriracha or hot sauce of choice. I like to mix mine and go dip happy.
  • Leftovers store well individually wrapped in plastic wrap, though best when fresh.

1 cup sliced fresh mushrooms
1 tablespoon olive oil
2 garlic cloves, minced

1/4 cup chopped green onions
1/2 teaspoon ground cumin
1/2 teaspoon pepper

1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • In a large cast-iron or other heavy skillet, saute red pepper and mushrooms in oil until tender. Add garlic; cook 1 minute. Add the rice, beans, corn, green onions, cumin, pepper and salt. Cook and stir until heated through, 4-6 minutes. , Spoon 3/4 cup onto each tortilla. Sprinkle with cheese; drizzle with salsa. Fold sides of tortilla over filling; serve immediately.

These rolls are very delicious, easy to make and low fat. Fab as a starter, and people are always very impressed. They can be served cold, but I prefer to perpare them in advance, leave them in the fridge covered with a wet tea towel and then steam them for two minutes just before serving. I like to serve them with a sweet chili sauce and vietnamese coleslaw (I shall post this recipe also).

30 g rice vermicelli
1 cup cabbage, shredded
1 carrot, grated
1 tablespoon coriander, chopped
1 spring onion, chopped
1 tablespoon rice vinegar
1 tablespoon water
1 teaspoon caster sugar
1/2 teaspoon salt
1 garlic clove, minced
18 sheets circular rice paper

Steps:

  • Firstly, mix the rice vinegar, water, caster sugar, salt and garlic in a large bowl and leave to sit.
  • Soak the rice vermicelli in boiling water for about 10 minutes, until it is no longer hard (but not soggy!).
  • Add the noodles, cabbage, carrot, coriander and spring onions to the dressing and mix well.
  • Now set up your production line- get a flat bowl and fill it with hot water. Take a rice paper sheet and soak it in the water until it's soft- about 15 seconds.
  • remove it from the water and place on a clean tea towel. Spoon some of the mixture onto the rice paper.
  • Fold in the bottom first, then the sides, and roll to form a cigar shape.
  • Continue the same with the rest of the rolls.
  • These can be prepared well in advance and stored in the fridge under a wet tea towel- see the recipe description above for serving suggestions.

Warm water, for soaking rice paper wrappers
1 package rice paper wrappers, see Cook's Note*
1/4 cup cilantro leaves
1/2 cup julienned red bell pepper
1/2 cup julienned yellow bell pepper
1 cup snow peas, stringed and julienned
3 1/2 -ounce package enoki mushrooms
1 cup bean sprouts
1 recipe seasoned Buckwheat or Soba Noodles, recipe follows
1/4 cup pickled ginger
Kosher salt and freshly ground black pepper
2 tablespoons black sesame seeds
Orange-Chili Dipping Sauce, recipe follows
1 teaspoon sesame oil
1 teaspoon rice wine vinegar
1 cup cooked buckwheat noodles
1/2 cup freshly squeezed orange juice
3 tablespoons sugar
3 tablespoons soy sauce
2 teaspoons lime juice, about 1/2 lime
1 tablespoon sesame oil
1 tablespoon balsamic vinegar
1 teaspoon chili flakes
1 teaspoon kosher salt

Steps:

  • In a large bowl filled with warm water, soak 1 rice paper wrapper for about 20 seconds or until soft. Lay wrapper out on a tea towel to absorb excess water. Transfer wrapper to a flat surface. About 1/3 from the bottom of the wrapper, create a 3-inch long row by placing some cilantro leaves followed by some red pepper, yellow pepper, snow peas, mushrooms, bean sprouts, buckwheat noodles and a little ginger. Season, to taste, with salt and pepper. Sprinkle the top 1/3 of the rice wrapper with black sesame seeds. Carefully fold the bottom of the rice paper wrapper over the vegetables. Turn in the sides and continue rolling up from the bottom.
  • To serve, slice the roll in half on a bias. Serve with Orange-Chili Dipping Sauce.
  • In a medium sized bowl, whisk together the sesame oil and rice wine vinegar. Toss the cooked buckwheat noodles in the sesame mixture. Set aside.
  • Whisk together all the ingredients in a mixing bowl. Allow the sauce to stand for 30 minutes so that the flavors can infuse. Serve at room temperature.

  • Cook rice noodles according to package instructions. Rinse under cold water and drain over a colander.
  • In the meantime, prepare the peanut dipping sauce by adding all sauce ingredients except water to a small mixing bowl and whisk to combine. Add water by a tablespoon until desired consistency is achieved. Taste and adjust flavors as needed. Keep refrigerated until ready to serve.

  • GATHER AND PREPARE INGREDIENTS: Gather sliced vegetables and pat dry if wet. Gather cooked vermicelli and/or quinoa - set aside to cool. Gather hoisin, sesame seeds, rice wrappers, clean cutting board and plate/platter. Fill a medium bowl with 3-4 cups of hot (not boiling) water. Add about 1/2 cup beet juice or julienne cooked beets to turn water dark pink/red.
  • SOFTEN RICE WRAPPERS: Dip two rice wrappers at a time into the hot water with beet juice. Keep dipping and turning wrappers (holding them together) ensuring all parts are soaked. When rice wrappers soften in about 10 seconds (almost as soft as a cooked noodle), place carefully on cutting board.
  • FILL WRAPPERS: Lay some vermicelli or quinoa along length of wrapper, 2 inches from bottom edge. Place some cucumber, carrot, avocado on top. Squeeze a thin strip of hoisin sauce along the veggies. Add a couple of julienne beet strips (if desired) and basil leaves. Sprinkle with sesame seeds. The total filling should be about 1-1 1/2 inches thick.
  • TUCK AND ROLL: Fold the bottom of wrapper over filling and tuck snugly under filling. Be careful not to tear wrapper. Continue to tightly roll, tuck, roll, tuck until summer roll is complete. Wrapper is sticky so roll will stay together.

  • Soak a single rice paper in the hot water until it's completely soft and flexible. This could take anywhere from a few seconds to more than 30 seconds depending on the brand/type of rice paper. I have best results soaking them for about 30 seconds.
  • Lift the side of the rice paper that's closest to you, gently pull it forward (away from you) over the fillings. Hold the wrap firmly while you fold in each end of the wrap. Continue rolling to seal the seam. Refer to the GIF above for a demo.
  • Combine all ingredients in a bowl and whisk vigorously OR combine all ingredients in food processor and pulse.
