Ultra Creamy Mashed Potatoes image

These ultra creamy mashed potatoes get a hint of cheesiness from CAMPBELL'S Condensed Cheddar Cheese Soup.

Number Of Ingredients 6

5 russet potatoes, peeled and cut into 1" (2.5 cm) pieces (about 10 cups chopped)
1 can (284 mL) CAMPBELL'S® Condensed Cheddar Cheese Soup
3/4 cup 185 mL whipping cream
2 tbsp 30 mL butter
1 dash Generous dash black pepper, ground
2 tbsp 30 mL chives, chopped (optional)

Steps:

  • Cook potatoes in a large saucepan of salted, boiling water until fork tender. Drain well. Set aside for 10 minutes to cool slightly. Mash until a desired consistency is achieved.
  • Return empty pan to heat set over medium heat. Add soup and whipping cream. Cook, stirring, until simmering. Fold in mashed potatoes until just combined. Stir in butter and pepper.

This rich, creamy, and cheesy potato recipe came from a friend at church several years ago. Everyone seems to love it. When you want a special potato dish this one is a great choice. Best of all it is not hard to make.

3-4 pound(s) red potatoes, quartered but not peeled
6 ounce(s) cream cheese, at room temperature
1/2 cup(s) butter, room temperature
1/2 cup(s) half and half or heavy cream
1 medium green bell pepper, chopped
1 medium red bell pepper, chopped
4 - chopped green onions (use both green and white parts)
1/2 teaspoon(s) sea salt (or to taste)
1/4 teaspoon(s) freshly ground black pepper (or to taste)
3/4 cup(s) shredded sharp cheddar cheese, divided
1/2 cup(s) grated parmesan cheese, divided

Steps:

  • Place potatoes in a large saucepan. Cover with water. Bring to a boil. Reduce heat to a simmer. Cover and cook for 10-15 minutes or until tender. Drain. In a large bowl, mash the potatoes.
  • Add the cream cheese, butter and cream. Beat until blended. Stir in the green pepper, red pepper, onions, salt and pepper. Stir in 1/2 cup cheddar cheese and 1/4 cup Parmesan cheese.
  • Spoon into a greased 11 by 7 inch baking dish. Sprinkle with remaining cheeses. Bake, uncovered, at 350 degrees for 20-25 minutes or until heated through.

These creamy mashed potatoes are an essential holiday side dish, but they're great any day- we love them as a side with steak or chicken.

2 ½ pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes
2 cups Swanson® Chicken Broth or Organic Free-Range Chicken Broth or Natural Goodness® Chicken Broth
½ cup half and half
2 tablespoons butter
salt and ground black pepper to taste

Steps:

  • Place potatoes and broth in a 3-quart saucepan. Heat over high heat to a boil, then cover and cook (still on high) for 10 minutes or until the potatoes are tender.
  • Drain the potatoes, reserving the broth.
  • Mash the potatoes with the cream, butter and about 1/2 cup reserved broth (the consistency will vary depending on the type of potatoes used, so you may want to add more of the reserved broth- see ingredient note). Season with salt and freshly ground black pepper.

2 tablespoon(s) butter, softened
1/4 - red onion, chopped
1 clove(s) garlic, minced
3 tablespoon(s) flour
Pinch - nutmeg
1 1/4 teaspoon(s) salt
3 cup(s) cooked, cubed potatoes
2 tablespoon(s) pimento
1 1/2 tablespoon(s) fresh chopped parsley or 1 tablespoon dried
1/2 cup(s) shredded cheese - your choice, i used swiss
CRUMBS
1/2 cup(s) panko bread crumbs
2 tablespoon(s) melted butter
Season - if you wish

Steps:

  • Cook potatoes in lightly salted water to cover, drain. Lightly toss with parsley and pimento, set aside.
  • In a medium saucepan, melt butter, add onion and garlic, salute until onion is tender.
  • Blend in salt, pepper, nutmeg and milk and cook until thickened, stirring constantly.
  • Preheat oven to 400 degree F. Carefully combine cream sauce with the potatoes, trying not to break up potatoes. Mix melted butter with panko crumbs and season if you like.
  • Grease a 1 1/2 quart casserole dish. Pour the potato mixture into dish and spread evenly. Top with cheese and then crumbs. Bake for 25 - 30 minutes or until bubbly and golden.
  • Serve hot as an accompaniment to just about any meat, I served with ham steak.

1/4 cup milk or 1/4 cup half-and-half
1 (8 ounce) package cream cheese
1 cup sour cream
1 -2 teaspoon dried parsley flakes
1 -2 teaspoon minced garlic
1/2 teaspoon salt
1/2 cup grated parmesan cheese
1/2 cup cheddar cheese

Steps:

  • Put everything, except the cheddar cheese in a large pot or bowl.
  • Using a mixer blend until smooth.
  • Spoon into a casserole dish that's been sprayed lightly with cooking oil.
  • Cover and bake at 325 degrees for 40 minutes.
  • Uncover and sprinkle with cheddar cheese.
  • Bake 5-10 minutes just until cheese melts.
